Bayou Burgers with Spicy Remoulade Recipe







  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 1/4 pound fully cooked andouille sausage link, casing removed, finely chopped
  • 1 teaspoon Creole seasoning
  • 3/4 teaspoon garlic powder, divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound ground turkey
  • 1/4 pound Italian turkey sausage link, casing removed
  • 4 slices cheddar cheese
  • 1/2 cup Miracle Whip
  • 2 tablespoons lemon juice
  • 1 tablespoon hot pepper sauce
  • 2 teaspoons sweet pickle relish
  • 1 teaspoon capers, drained
  • 4 kaiser rolls, split
  • 1 tablespoon butter


  • In a large skillet, saute onion in oil until tender. Add andouille sausage; cook 1 minute longer. Transfer to a large bowl. Stir in the Creole seasoning, 1/4 teaspoon garlic powder, salt and pepper. Crumble turkey and turkey sausage over mixture and mix well. Shape into four patties. In a large skillet over medium heat, cook burgers for 5-7 minutes on each side or until a meat thermometer reads 165° and juices run clear. Top with cheese; cover and cook for 1-2 minutes or until cheese is melted. For remoulade, in a small bowl, combine the Miracle Whip, lemon juice, pepper sauce, relish and capers. Spread rolls with butter and sprinkle with remaining garlic powder. Broil 4 in. from the heat for 2-3 minutes or until lightly browned. Serve burgers on rolls with remoulade. Yield: 4 servings.

    1-1/2 cups milk or one 12-ounce can evaporated milk or evaporated fat-free milk
    1/8 teaspoon salt

    1/8 teaspoon black pepper

                                 
    Coat a 2-quart square baking dish with nonstick cooking spray. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham, and green onions.                        
    In a bowl combine eggs, milk, salt, and pepper. Pour egg mixture over potato mixture in dish.                         
    Bake, uncovered, in a 350 degree F oven for 40 to 45 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving. Makes 6 servings.                             
    Make-ahead directions: Prepare as above through step 2. Cover and chill for up to 24 hours. Bake, uncovered, in a 350 degree oven for 50 to 55 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving. 
                                 
    Farmer's Casserole for 12: Prepare as above, except double all ingredients and use a 3-quart rectangular baking dish. Bake, uncovered, for 45 to 55 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before serving. Makes 12 servings.

    Old Fashioned Recipe Perfect for St. Patricks Day


    2 pkgs. (24 oz. ea.) prepared mashed potatoes
    1 pkg. (14 oz.) Johnsonville® Polish Kielbasa, halved
    1 large onion, chopped
    2 Tbsp. butter
    1 medium head cabbage, cored and cut into wedges
    1/4 tsp. pepper                                                   
    Heat potatoes according to package directions; keep warm.
    In a large skillet, sauté sausage and onion in butter until onion is tender.
    Add cabbage and pepper.
    Cover skillet; cook over medium heat for 10-12 minutes or until cabbage is tender.
    Serve with potatoes.

    Wordless Wednesday - Snow Day

    Valentine Table Setting and Strawberry Ice Box Pie


    tonight for supper we had
    pork tenderlions
    mushrooms
    salad

    and for dessert


    Crust

    • 1cupslivered almonds, toasted
    • 1/2cupgraham cracker crumbs
    • 1/4cupsugar
    • 6tablespoons(3/4 stick) unsalted butter, melted

    Filling

    • 5cupsquartered hulled strawberries (about 24 ounces)
    • 1cupsugar
    • 1/4cupcornstarch
    • 2tablespoonsfresh lemon juice
    • 2teaspoonsgrated orange peel
    • 1 1/2cupschilled whipping cream

    Preparation

    For crust

    • Position rack in center of oven; preheat to 350°F. Butter 9-inch-diameter glass pie dish. Coarsely chop almonds in processor. Add graham cracker crumbs and sugar; process until finely ground. Add butter; process until evenly moistened. Press crumb mixture onto bottom and up sides of prepared pie dish.
    • Bake crust until set, about 12 minutes. Cool completely on rack.

    For filling

    • Place 2 cups strawberries in medium saucepan. Mash strawberries with potato masher until chunky. Add sugar, cornstarch, and lemon juice. Stir over medium-high heat until sugar dissolves and mixture boils and thickens, about 3 minutes. Transfer mixture to bowl. Cool to room temperature. Stir in remaining 3 cups strawberries and grated orange peel. Mound filling in crust. Chill pie until cold and set, at least 2 hours and up to 6 hours.
    • Using electric mixer, beat cream in large bowl until peaks form. Spread whipped cream decoratively over filling. Cut pie into wedges and serve.

    Mini Greek Pizza Muffins

    Mini Greek Pizza Muffins Recipe at Cooking.com
    2 tablespoons extra-virgin olive oil
    2/3 cup finely chopped onion
    2/3 cup finely chopped red bell pepper
    1/3 cup whole-wheat pastry flour
    1/3 cup all-purpose flour
    2 teaspoons baking powder
    1 1/2 teaspoons chopped fresh oregano or 1/2 teaspoon dried
    1 teaspoon sugar
    1/4 teaspoon garlic powder
    1/4 teaspoon salt
    1/3 cup low-fat milk
    1/3 cup crumbled feta cheese
    1 large egg, well beaten
    2 tablespoons tomato paste
    2 tablespoons chopped kalamata olives
                                                 


    Heat oil in a large skillet over medium heat. Add onion and bell pepper; cook, stirring often, until the onion is tender, about 5 minutes. Transfer to a large bowl and let cool for 10 minutes.

    Meanwhile, preheat oven to 400°F. Coat a mini-muffin pan with cooking spray.

    Whisk whole-wheat pastry flour, all-purpose flour, baking powder, oregano, sugar, garlic powder and salt in a medium bowl.

    Stir milk, feta, egg, tomato paste and olives into the onion mixture. Make a well in the dry ingredients; add the wet ingredients and stir until just combined. Fill the prepared muffin cups two-thirds full.

    Bake the muffins until lightly browned, 13 to 15 minutes. Cool in the pan for 5 minutes before turning out onto a wire rack. Serve warm or at room temperature.

    Tukey Tenderlion

    1 cup of seedless raspberry preserves
    1/2 cup of light soy sauce
    1/4 cup of olive oil
    2 cloves minced garlic
    2 tbsp. grated fresh ginger
    1 1/2 tsp. chopped fresh rosemary 
    6 turkey tenderloins
    Whisk together preserves, soy sauce, oil, garlic, ginger and rosemary. Reserve 1/2 cup marinade. Place turkey in plastic bag; pour marinade over turkey. Seal and refrigerate 8 hours, turning occasionally. Remove turkey from marinade, discard marinade; arrange turkey in a broiler pan coated with cooking spray. Bake at 425 degrees for 25 to 35 minutes or until the meat thermometer reads 170 degrees, basting often with reserved marinade. Let stand 5 minutes before slicing.

    Red Velvet Valentine Cupcakes

    Cupcakes:
    • 2 1/4 cups all-purpose flour
    • 1 1/2 teaspoons unsweetened cocoa powder
    • 1/2 teaspoon salt
    • 1 1/2 teaspoons baking powder
    • 12 tablespoons unsalted butter, at room temperature
    • 1 1/2 cups sugar
    • 2 large eggs plus 2 large egg yolks
    • 1 1/2 tablespoons red food coloring
    • 1 1/2 teaspoons vanilla extract
    • 1 1/4 cups milk
    Frosting:
    • 6 ounces cream cheese, at room temperature
    • 3 tablespoons unsalted butter, at room temperature
    • 1 1/2 teaspoons vanilla extract
    • 2 1/4 cups confectioners' sugar
    Make cupcakes: Preheat oven to 350°F. Place paper liners in a 12-cup muffin tin and 4 cups of a 6-cup muffin tin. Fill 2 empty muffin cups halfway with water.
    Mix flour, cocoa, salt and baking powder. In a separate bowl, with an electric mixer, beat butter until creamy. Gradually add sugar and beat until light and fluffy. Add eggs, one a time, beating well after each addition. Beat in yolks, food coloring and vanilla. Alternate adding dry ingredients and milk, beginning and ending with dry ingredients. Beat just until all ingredients are incorporated.
    Divide batter among cupcake liners. Bake until a toothpick inserted into center of a cupcake comes out clean, about 20 minutes. Cool in pans on wire rack for 10 minutes, then remove cupcakes from pans to rack to cool completely.
    Make frosting: Using an electric mixer on medium speed, beat cream cheese and butter until smooth. Beat in vanilla. Gradually add sugar and beat until easy to spread.

    Sunday Morning Pancakes

    My mother used to make pancakes quite often for breakfast on Sunday mornings. When my family was younger I made Sunday breakfast special for my children as well. I thought it might be a great idea to share a few pancake tips with you this wonderful sunday morning

    • use fresh ingredients , ingredients that are not so fresh will make imperfect pancake mix. 
    • it is important to bring all ingredients to room temp before mixing together. Eggs and milk should be allowed to sit to reach room temp. The result of not allowing all ingredients to reach room temp may result in tougher pancakes
    • allow batter to sit to allow the baking powder to activate within the batter. First mix so that all lumps have disappeared and allow batter to sit for at least 10 minutes
    • Prepare your skillet so that it will be hot before you pour in the batter. Warm up a bit of veggie oil or butter When pan is hot pour in batter
    • Now is where you need patience because you want to allow the pancake to form until bubbles appear on the entire surface. Then it is time to flip the pancake, turn down heat a bit and beware of burning.
    • before starting another pancake wipe surface of skillet with paper towel.
