Eat Twice Cook Once : Sloppy Joe Hoagies

Its that time of year cook one freeze one in our house. It helps cut down on whats for supper as it is in the freezer and the holiday season gets very busy around here. Try this delicious recipe for sloppy joes and freeze some as well
2 pounds ground beef or ground turkey
1 onion chopped
1 green pepper chopped (optional - I just grabbed some that I had chopped and frozen)
2 small cans of tomato sauce
1 can of water
1/4 cup of BBQ Sauce (any kind that you got for cheap will do)
2 Tablespoons of Worcestershire sauce
2 Tablespoons of Brown Sugar
2 Tablespoons of Apple Cider Vinegar (any will do)
2 Tablespoons of Mustard
1 Teaspoon of Garlic Salt
Brown your beef or turkey in a pan.  Add onion and green pepper -cook until soft. Add all other ingredients. Bring to a boil.  Reduce heat, cover and let simmer for 10 minutes. Serve on any kind of buns you have on hand.

Frugal tip: Buy buns or hoagie rolls when they get clearanced out because of their date. Then pop them in the freezer. Pull out only what you need for dinner. Place in the oven around  350 degrees (or along side your french fries) until thawed and warmed through. It is that easy. In the picture above, I got the entire package of hoagie rolls for just $.50, and they were enough for 2 dinners. That means it is only $.25 per dinner! Now, that is frugal!

Celeberate Guacomole Day with A Burger

Super Duper Guacamole Burgers

serves 4

2 pounds ground beef
6 dashes hot sauce
1 teaspoon kosher salt
½ teaspoon freshly cracked ground pepper
1 avocado, quartered
½ red onion, sliced thinly
1 medium tomato, sliced thick into 4 slices
4 teaspoons sour cream


1. Add the ground beef, hot sauce, salt and pepper to large bowl and mix well with your clean hands. Mold the meat into four burgers of equal size. Place on a plate and cover with plastic wrap, chill until dinner.
2. Before serving, grill the burgers to desired doneness. Top each burger with one quarter the avocado, a couple slices of onion rings, and one slice of tomato. Swipe the top of each bun with one teaspoon of sour cream and serve.

Snowman Craft

These super cute ornaments will look great on a tree of any size or even attached to a gift that you give someone special. I love snowmen because they can be hanging around all winter til it gets warm when they go away only to come back next winter :)

white or silvery-white glass ornaments
black acrylic paint orange acrylic paint black felt 2 pom poms craft glue cotton swab small paint brush scrap of 1/4" wide satin ribbon
Keep ornaments in their tray, if possible, to make a sturdy placeholder while you work. Using a cotton swab and black paint, paint on simple dot eyes and mouth. Use orange paint to paint on a carrot-shaped nose. Fashion a headband for earmuffs by cutting a strip of black felt that is 4" long and 1/2" wide. Glue in place across top of ornament, just in front of hanger. Glue pom poms at each end of the headband to form earmuffs. You may need to trim one side of each pom pom to "flatten" it a bit to allow for easier application. Cut a piece of 1/4" wide satin ribbon to make a hanger.

Colorful Candy Bar Cookies

This taste of home recipe will leave you delighted with the whimsy colors of Christmas and the taste of sweetness.

1/2 tube refrigerated sugar cookie dough, softened
1/4 cup all purpose flour
24 miniature snickers candy bars
red and green colored sugar




In a small bowl, beat cookie dough and flour until combined. Shape 1-1/2 teaspoonfuls of dough around each candy bar. Roll in colored sugar. Place 2 in. apart on parchment paper-lined baking sheets. Bake at 350° for 10-12 minutes or until edges are golden brown. Remove to wire racks. Yield: 2 dozen.

Colorful Christmas Slice and Bake Cookies

2 cups flour, plus possibly a few more tbsp (the original recipe called for cake flour, but I just used regular old all-purpose flour since I was all out of a softasilk)
1/2 tsp baking powder
1/4 tsp salt
2/3 cup unsifted powdered sugar
1/4 cup granulated sugar
2 1/2 sticks unsalted butter (cut in chunks)
1 tsp vanilla
1/2 tsp of food coloring of your choice(and/or 1/2 tsp of any desired extra extracts)
1 1/2 cup holiday sprinkles

1. In a stand mixer, combine flour, baking powder, salt, and sugars with paddle on medium until well blended.

2. Add butter in, gradually, and continue mixing. Add in vanilla extract. At this point, your dough will form a ball on your paddle.

3. Remove all your dough and divide into two equal parts. Return one portion back in to the mixer and add the food coloring and any extra extracts. I used Wilton gel food coloring in leaf green and vanilla extract for this batch. You could coordinate your colors and flavors, for example green food coloring matched with a mint extract or yellow with a lemon extract, etc. Also, if you are using liquid food coloring, you will need to add a few tbsp of flour to keep the dough from becoming too wet. Mix until the color is spread out evenly.

4. Roll out each portions of your dough, between two sheets a wax paper until is reaches about 11 x 9 inches and is 1/4 inch thick. Slide both unto a cookie sheet and chill in the refrigerator for at least 2 hours.

5. When firm, remove the top sheets of wax paper from both. Brush the uncolored vanilla dough lightly with water using a pastry brush. Then flip the colored dough onto the vanilla uncolored dough so they are stacked atop each other and even. Press the edges lightly with your fingertips to seal them together. Using a small pairing knife, trim the edges of the dough to make straight, even lines.

6. Pour out sprinkles onto a large platter and set aside. Be sure your dough is still cold, but flexible. Once it's ready, begin rolling the long side of dough into a swirl, jelly-roll style. Now, don't get nervous if the outer layer of uncolored dough tears a bit. It's no problem, just pinch and pat those tears and voila, then just keep rolling.

7. Now gently lift your dough log onto the sprinkles and roll away. Cover the log completely with your sprinkles. Wrap the colorfully decorated log in plastic wrap twice. Depending on when you want to bake the cookies, either place the wrapped dough into refrigerator for about 3-4 hours or you can put it the freezer and keep it there for up to 2 months. (If freezing, give yourself time for the dough to defrost in the fridge overnight before cutting.)

8. Slice your dough into 1/4-1/8 inch slices and bake on parchment lined baking sheets. Bake at 350 for 15-17 minutes until edges are slightly golden. Let the cookies rest on the baking sheet for about 5 minutes, then move them to a cookie rack to finish cooling. Enjoy your whimsical Christmas cookies!

Great Day For A Ride

The weather this weekend has been so pretty and I am not yet ready for what is to come. The beautiful this autumn has provided leaves me wanting more and not the cold temps that are to come.
