International Eat An Apple Day

International Eat An Apple day is today September the 19th. It happens annually on the third Saturday in September. When I was growing up eating an apple a day was very easy to do, it was something that we did not have to set a goal for but because there are so many tasty recipes to make with apples, let alone eating them raw my parents would visit the apple orchard annually and we would enjoy the bounty for months to come.

A scene like the above was common place when we grew up. Our family would normally bring home a bushel or two of apples and those giant red bags would be full as well. Cider was the one thing we never forgot either. You know the old saying an apple a day keeps the doctor away. I am not sure about that but I can say that we had plenty of apples to keep the doctor away.

One of our favorite apple recipes is

Crockpot Chunky Applesauce

Chunky Apple Sauce

•10 to 12 large cooking apples, peeled, cored, and cut in chunks
•1/2 cup water
•1 teaspoon ground cinnamon
•3/4 to 1 cup granulated sugar

Combine ingredients in slow cooker. Cover and cook on LOW for 8 to 10 hours. Serve warm, if desired.

Roasted Sweet Potato and Apple Soup
3 pounds sweet potatoes
1 tablespoon olive oil
1 onion
1 celery stalk
1 apple
salt and black pepper

1.Heat oven to 400° F.
2.Prick the potatoes with a fork, place on a baking sheet, and roast until tender, 40 to 45 minutes.
3.Meanwhile, heat the oil in a large saucepan over medium-high heat. Add the onion, celery, and apple and cook, stirring occasionally, until soft, 10 to 12 minutes.
4.Halve the potatoes, scoop out the flesh, and add to the saucepan. Add 6 cups water, 2 teaspoons salt, and 1/2 teaspoon pepper. Cook until heated through, 8 to 10 minutes.
5.Puree the soup in the saucepan using a handheld immersion blender (or, working in batches, a standard blender). Add water, if necessary, to reach the desired consistency.

Pumpkin Butterscotch Pie

1 envelope unflavored powdered gelatin
1½ cups whole milk, divided
3 tablespoons granulated sugar
½ teaspoon vanilla paste (or seeds from ½ vanilla bean)
1½ cups heavy cream
¾ cup (packed) dark brown sugar, divided
⅛ teaspoon baking soda
3 large egg yolks
2 tablespoons cornstarch
3 tablespoons unsalted butter
⅔ cup pumpkin puree
1 tablespoon mild-flavored (light) molasses
½ teaspoon kosher salt
Unsweetened whipped cream (garnish)
½ cup chopped salted, dry-roasted cashews (garnish)
Place gelatin and 2 tablespoons milk in a small bowl. Let stand until gelatin is softened (5–10 minutes). Place granulated sugar in a medium saucepan and add vanilla paste. Cook over medium heat, stirring, until sugar is melted, then cook, stirring occasionally, until mixture turns amber in color (3 minutes). Remove from heat and slowly add cream (mixture will bubble vigorously), stirring until smooth. Return to heat and add ½ cup brown sugar, remaining milk and pumpkin. Cook, stirring, until sugar is dissolved and caramel mixture begins to steam (2 minutes). Remove from heat. Add baking soda and whisk until bubbles subside. In a medium bowl, whisk yolks, cornstarch, and remaining ¼ cup brown sugar. Gradually whisk half of warm caramel mixture into the egg bowl until incorporated. Then pour egg-yolk mixture into the rest of the caramel mixture in the saucepan and while whisking, bring to a boil over medium heat Reduce heat to low and cook (keep whisking) until thickened (2 minutes). Remove from heat and whisk in gelatin mixture, butter, molasses, and salt. Whisk until butter is melted and mixture is smooth. Transfer to a large bowl and chill, stirring occasionally, until slightly cooled and thickened* (1 hour). Pour butterscotch filling into crust, smoothing top if needed. Chill until set (2 hours or up to two days). Just before serving, spoon whipped cream over pie and top with cashews.

time to Speak Out

I have been blogging for several years now, starting in 2008. I started with just a way to share what we were doing and seeing what others were doing so I did not feel alone. As I started to share more I found that I started to get a following. One thing I have always said is that if you have a following you should spread the word about good things. Recently I have been using my blog to speak out and draw awareness to causes, problems and discussions out there that others may not know about or think they are alone. Thus it has went full circle I started so I would not feel alone and now am sharing so others know they are not alone.

We love Colors Review

Fall is on its way and there is no reason that you should not be able to put a splash of color into every outfit you wear. While the sandals and shorts will soon be gone for a season or two don't worry because We Love Colors will sparkle with a color or two.
Whether it be for man or woman, girl or boy there is plenty of color and style to go around. My grand-daughter is a little princess and loves to wear dresses or sweaters and tights in the fall. Myself I love to wear long sweaters and shirts & cute leggings as well. We will be able to find all our needs at We Love Colors

So now I may have your interest up as to what We Love Colors is? It is a made in America company that has over 50 shades available. They sell tights, socks, leggings, shoelaces, and gloves. They carry women's in sizes small to plus sizes, men's and children as well. We were lucky enough to be able to review a couple pair of girl tights.

I simply loved the tights before the girls ever tried them on. The reason was because the color was amazing and stretching of the material met my approval. I have a daughter that does not like tight material while she does want it to fit. So princess will be very happy that they will fit but they will stretch as she moves as well. The awesome colors in the tights were something else. The first pair was a pink with lots of yummy colors in it. Oh so vibrant with oranges, blues, purples, pinks Princess loved them.   the second pair will go great with so many sweaters this fall not to mention holidays with a forest green and blue splash so very pretty.

In addition to the tights were sent several different colorful shoe laces. Both fat strings and thin so they have a style that you will love. We Love Colors shoe strings come in These shoe strings have been claimed and put in tennis shoes , soccer shoes and a pair of boots. Oh yes they did dress the shoes up very snazzy like. In November We Love Colors will welcome in splash colors as well.

 We will for sure be ordering from We Love Colors in the future. They were very durable, stretched well and we loved how the colors popped.

cheeseburger casserole

Cheeseburger Casserole
Looking for a tasty meal to serve this week to your family? Then check out this yummy casserole made from favorites such as ground beef, cheese and pasta. Always a winner at our home.

6 ounces uncooked rotini pasta (about 2 cups)
2 teaspoons oil
1 ½ cups onions (finely chopped)
1 garlic clove (finely chopped)
1lb lean ground beef
¾ teaspoon salt
½ teaspoon ground black pepper
2 tablespoons tomato paste
1 (28 ounce) can diced tomatoes
2 tablespoons Dijon mustard
2 cups shredded cheddar cheese
¼ cup chopped dill pickles

Step 1: Preheat the oven to 350 degrees. Spray a 9 x 13” inch casserole dish with cooking spray. Bring a large pot of salted water to a boil. Cook pasta according to package directions for al dente, drain.
Step 2: While the pasta is cooking, heat oil in a large skillet over medium-low heat. Add onions and cook until soft (about 5 minutes). Stir in the garlic and cook for 30 seconds. Add the ground beef and cook while breaking up into chunks with a spoon or spatula until browned. Season with salt and pepper. Stir in tomato paste, and then add the tomatoes and mustard. Let the mixture bubble gently until it is slightly thickened (about 2 minutes).
Step 3: Toss the meat mixture with the cooked pasta and spread it into the prepared baking dish. Top with cheddar cheese. Place the baking dish into the oven and bake until the cheese has melted (about 15 minutes). Remove from the oven, sprinkle the chopped dill pickles over the top and serve.

Love Your Files Week

Another holiday that is also something that all computer users need to do is Love your files week. As bloggers there is so much that we do that we need to keep but not as much as what we think we do. This week take some time to go through your files and take care of them:

Delete inactive files on your computer. This helps make more room that you may need later

Reorganize and prioritize your active files make them active files that can be found easily.

Update passwords and if needed change them. This should be done at last once a year to protect your information.

Truck Driver appreciation week

This is the week to give appreciation to those that make our lives a bit easier by making it easier to get what we need. It is the truck drivers that transport the majority of the merchandise that we buy in retail locations. The American trucking Association has set aside the second week of September to show drivers that they really are appreciated.

The lives of truck drivers we often imagine as being glorious but this is not always the case. While they do travel and see lots of things others would never see the work they do is hard long hours. Sometimes they are gone for weeks or months at a time in order to make sure deliveries are made on time. In our area many of our drivers haul coal and those are long hot dirty hours.

I appreciate all truck drivers many of which are members of my own family.

Week of biscuit and gravy

The second week of September is one that honors biscuit and gravy. I can tell you that at our house biscuit and gravy is honored each and every time they can get it. In my grandmothers house biscuit and gravy was served nearly every day, minus a holiday or shopping day. So find a seat and enjoy a nice breakfast, lunch or supper of biscuit and gravy. That's right I believe that it can be served any meal of the day. 
Here in southern Illinois biscuit and gravy is an every day meal. Made up of buttermilk American biscuits covered with thick "country" or "white" gravy made up from the drippings of cooked pork sausage, white flour, milk and bits of real sausage (optional). Black pepper often seasons the dish.
Sausage Gravy Recipe
8 ounces breakfast sausage
2 tablespoons shortening or lard
3 tablespoons flour
1 1/2 to 1 3/4 cups milk
salt and pepper, to taste
dash cayenne pepper, optional
Cook sausage in a medium skillet over medium-low heat, stirring and breaking up with a spatula. With a slotted spoon, removed the browned crumbled sausage to a paper towel-lined plate. Add 2 tablespoons shortening, vegetable oil, or lard to the drippings in the skillet.

Add flour, stirring until blended and bubbling. Gradually add 1 1/2 cups milk; continue stirring and cooking until thickened and bubbly. Add the crumbled sausage. If too thick, add a little more milk. Taste and add salt and pepper. Stir in a dash of cayenne pepper, if desired.

Serve over hot split and buttered biscuits. Serve sliced tomatoes or fresh fruit with these, or serve as part of a bigger breakfast.

National Child passenger Safety Week

This week is National Child passenger Safety Week. Crashes are the leading cause of preventable deaths and injuries in children. One main reason is because of improperly installed car seats. Its back to school  time and more and more children will be riding as passengers in cars. The increased traffic means that the risk of children riding in a car goes up so we want to ensure that our family does not become part of the grim statistics.
It is best that children ride in rear facing car seats as long as possible at least until their second birthday.

It is not recommended to use any extra padding to go in the car seat as the car seat as it is in the box was crash tested.

Straps on the seat should be snug with the child and should not move less than one inch once secured.

It is recommended to purchase a new car seat or to know the crash history if you choose to purchase a used car seat. Once a car seat has been in a crash experts say it needs to be replaced

  • According to a NHTSA study, 3 out of 4 kids are not as secure in the car as they should be because their car seats are not being used correctly.
  • Car crashes are the leading cause of death of children ages 3 to 14?
  • You can register your child seat and receive notification of defects and recalls.

    Cancer Is Not Prejudice

    Cancer is not Prejudice. It treats all equal and destroys and interrupts lives of all those affected. September is a month where awareness is drawn to cancer and those who are in search of a cure and all those that have had their lives affected by Cancer. Cancer does not make a difference treating each gender equal as well. With ovarian and prostate cancer affecting both men and women

    The prostate gland is found in men just below the bladder and directly in front of the rectum. The prostate holds the urethra of a man and also helps make some of the male hormone. The prostate grows in men as they age because of hormones. All growth in the prostate is not cancer and can also be a condition known as BPH. BPH can be treated with drugs or surgery.

    There are several types of cells in the prostate but nearly all cancers start in the gland cells. Some prostate cancers can start, grow and spread quickly. Most of the time, prostate cancer grows slowly and some may never know they had prostate cancer until it is too late. The risk of prostate cancer increases as men age, if a family member was also diagnosed with prostate cancer (this increases if diagnosis was made early), the diet of red meat and dairy also increases risk, and being over weight. There are a few other risk factors such as smoking, being a fire fighter, std's and vasectomies.

    The American cancer Societies says that approximately 220,800 new cases of prostate cancer will be diagnosed this year. Prostate cancer is the most common type of cancer found in American men, other than skin cancer. One man in seven will be diagnosed in his lifetime. The second leading cause of cancer death in men prostate cancer will take about 1 in 38 lives of men. Most men do not die from it.

    Prostate cancer first presents itself with no symptoms. A blood test that screens blood for PSA can find the cancer as well as a digital rectal exam. Symptoms include having trouble urinating, keeping or having an erection, blood in the urine, pain in the spine, hips, ribs or other bones, weekness or numbness in legs or feet or loss of bladder or bowel control.


    Ovarian cancer is a disease that starts when malignant (cancerous) cells are found in the ovaries. Ovaries are small, almond shaped organs located in a woman one on each side of the uterus. Ovaries are used to store eggs and also produce female hormone estrogen and progesterone. The cancer cells begin to grow out of control and form tumors.

    There are many types of tumors that can start in the ovaries. Not all of them are cancerous some may in fact be benign or noncancerous. These benign tumors can be cured by removing one ovary or part of the ovary to remove the tumor. Treatment of ovarian cancer depends on how far it has spread before diagnoses.

    Ovarian cancer is the fifth leading cause of cancer related deaths of women between ages 35 and 74. One in every 75 women will develop ovarian cancer during their lifetime. The American cancer society estimates around 22,000 new cases of ovarian cancer will be diagnosed this year. early diagnosis and treatment are important. When diagnosed and treated in the earliest stage a 5 year survival rate is 90%. However, because of the non-specific symptoms of ovarian cancer and lack of early detection tests only 19% of all cases are found in early stage. Cancer caught in stage III or higher survival rate is as low as 30.6%.


    September is Self Promote Month

    September is self promote day so I am going to take the opportunity to introduce you to who else but me. Yes I am angie and I am the author of this blog annies home. I have been blogging way before I started this blog. I used blogging back in the early 2000s to help me with organization, recipes, tips, and oh so much more. So when I started this blog why not share with you what I have found useful and so many have shared with me.

    That's me with my husband. We have not only been married but best friends for nearly 30 years. The more years go by the better friends we become. I believe that a husband and wife are put together because of Gods infinite wisdom and love. In my case I was lucky to have find a man with a caring heart, and giving spirit. We seem to complete each other

    We have a strong family background, present and future influence. My mother and grand-mother taught me a lot in life and I try to share that information that I find useful with everyone from the new generations in our family to friends and oh yes the readers of our blog. There are also great new ideas that come up and I am fortunate enough to have children that share these great new tips with me as well. As always I pass these along as well. I believe that many of the old lessons are important ones but we live in an ever changing world where new lessons are valuable as well.

    I love to take short and long trips with my family. We share lots of family events and travel tips here on our blog as well.

    As most families do we have many family recipes and love to eat. We share lots of recipes here on Annies Home. We share both our family recipes and other great recipes that others have shared

    Football Food : Spicy barbq wings

    Football is in the air and I am so ready for it. Oh yes, tomorrow night will find us at the local high school game, Saturday the college game and oh so entertaining this weekend as well. Guest will enjoy these I hope you do as well

    Angela's Spicy Buffalo Wings

    2 1/2 pounds chicken wing pieces (wings already cut)
    2 teaspoons salt
    3/4 teaspoon ground black pepper
    1/4 teaspoon ground red pepper
    1/4 teaspoon onion powder
    1 cup all-purpose flour
    Vegetable oil
    Spicy Buffalo Sauce
    Cool Ranch Sauce
    Celery sticks

    Sprinkle wings with salt and next 3 ingredients. Dredge in flour, shaking to remove excess. Pour oil to depth of 2 inches into a large deep skillet; heat to 350°. Fry wings, in batches, 3 to 4 minutes on each side or until done. Drain on a wire rack over paper towels. Toss wings in Spicy Buffalo Sauce; serve immediately with Cool Ranch Sauce and celery sticks.

    Layered guacomole Dip with shrimp and salsa

    I have to admit that guacamole has not always been my favorite. I had no real reason why just did not want to try it because , well, it was green. My children have since changed my mind on that and I have to say that I am pleasantly surprised guacamole is one of my sons favorites and while not my favorite I do have to say that it is near the top. This layered guacamole dip with shrimp and salsa offers a new look at an old favorite of Mexican seven layer dip. The fresh taste and color is present but offers an alternative.

    3 ripe avocados
    1/2 c. light sour cream
    2 T. fresh lime juice
    1/4 c. minced onion
    2 garlic cloves, minced
    salt, to taste

    1 lb. coarsely shopped shrimp (peeled and deveined)
    2 T. olive oil
    2 t. lime juice
    1 c. bottled salsa
    1/2 c. light sour cream
    2 T. chopped fresh cilantro

    Mash the avocados, sour cream, and lime juice with a fork until the mixture is chunky. Stir in onion and garlic, and season generously with salt. Set aside.
    Toss shrimp in oil and lime juice. Spread the shrimp in a thick layer about 9 inches in diameter in a rimmed serving platter. Spread the guacamole on the shrimp, leaving a border exposed. Spread the salsa over the guacamole, leaving a border. Finally, spread the sour cream over the salsa, again leaving a border around the edges. Sprinkle the cilantro over the dip.

    Cinnamon Raisin Oatmeal bread

    Cinnamon Raisin Oatmeal Bread
    Makes 3 loaves
    24 oz (5 1/2 cups) bread or all-purpose unbleached flour
    8 oz (1 7/8 cups) whole wheat flour
    5.3 oz (1 5/8 cups) rolled oats
    20 oz (2 1/2 cups) water
    3.5 oz (3/8 cups) milk
    2.4 oz (3 tablespoons) honey
    2.4 oz (5 1/2 tablespoons) vegetable oil
    .7 oz (1 tablespoons plus 1/2 teaspoon) salt
    .37 oz (1 1/4 tablespoon) instant yeast
    .5 oz (2 tablespoons) ground cinnamon
    10.6 oz (2 cups) soaked and drained raisins

    At least half an hour before you begin, soak the raisins in warm water.
     Doing so plumps them, which makes them softer and moister in the loaf and also prevents the ones on the surface of the loaf from burning. Just prior to adding the raisins to the loaf, you'll pour the water out.
    Next, soak the oats in the 2 1/2 cups water for 20 to 30 minutes.
     If you are using active dry yeast instead of instant yeast, which I did, withhold 1/2 cup of the water to proof the yeast in.
    Mix the flours, yeast, milk, honey, oil, salt, and cinnamon into the oats. Mix well, until all of the flour is hydrated. Knead by hand for 5 minutes or in a stand mixer for 3, then mix in the drained raisins. Knead or mix until the raisins are distributed throughout the dough.
    Cover the bowl of dough and allow it to rise for 1 hour. Then remove the dough from the bowl and fold it, degassing it gently as you do. The images below illustrate this technique.
    Place the dough on a floured work surface, top side down.

    Fold the dough in thirds, like a letter, gently degassing as you do.
    Fold in thirds again the other way.
    Flip the dough over, dust off as much of the raw flour as you can, and place it back into the bowl.

    Cover the bowl and allow the dough to rise in bulk again for another hour. Then divide the dough in thirds and shape the loaves.
    Place each shaped loaf into a greased bread pan.

    Spray or gently brush each loaf with water and sprinkle with some more oats. 
    Cover the pans and set aside to rise until the loaves crest above the edge of the pans, roughly 90 minutes.

    Preheat the oven to 450. Place the loaves in the center rack of the oven. After 5 minutes, reduce the oven temperature to 375. Rotate the loaves 180 degrees after 20 minutes, and bake for another 15 to 25 minutes, until the tops of the loaves are nicely browned, the bottoms of the loaves make a hollow sound when tapped

    National Working Parents day

    Today is the day that salutes working parents. In yesterdays world it was a world where dads would go to work and moms would stay home. Lets admit it that era has been gone for many generations. Now if you are lucky you both have jobs and many others are in search of jobs. No matter what you do to me if you are a stay at home parent or one that goes out and works we are all working parents.

    With back to school season here and having started not to long ago I wanted to share with you a few ideas to get the year started on the good foot

    Allowing our children to participate has always been important in our family. It really is but participating or being part of to many activities is not good either. So we try to find the best one that they want to do and stick with it. Because some activities only last for a short period of time and others the entire year we allow our children to be part of one or two activities for the year and then participate in one seasonal activity as well.

    I have shared this idea before but always being prepared helps us all out. Create a family calendar so that we are all aware of each others schedule is an idea that in my opinion is needed. A storage area where you have extra supplies if needed is also a great idea no more running out for last minute needed items.

    Sleep is something we often feel like we do not get enough of. We create a bedtime and try our best to keep it. We all have to get our correct hours of shut eye and that means that we have to get the little ones in bed and situated before we can even think about laying our heads down. Bedtime ritual of showers, laying our clothes out for tomorrow, brushing teeth, listening to a book or quiet time are all part of our bedtime ritual.

    Play-Doh Day

    Play-doh was first sold as a wallpaper cleaner that would remove soot and dirt from walls. It was to be used by simply rolling the dough across the surface. It was Captain Kangaroo, Bob Keeshan, who backed the inventor of play doh Joe McVicker who came up with a deal to help promote his product on the show. It was showcased three times a week on the show and soon after was showcased on the shows Ding Dong School and Romper Room.

    Since those early days two billion cans of play-doh have been sold. Not bad for a product that started out with such a meager beginning. In the beginning when it was a simple wall paper cleaner the product appeared in only one color an off white. When play-doh appeared as a toy in stores the colors had changed to red, blue and yellow. Now you can find a grand variety of shades. Fan favorites include rose red, purple paradise, garden green, and blue lagoon.

    Perfect size for a spring seedling.

    Here is a cool idea to review number facts. Either numbers their selves, addition, multiplication or division. You can give them a statement to answer and have them toss into the answer or perhaps you can have them toss first and then when they have a number give you a statement that will match the number. Either way review is a good way to achieve understanding.

    celebrate National Stepfamily day

    National Stepfamily day is celebrated annually on September 16th and founded by Christy Borgeld. The day was founded in 1997 and celebrates all stepfamilies. The statistics state that there is one in three Americans living in stepfamilies. More than 50% of Americans will live in stepfamily at some point in time. Step families are often referred to as blended families.

    Today I celebrate the love my son has for his girlfriend (fiancé) and her son. My son loves them both and considers them family I am sure the wedding will be lovely next June and these three are all ready family.

    A quick no-cook sauce with lots of flavour. The secret is to use the best tomatoes, olives, extra virgin olive oil and freshly grated Italian Parmesan cheese. This will give you the best flavour. If you like it spicy, add more chilli flakes. Omit anchovies, if you don't like them but they add a subtle taste to the sauce. Serve extra olive oil and Parmesan cheese for those who want it.

    6 plum tomatoes, chopped
    2 cups basil, coarsely chopped
    3 cloves garlic, coarsely chopped
    6 anchovy fillets, optional
    1/2 cup black olives, pitted
    1/2 tsp chilli flakes
    1/2 cup olive oil
    1/2 cup grated Parmesan cheese
    Salt and freshly ground pepper to taste
    1 lb spaghettini

    In food processor or by hand, combine all ingredients except pasta. The sauce should remain chunky. Taste for seasoning, adding salt and pepper as needed. Set aside.

    Bring a large pot of water to boil. Add pasta and boil for 10 to 12 minutes or until al dente. Drain and reserve 1/3 cup pasta water. Place spaghettini in a bowl and immediately toss with pasta water and sauce.

    Grilled Cheese Perfect for fall.

    This delicious sandwich is perfect for fall. Its apple season here and nothing is more comfort food to me than a delicious grilled cheese sandwich. This sandwich offers some much yumminess that will make everyone comfortable and wanting more.

    8 slices White Cheddar Cheese
    8 slices Gruyere Cheese
    1/10 lb of proscuitto, sliced thin
    1 Granny Smith apple, sliced thin
    8 slices country bread
    butter, for griddle pan

    Preheat your griddle pan or saute pan on medium low. The first thing you want to do to make this delicious sandwich is put a layer of the cheddar, then some proscuitto, a couple slices of green apple, and some gruyere cheese. Top with another piece of bread. Put a little butter on the griddle and put the sandwich on. Let cook on each side about 4-5 minutes or until the bread is starting to turn golden brown and the cheese is melted. Take off the griddle and serve! That easy!

    Our Weekend
