Denver Casserole



1 dozen eggs
1 pint (16 oz) sour cream
12 oz shredded cheese - jack and/or cheddar
1 lb cooked ham, chopped
1 large green pepper, diced
1/4 C chopped onion
2 cloves garlic (optional)
salt and pepper
Preheat oven to 350 F.
Saute onion, pepper, and garlic until beginning to soften.
Whip eggs and sour cream together with salt and pepper
Dump half of the cheese into a 9X13 baking dish, followed by the ham, the rest of the cheese, and the vegetables. Pour the egg mixture over the whole thing.
 Bake 60 minutes, until top is golden brown and knife inserted into the center comes out clean (or almost so - it will continue to cook for a few minutes afterwards).

Serves 8.

Vegetarian Enchilada Casserole

Makes 8 to 10 servings

Ingredients:1 (15-ounce) can whole kernel corn, drained
1 (15-ounce) can black beans, rinsed and drained
Half of (8-ounce) container low-fat sour cream
1 (8-ounce) jar picante sauce
1 cup shredded low-fat Monterey jack or cheddar cheese
1 (10-ounce) can diced tomatoes and green chilies
2 cups cooked brown rice
1/4 teaspoon black pepper
1 to 2 green onions, chopped
Garnishes: sliced black olives and shredded low-fat Monterey jack or cheddar cheese

Directions:1. Preheat oven to 350 degrees F and spray a 9x11-inch casserole dish with cooking spray. Gently mix corn with beans, sour cream, picante sauce, cheese, tomatoes and green chilies, rice, pepper and onions.

2. Spoon bean mixture into prepared casserole dish and top with olives and more cheese. Bake for 50 minutes or until cheese bubbles and mixture is cooked through.

Blue Cheese and Cherry Cracker Spread




1 8-ounce package cream cheese, softened
1 stick butter, softened
1 bunch green onions, finely chopped
¼ cup fresh Stemilt cherries, pitted and chopped into small pieces
4-ounces of blue cheese, crumbled
Chopped pecans

Mix cream cheese and butter. When combined, add other ingredients and stir until just mixed. Form into ball or log shape, and roll in pecans. Chill until firm. Serve on platter with crackers.

Peach Season Meal



3 yellow peaches, quartered, stone removed
Olive oil spray
2 tbs brown sugar
8 chicken thigh cutlets
1 1/4 cups  couscous
2 tsp olive oil
1 1/4 cups boiling water
1 bunch rocket, trimmed

Frozen Desserts Perfect To Share With Friends



Creamy Mocha Frozen Dessert

2 teaspoons instant coffee granules
1 tablespoon hot water
1 cup cream-filled chocolate cookie crumbs
3/4 cup chopped pecans, divided
1/4 cup butter, melted
2 packages (8 ounces each) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/2 cup chocolate syrup
1 carton (8 ounces) frozen whipped topping, thawed
  • In a small bowl, dissolve coffee granules in hot water; set aside. In another bowl, combine cookie crumbs, 1/2 cup pecans and butter. Pat into a 13-in. x 9-in. dish.
  • In a large bowl, beat cream cheese until light and fluffy. Blend in coffee mixture, milk and chocolate syrup. Fold in whipped topping and spread over crust. Sprinkle the remaining pecans on top. Freeze. Yield: 24 servings.

Family Night Movie at Home



Family time and movies go together nicely. Whether the movie is shown outdoor with a group or in the comfort of your living room with family the great thing is that this year there are some awesome family movies available. This June thru August, Redbox and Phase 4 Films are launching the “Summer Family Fun” campaign to help keep the entire family entertained – rain or shine!

We were sent three of the dvds along with some candy and popcorn to enjoy the movie with. What a great time we had enjoying the movie with our family snacking and having a great time

What A Wonderful Moment ...

Yesterday was a beautiful day for a dear friend of mine. It was her wedding day and  I just had to share this picture as it brought both happiness in my heart and a tear to my eye.


Hammock Day celebrated July 22



June 22 is national hamock day. ummer is in full swing. It's time to slow down and to relax. During the Dog Days of summer (and all of the other summer days, too), there is no better place to slow down and relax, than on a hammock.
Hammock Day is appropriately celebrated right in the middle of the Dog Days of summer (July 3 though August 11th.
Hammock Day exists to enjoy summer as it should be enjoyed. People celebrate Hammock Day by spending as much time relaxing on it as possible. Getting out of your hammock to get a snack, or your favorite summer beverage is okay. But, it is not a day for work. Cutting the lawn is forbidden on this day.
 The roots of Hammock Day and Hammock Day history is largely unknown. Maybe the originator was too busy napping on his or her hammock!? (holiday insights.com)

I can remember when we bought my dad a hammock for his birthday/fathers day. It was meant for him but I believe that us kids used it more than him. Do you have a Hammock? Do you enjoy using it?

July 22, 1868 the 14th amendment was adopted and made part of the U.S. constitution. Two years after the Civil War, the Reconstruction Acts of 1867 divided the South into five military districts, where new state governments, based on universal manhood suffrage, were to be established. Thus began the period known as Radical Reconstruction, which saw the 14th Amendment, which had been passed by Congress in 1866, ratified in July 1868. The amendment resolved pre-Civil War questions of African American citizenship by stating that "all persons born or naturalized in the United States...are citizens of the United States and of the state in which they reside." The amendment then reaffirmed the privileges and rights of all citizens, and granted all these citizens the "equal protection of the laws."

A treat that may have been enjoyed during this time period in history would have been rock candy. I can remember my grandmother making rock candy and presenting it as sort of a science experiment. The after math was a sweet hard treat that was ooohh so good




  • 6 cups cold water
  • 6 cups white sugar
  1. Prepare your candy growing area by thoroughly cleaning and drying a 2 quart jar. You will need a place for it to rest undisturbed for about 2 weeks.
  2. In a large bowl, place the water. Dissolve sugar in water, a little at a time, stirring each time until sugar is completely dissolved, until no more sugar can be incorporated. Pour sugar water into clean jar and place a bamboo skewer in the jar, being sure the top sticks out over the surface of the water. Cover with a cloth, to keep out dust, and let rest until all water is evaporated and crystals have formed on the skewer, several days.
  3. NOTE: For larger crystals, try "seeding" them, by wetting your skewer and rolling it in sugar before placing it in the sugar water. Be sure not to disturb the crystals as they are growing.
