Potato Soup in crockpot

Potato Soup in crockpot

8 cups coarsely chopped peeled potatoes ($1.00 bought 50# bag for $12.00)
1 small onion, chopped (.50)
1/2 lb bacon, crisped, drained and crumbled (.50 on sale)
1 (8 ounce) package cream cheese, softened ($1)
2 (10 ounce) cans chicken broth ($1.00)
1 (10 ounce) can cream of chicken soup (.50)
3/4 cup water
1 1/2 cups milk (.50 powder milk allready purchased)
1/2 teaspoon pepper

Stir together the potatoes, onion and bacon in the crock pot.
2In a large mixing bowl, combine the cream cheese, chicken broth, cream of chicken soup, water, milk and pepper.
3Add the mixture to the crock.
4Cook on low for 8 to 10 hours or on high for 4 to 5 hours.
5Before serving, put some of the mixture into the blender, and mix back in to thicken the soup.

  7. This sounds yummy! I made potato soup this week too :-) We don't have kids, so I'm having a hard time convincing my hubby to buy in big bulk. We go to the Amish store and get 10 pound bags of sugar/flour, but he says no way to the 50 pound bag! They also sell fruit and veggies in bulk too. For the potatoes, do you preserve some of them or do you eat them up fast? Thanks!
