Pull Apart Pumpkin Treat

Put together a bunch of carrot cake cupcakes and decorate them as one to get this super cute Jack-O Lantern Pumpkin Pull Apart. In fact if you don't put the face on makes for a super cute Thanksgiving Treat as well. Hope you all enjoy

Mini–cupcake liners
1 box (18 oz) carrot cake mix
1 can  (8 oz) crushed pineapple       
1 cup  sweetened flaked coconut 
4 1/2 cup(s) vanilla or cream cheese frosting
Orange and green gel food color
1 cup chocolate frosting    
 Heat oven to 350ºF. Line miniature muffin pans with paper liners. (Don't worry if you have only one pan. After baking a batch, remove baked cupcakes to rack. Then just place the pan in your freezer to cool down quickly before lining and baking the next batch.) Prepare cake mix as package directs; stir in crushed pineapple and coconut until blended. Spoon a Tbsp into each muffin cup. Bake 15 minutes or until wooden pick inserted in center comes out clean. Let cupcakes cool in pan on wire rack 5 minutes before removing to rack. Cool completely. Tint 4 cups vanilla frosting orange. Tint remaining 1⁄2 cup vanilla frosting green. Spoon green and chocolate frosting into separate quart-size ziptop bags and snip off a tiny corner for piping. On a 20 x 16-in. flat platter, arrange cupcakes into a pumpkin shape. Frost body of pumpkin orange. With skewer, sketch face onto pumpkin as a guide; pipe face and stem with chocolate frosting. Pipe green frosting for leaves and vines.

Pumpkin Popcorn

I love popcorn. I really really do I have shared in the past a few recipes for popcorn. Recipes such as chocolate popcorn, tex-mex popcorn, and one of my favorites caramel corn. Today I share a delicious recipe for pumpkin popcorn super delicious. In addition you may want to keep watching as I share more popcorn recipes on our blog.
⅓ cup popping corn kernels (yields about 10 cups popped)
2 tbs. melted coconut oil or butter
2 tbs. maple syrup or honey
1 tbs. pumpkin puree
¼ tsp. cinnamon
½ tsp. salt
Preheat the oven to 325 degrees. Pop the popcorn using an air popper In a small saucepan, combine the oil, syrup, pumpkin puree, cinnamon, and salt. Cook over medium heat for a minute or two, stirring until all the ingredients are combined. Measure two cups of plain popcorn and set aside. Put the remaining popcorn in a roasting pan. Pour the pumpkin mixture over the popcorn and stir until evenly covered. Bake for 6 to 8 minutes, stirring every few minutes. Let the popcorn mixture cool. The glazed pieces of popcorn will harden as they cool. Stir the plain popcorn into the pumpkin-glazed popcorn mixture and serve.

Savory Baked Apples

Often when you think of baked apples you may think of a delicious sweet recipe. The truth is that I loved baked apples when my grandmother cooked them and I loved the way the house always smelled when they were baking. I have now grown up and found a great new tasty recipe that allows the same great scent and a savory meal within a delicious apple.

4 tbs butter
2 tbs olive oil
1 yellow onion, chopped
2 ribs of celery, chopped
4 Italian sausages, removed from casings
1/4 cup crushed walnuts
6 sage leaves, chopped
leaves from 2-3 fresh thyme sprigs
1 cup bread crumbs
1/4 cup parmesan cheese
salt and pepper to taste
6 apples (Mine were pretty big)
Parsley for garnish

Preheat oven to 350 degrees. Heat 2 tbs of the butter and the olive oil in a large skillet over medium heat.  Add the onions and celery.  Cook stirring often until they are soft, about 5 minutes. Add the sausage to the pan and mix until the meat is broken up and no longer pink.  Add the herbs, bread crumbs, nuts and cheese.  Mix well.
Cut off the top third of each apple. Using a small spoon scrape out the center removing the core and the seeds, and just enough of the flesh to make a nice hollow for the stuffing. (Be sure not to overly scrape out the apple, otherwise they will fall apart in the oven!)  Fill each apple with the stuffing and put a small dot of the remaining butter on each apple.
Bake the apples until the flesh is tender and the stuffing is golden brown.  About 45 minutes to an hour. Garnish with parsley and serve.

First Car

I can remember it like yesterday, our first family car. No not my family that I was born into but the family that me and my husband started as mere teenagers. We loved our Ford Thunderbird it was not new to us but was still super cool to own such a nice car. The car pictured here was not ours. Our baby was brown in color and I can remember had a stocked motor. We loved it as I can imagine that you all loved your first car. By the way what was your first car?

Once Upon A Homecoming Court

Halloween Garland

October 1st is the first day to decorate for fall and the haunting holiday at our house. This garland is a great way to add that perfect finishing touch to your Halloween decorations. String it across a doorway, dresser, or an entire room; it all depends on how long you choose to make it.

  • Felt
  • Twine
  • Pom-poms
  • Ribbon
  • Needle
  • Safety pin
  • Decorative embellishments
Cut strips of felt 2 to 3 yards long and about 3 inches wide. String your twine through the needle and tie it off. On the opposite end of the twine, attach a safety pin (so your fabric won’t pull through as you’re working on the garland). Take your needle and sew down the middle of the felt strip with different lengths of stitches ranging from 3 to 6 inches. If you want to, sew on pom-poms every 2-3 inches (the pom-poms actually make it easier to manipulate the garland when you go to hang it, because the fabric will stay in place a little better).
When you are finished stringing the garland, push all of together so it is all scrunched. Adjust how spread out you want it to look. If you are unsatisfied with the length, then sew another strip onto the same string. Once you have the garland at your desired length and fabric thickness, finish it by making a knot at both of the ends (where the needle and safety pin are).
Next, cut strips of ribbon and tie bows onto the exposed parts of the string that don’t already have a pom-pom on them, or any other creative embellishments that you can come up with. (Note: when I did this craft with a group of girls, they embellished the garlands with felt spiders, tool, glitter, paper pinwheels, candy

Veggie Mexican Pizza

Do you and your kids love pizza? well there is a better way to get them to eat better and eat what they like as well. simply try this recipe for veggie Mexican pizza

Mexican Pizza
  • 2 organic whole-wheat tortillas
  • ¼ cup canned black beans (mashed)
  • ½ cup vegan soy, rice, or almond cheese (shredded and divided)
  • ¼ cup organic tomato salsa (divided)
On one whole tortilla, spread beans and then top with half of the soy cheese and half of the salsa.  Top with the second tortilla.  Spread remaining salsa, then cheese on top.  Bake at 350 degrees for approximately 10 minutes, or until cheese bubbles and tortilla starts to brown.
Remove and cut into wedges.

Pumpkin Dump Cake

I made this for a family get together and it was devoured. Everyone seemed to love it and it offered a taste of fall. Delicious with a warm drink or cold glass of milk. Leftovers, which there were none after the get together I hear are delicious as well.

1 15 oz. can pumpkin puree
10 oz. evaporated milk
1 C. light brown sugar
3 eggs
3 tsp. pumpkin pie spice
1 box spice cake mix
1 C. chopped walnuts
1/2 C. Heath Toffee Bits
1 C. melted butter

In a large bowl, dump in the pumpkin puree, evap. milk, brown sugar, eggs and pumpkin pie spice. Mix well. Dump mixture into a greased, 9 x 13 baking pan.

Next, evenly sprinkle yellow cake mix over top of the pumpkin mixture.

Sprinkle nuts and toffee bits all over the top.

Finally, pour the melted butter over top of everything.

Bake for 45 to 50 minutes in 350 degree oven.

October writing prompts

The month of October I believe should have some awesome content that you should read. However, there may be a time or two that I get in a rut and therefore will be taking the prompts offered by the SITS girls as well. Perhaps you would be interested in some writing prompts as well so here is the list as given by SITS

Cider Time

One of my old friends, well we have nearly been friends for 1/2 century is also a school teacher. Recently he allowed his class a fun project by inviting a lady (the cider lady) to demonstrate how to make fresh apple cider. It was an event that allowed young children to see something that many adults have never seen and many including myself would love to.
I thought I would share a recipe with you. I love to enjoy cider this way. A good friend many years ago introduced me to warm spice cider and I thought I would share another that I liked this recipe is from taste of home.
1 gallon apple cider or apple juice
1 cup orange juice
1/4 cup maple syrup
1/2 teaspoon orange extract
1/2 teaspoon lemon extract
4 cinnamon sticks
2 teaspoons whole clove
1 teaspoon whole allspice
In a Dutch oven, combine the first five ingredients. Place the cinnamon sticks, cloves and allspice on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add to the pan. Cook, uncovered, over medium heat for 10-15 minutes or until flavors are blended (do not boil). Discard spice bag. Yield: 4-1/2 quarts.

Cider time

Get ready for the holidays.

Holidays will be here before we know it and if you are anything like me you will want to start by making plans. So for the next several days I will share a post a day that will hopefully help you prepare for the holidays. We will talk about that holiday get together. What will you do and where will you do it? Does your family host a holiday party? Do you all gather together in a celebration? How do you decorate for the holidays is it simply or elegant and what is the budget?

At the end of this month you will find a holiday that some do not choose to celebrate all the same others do and even if you do not go full scale on Halloween you may set aside money for candy and some spooky and fun décor. Thanksgiving comes next for many how will you share your thankful day? What will you need to purchase for the big day? Going somewhere set in the budget the money that you will need. In the case that you don't use all the money set aside then put it towards another holiday or even save it for something bigger.

If you decide to host the party don't feel as if you are alone and are left to do it all. Perhaps you have several good cooks in the family why not host a potluck where everyone can bring one or two dishes to show of their ability. This will allow you to get a taste of some good cooking and spend less time in the kitchen.

One thing that I love to do during the holidays is to decorate. Everyone seems to have their own style. You can keep it to a minimum with a few awesome pieces of décor. You can shop the sales following the holidays to get some awesome deals on décor You can make your own décor I will share a few great ideas in the days to come.

Shopping for Christmas gifts is something that must be done. Make a list now so that you can be on the lookout for amazing prices. Making gifts is what many like to do if this is you then that is easier as well by making a list and working on them helps cut out the last minute rush. Keep on eye on annies home as I will continue to share great deals as well as great ways to make gifts from home.

Getting out and about during the holidays helps to add fun and creates many awesome memories. There are lots of things during the holidays that are free or almost free keep your eyes open and alert. Here in our area is parades, craft fairs and family activities. Take time to check out the Christmas lights, decorate the house and / or yard, we love to have hot chocolate and sit around the decorated tree.

Star Spangled Banner

Our family is full of sport fans and yes I enjoy a great game. The beginning of every game you will hear the star spangled banner play and in the old days you may also have heard a prayer said. Now days there is no prayer as many have objected and while I think it important others do not have and in many places is illegal now. While attending the Friday night football game I began to think as I watched some not respect the flag or the song being sung, others were deeply into it many of who I know have served our country or have had family members that have. The wonderment I had as I stood with my hand over my heart as I stood and listened to the song I so loved learning back in my days of elementary school is how could this American song be one that some had high respect for and others did not. We were not at a college game or a pro game but in the small hometown where our kids all go to school. What exactly goes through everyone's mind I do not know but for me I am proud to be an American and when the Star Spangled Banner plays I will expect and respect all those around me to stand up face  the flag and pay respect. What do you think?

Happy Birthday Gene Autry and a recipe any cowboy would love

Happy Birthday to the singing cowboy Gene Autry. September 29, 1907 is the date that the famous cowboy who had a well known voice was born. Coming into this world as Orvon Grover Autry he was better known as Gene Autry. It was the days of the radio where Autry gained his fame. Gene was also a movie star and was later seen on TV He bag is career in his early 20's. He was famous in the sports world as well owning the Los Angeles/California/Anaheim Angels Major League Baseball team from 1961 to 1997. During his career Autry was seen in 93 films as well as 91 episodes of the Gene Autry show. He is the only person to be awarded stars in all five categories on the Hollywood Walk of Fame, for film, television, music, radio, and live performance.

Do you have any recall of Autry and his western style? Did you hear others older than you speak of him? To help you understand the talents of this cowboy I am sharing a video of his.

A cowboy recipe that I think any cowboy would love is texas chilli

3 tablespoons vegetable oil
5 pounds rough grind chili meat
3 pounds stew meat, cut into 1-inch cubes
2 white or yellow onions, finely diced
5 cloves garlic, minced
2 red bell peppers, seeded and diced
2 green bell peppers, seeded and diced
2 poblano peppers, seeded and diced
2 jalapeno chilies, minced with seeds
1 dried chipotle chili
1 can (28 ounce size) diced tomatoes with juice
5 tablespoons hot or mild chili powder
2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon dried Mexican oregano
1/2 teaspoon cayenne pepper
2 quarts beef broth
4 tablespoons butter
5 tablespoons flour
salt and pepper to taste

In a large chili pot or Dutch oven, heat 2 tablespoons of the oil over high heat until very hot and beginning to smoke.

Carefully add the stew meat in a single layer and allow to cook without disturbing for at least one minute. Brown stew meat on all sides before removing from the pot and set aside.

In the same pot, add the coarse ground beef and cook until no longer pink. When cooked through, drain the beef in a colander to remove excess fat; set aside.

Add the remaining tablespoon of oil to the same pot over medium high heat. When the oil is hot but not smoking add the onion and garlic. Cook, stirring frequently until the onion is beginning to soften, but not brown. Add the diced peppers and stir well to combine. Continue to cook for 3 minutes, scraping the bottom of the pot to loosen any browned bits.

When the vegetables begin to soften, add the dry spices and the chipotle chili. Stir well to combine and continue stirring to avoid burning.

When the spices become aromatic, about 1 minute, add the diced tomatoes and their juices, followed by the ground and cubed beef. Stir well to combine.

Pour in the beef broth and bring to a boil. Reduce heat to low and simmer gently until the stew meat is very tender, but not falling apart, about 1 1/2 hours.

While the chili is cooking, melt the butter in a saucepan. When it is melted, whisk in the flour and cook for 2 minutes, stirring constantly over medium heat. The roux should be golden in color and have the appearance of wet sand. Set the roux aside until the chili is finished cooking.

When the meat is tender, remove the chipotle and add half of the roux into the simmering chili, stirring constantly to achieve the thickness you desire. If you need to add more roux, do so in small increments to avoid thickening it too much.

Allow the chili to simmer for 5 minutes, stirring frequently. Season to taste with salt and pepper.

Pumpkin Squares

This type of recipe is one of my favorites as it is one that my grandmother would cook She was always known to take a dessert to those family get-togethers or community dinners. I hope you enjoy because this is a tasty little fall treat that would be easy to make for your family and friends. I hope you enjoy

6 eggs
2 ½ cup sugar
1 ½ cup oil
3 cup pumpkin (from a can)
3 cup flour
3 tsp. baking powder
3 tsp. cinnamon
1 ½ tsp. salt
1 ½ tsp. baking soda

Beat together eggs, sugar, oil and pumpkin until light and fluffy. Add dry ingredients. Mix well and spread into an ungreased baking pan (13 x 18 x 1 cookie sheet). Spread as evenly as possible.
Bake at 350 degrees for 22-27 minutes. Check with a toothpick until it pulls out clean.

1 cup butter (softened…make sure it is soft so it does not make the frosting lumpy)
6 oz of cream cheese
2 tsp. vanilla
4 cups powdered sugar

Beat butter and cream cheese together until smooth. Add vanilla and sugar and blend together. Spread over cooled pumpkin squares and keep refrigerated in the refrigerator until ready to be cut and served. You can add nuts as a topping if you choose.
This makes a lot of pumpkin squares. Half the recipe and bake in a smaller pan if you don’t want to make enough to share.
