Friday Fill In ----- its a bit about me and a great recipe as well


1. Right now I'm posting this on my blog

7. And as for the weekend, tonight I'm looking forward to cleaning out storage to find goodies, tomorrow my plans include swapmeet and Sunday, I want to relax on the holy day!

This recipe for a  delicious filling meal was originally posted on my blog on September 12, 2018 

Chicken Pepper and Onions Stir Fry

For the Chicken Fajitas
1 pound Zaycon Fresh Chicken Breasts , sliced thinly
2 tablespoons fresh cilantro or parsley if you don't like cilantro
2 teaspoons extra virgin olive oil
1 teaspoon dried oregano
1/2 teaspoon hot sauce (optional)
1/2 teaspoon chili powder
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder

For the Peppers and Onions
2 teaspoons extra virgin olive oil
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1/2 of a yellow onion, thinly sliced
1 teaspoon chili powder
1/2 teaspoon kosher salt

In a large bowl combine all of the chicken fajita ingredients minus the lime juice and the pepper and onion ingredients.
Toss the thinly sliced chicken in the marinade until coated, cover, and refrigerate for 15-30 minutes.
Preheat a 12 inch cast iron skillet over high heat with 2 teaspoons of the oil.
When the skillet is hot add in the sliced peppers, onion, chili powder, and 1/2 teaspoon of salt.
Saute the peppers and onions for about 4 minutes or until they are golden and have softened slightly.
Remove the peppers and onions from the skillet onto a plate and set aside.
Add another 2 teaspoons of oil to the hot skillet.
Add in the chicken fajita mixture and saute until the chicken is cooked through and no longer pink.
Add the peppers and onions back into the skillet along with the juice of half a lime.
Cook everything for another minute then serve immediately.
Serve the fajitas in lettuce cups or on tortillas and top with pico de gallo if desired.

Tummy Time with Crawligator

 Pediatricians recommend that infants are placed on their stomachs for a short period of time each day. By placing them on their stomachs they will be able to build both head and neck muscles that will them move their head, neck, arms and shoulders. 

What exactly is tummy time?? 

The answer is quite easy tummy time is when your baby is awake and placed on their belly for a short period of time. Tummy time should begin with just a few minutes the first day and gradually leading up to longer periods of time. Never leave your baby unsupervised during tummy time and tummy time should only occur when your child is awake. To reduce the risk of SIDS babies should always sleep on their backs. 

The first few episodes of tummy time may be simply on a blanket or mat that the baby lays on. Just a few minutes the first times will do. You can add time slowly by adding a minute or two every few days. As your child gets old enough you can place age appropriate toys within their reach. Tummy time is also a great time to introduce books and reading your baby. In addition one fun activity I have found that works great with older babies at tummy time is the crawligator.

The crawligator was designed after the "Back to Sleep" campaign by the Academy of American Pediatrics in 1994. Children were beginning to meet their age milestones later than expected and there was increase in other disorders due to the lack of quality time spent on their bellies. This belly time is now commonly known as "Tummy Time" Tummy time is needed to help strengthen muscles that are needed to properly move the body. In addition, children are often born with conditions such as cerebral palsy and spina bifida that could benefit from help in mobility. 

Children born with disabilities may not learn to crawl at the same time other children their age do. Crawling is not only a great form of exercise but it also allows the child to get out and check out the environment around them. Motor skills, coordination, social skills and cognitive abilities are strengthened during this time. 


The crawligator arrived on the scene originally in the late 60s. shortly before the time I was born However, they were never replaced after being sold. The reason?? Who knows it was just one of those things. Now days, the updated Crawligator is back and better than ever featuring new safety features that include a rear wheel that helps prevent uncontrolled movement and four gripping safety pads. 

The Crawligator is helping to promote child development and offers a great way to share tummy time. The child will develop muscles for mobility as they kick, reach and push to motivate their way around. The best thing is the Crawligator is easy to clean and store. 

What our lil one thought. She was a little older than the new born around 5 months. She loved it and she still does. Thats right while she is now over a year old she still loves to sit on it and play. I have no worries as I believe it is one  of her safer toys and easy to clean. When we are done playing we simply place on the shelf ontop of the closet and put it away. At $39.95 the price is grand as well. Other toys that provide this much often are higher price than this and may be even double.

Houseplant For Those That Have Lukewarm Green Thumbs

 Tradescantias appear in many parts of the world including Southern Canada, Northern Argentina, the West Indies and the United States. Plants that belong in this class have many different names a few of the colorful were named Spiderwort or Indian Paint. Many Tradescantias plants are house plants. Their tender flowers with triangular shaped leaves. The leaves are often colorful that help to spruce up decor in rooms. Perhaps the best thing is that the plants are very versatile, easy to raise and hard to kill.

A Blessed Week

 Here we are entering into our second full week of 2021. So far all is going good. How about you?? The weather here is getting a bit cooler with temps for the week 

Monday currently the temp is 24 degrees..... 

Tuesday the high for tomorrow will be 42 and low 29 with little chance of rain

Wednesday a bit warmer with high of 46 and low of 34 at least we are not to having freezing temps chance of rain still slim

Thursday as the week goes it promises to be a bit warmer with high of 48 and low for the day of 32 with slightly more chance of rain

Friday sees a 40% chance of rain with high temp of 42 and a chilly 27 as the low

Saturday offers a 38% chance of rain with temps in high of 38 and low of 28

Sunday the chance of rain is cut to 10% the low of the day will be around 29 with a high of the day of 38

On my breakfast plate:

this morning was early morning for me and son so we stopped got sausage biscuit. Hubby fixed kids here eggs, sausage and biscuits for breakfast. I think I got shortchanged

As I look outside my window::::

The sun is shining the front porch has still got items that need to be taken to the storage til next holiday season. 

As I look around the house::::

I see a busy day ahead of me. Papers to file and organized on my desk, items to sell need to be found as they are being picked up on sunday. Other than that I see a house that is decorated with the colors of the Red, White and Blue but the confederate flag hangs on the wall in another part of the house

What I'm wearing today::::

It was a day to get out and about and so I decided to dress up a bit not to dressy but black dress pants, teal colored shirt and grey and black sweater 

On the TV for this week::::

we are watching the voice, hells kitchen, and top model to say just a few In our new house we have hulu streaming 

On the menu this week::::

Monday---- Chilidog Casserole recipe from my food and family blog

Tuesday--- I do not cook and rather my son and his wife will have meal prep duties

Wednesday ------dorito Casserole 

Thursday ----

Lasagna soup and italian sandwich

Friday ---- my oldest daughter will pick up both Friday and Saturday meals

Sunday --- my youngest daughter will prepare the meal on this night

Something interesting in our life:

Around 6 months ago we moved into a large beautiful cabin style house. While we love the beauty of the area the house does need a bit of an uplift. One thing that is missing is a 220 outlet which means no dryer.... in return means trips to the laundromat. This recent post can help you understand how everyone can conquer the battle of the jungle

Weekly Meal Plan January 11 to 17

 At our house things are a bit different. as we are a large family where me and my husband live with 5 of the 6 of our adult children and our grandchildren. I do not always cook as we take turns cooking I do most of the cooking however as currently I am the one not working, doing most the childrearing and housekeeping. So at our house our food schedule goes something like this:

Monday---- Chilidog Casserole recipe from my food and family blog

Tuesday--- I do not cook and rather my son and his wife will have meal prep duties

Wednesday ------dorito Casserole 

Thursday ----

Lasagna soup and italian sandwich

Friday ---- my oldest daughter will pick up both Friday and Saturday meals

Sunday --- my youngest daughter will prepare the meal on this night

Help Getting Thru the Jungle Known As the Laundry Mat

 Recently we moved to a house... a lovely house (cabin) in the middle of Shawnee National Forest. It is a dream come true. The house is great but the only missing thing was a 220 outlet which meant that we had no dryer. In the summer time that was awesome we put them out on clothes line and air dried this worked for quite some time til the temp became to chilly. However, when it was cold they could either freeze dry or we headed to the laundry mat... 

It's a jungle out there and finding the laundry mat to visit was a bit challenging there are a few around. One has no attendants and it seems the homeless often visit as it is warm and open 24 hours a day. Another is a bit higher and up town and often crowded. The one we decided to go to in the end has an attendant from 8 in morning til 7 at night, is nice and clean and warm as well. 

Some tips to keep in mind if you find yourself also visiting a laundry mat :

  • inspect inspect inspect dryers and washers may still contain the item that was not to be there when the prior person used it such as bubble gum, ink or anything else that can leave a stain
  • Try not to do laundry on the weekend rather wait til a week day
  • always bring lots of quarters. I have started myself a quarter jar where I put all the extra quarters that i use
