6 slices bread, buttered on one side and quartered
6 eggs, plus 6 extra egg yolks
150ml cream
2 stalks fresh thyme, removed from stalk
1 silverbeet/spinach leaf, roughly torn
12 cherry tomatoes, halved
150g ham off the bone
1 cup grated tasty cheese
1 tbsp hot English mustard
Pepper
Preheat oven to 200°C.
Grease baking dish and arrange bread standing up with some crusts on top and some down bottom.
Weave in alternatively as evenly as possible the spinach, tomatoes and ham.
Whisk eggs, cream, mustard, thyme and pepper. Pour over the top of mix, sprinkle cheese on top.
Bake for 30-40 minutes. Check for done-ness with a fork – the egg should be cooked right to bottom of baking tray. Serve hot or cold.\
