10-12 medium parsnips
1/4 cup butter
1/4 cup brown sugar
1 teaspoon grated orange rind
1/3 cup orange juice
1 Tablespoon lemon juice
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon parsley flakes
Peel parsnips. Cut into wedges Cook in boling salt water, until tender. Drain.
Melt butter in a large skillet.
Add remaining ingredients, except parsley, and stir until thoroughly mixed.
Add parsnips. Cook on low heat for 5 - 10 minutes, stirring frequently.
Pour into a serving dish. Sprinkle parsley on top.
Serve hot.
