Baked Potato Skins

1/2 cup butter

2 garlic cloves, pressed or minced

Skins from 8 large baking potatoes

Freshly ground black pepper & salt to taste

1/2 cup grated Swiss cheese

Bake potatoes in a 400 degree oven until tender when pierced (about 45 minutes to 1 hour). When cool enough to handle, cut potatoes in half and scoop out potato, leaving a thin shell about 1/8 inch thick. (Reserve scooped out potato for other dishes.) Melt the 1/2 cup butter over medium heat. When the butter is hot add the garlic. Saute the garlic until softened and fragrant (about 2 1/5 minutes). Place each skin, scooped side up, on a shallow baking sheet. Sprinkle with ground pepper and salt to taste. Scatter the grated cheese lightly on top of the buttered skins. Preheat oven to 350 degrees. Place the cookie sheet in the upper third of the oven. Bake the skins for about 30 minutes or until hot, crisp and golden.

Spicy tenderlion with Potatoes

2 tablespoons olive oil

1 1-pound piece pork tenderloin

kosher salt and pepper

1 pound new potatoes, quartered

2 large garlic cloves, smashed

1/2 cup low-sodium chicken broth or water

1/3 cup jarred hot cherry peppers, seeded and roughly chopped

1/4 cup flat-leaf parsley leaves

Add the wine, broth, and peppers. Reduce heat to medium-low and cook, covered, until the pork is cooked through and the potatoes are tender, 12 to 15 minutes. Transfer the pork to a cutting board. Let rest at least 5 minutes before slicing. Stir the parsley into the potatoes and serve with sliced pork.

How Big Is A Pig has become my grand-daughters favorite books. This is no small task because before she was ever born she was being read to while in her Mommy's womb and her mommy and I was collecting books. To be among her favorites the book must be a special one but then not every book is as cute as this one. Recommended for children 1 to 4 years of age the book is created for little hands to look at and admire many times over. The story is about an adventurous pig who travels the barnyard asking all sorts of barnyard animals a barrage of questions. Perhaps it is the wording in the book or the beauty of the pictures that my little Princess likes the best but whatever it is I know that she loves the rhyming, question and answer book that offers opposites and animals in a colorful farmyard setting.

The second book we had the pleasure of reviewing was the book Where's The Cat. Take one quick glance at the fun and colorful book cover and you will have a good idea of why Princess loves this board book. The cat can be found through out the book in many different places all of which are his favorites. This book is another great read for children with words that rhyme and a game of hide and seek. The book not only is great to read and look at the beautiful pictures but it also helps build a child's visual skills in a question- and - answer format. Princess loves to get involved in finding the cat and the thing her mom loves is that it helps to build her vocabulary skills because it uses familiar household places and items. Share this book with a child you love I am sure you will both have a great time reading a book together and I just love the bond I share with my children/grandchildren when we read

these are just some random pics of my littlest cousins how cute they all are.

Pish Posh Mommy Carry All Review

As a mommy I have often felt the stress of the morning rush. Grab the babies bottle and diaper, don't forget the toddler snacks and extra clothes and oh the keys to the car and the list goes on. There is no way that one person could possibly juggle that many things at one time with help. Often moms find their selves alone to do the juggling and this may not be the easiest task to try and get out the door. That is why I love the PishPosh carryall.

We received a Pish Posh Pull String Carryall and let me tell you I know that my daughter will find many great uses as she juggles needed items of a newborn baby and a toddler She will definitely have her hands full with two little ones and organization may be the last thing on her mind but with the Pull String Carryall she will not have to worry about that. Simple and easy to use the pull string will allow her to quickly get in and out of the carryall grabbing the needed item.

There will be days where she will not know which way is up so the great thing about this carry all is that she can fill it up when the kiddos are asleep and have it ready to go when she needs it. Pish Posh Carryalls are available in a variety of colors and styles and can be purchased on their website follow PishPoshMommy on facebook where you can stay up to date with news and deals you can also follow PishPoshMommy on Twitter
