Roasted Okra

Okra was one of my mother in laws favorite foods. She loved it and it seems so does my oldest sister. I on the other hand do not care much for it. This recipe comes from a friend and she says it is very good. You will have to take her word for it as I have yet to try it.
Roasted Okra
18 fresh okra pods, sliced 1/3 inch thick
1 tablespoon olive oil
2 teaspoons kosher salt, or to taste
2 teaspoons black pepper, or to taste

Preheat an oven to 425 degrees F Arrange the okra slices in one layer on a foil lined cookie sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake in the preheated oven for 10 to 15 minutes.
