Radishes Can Be Eaten Raw



Radishes are a root crop. They have many taste points from juicy to pungent and even sweet. The colors of radishes vary as well. White, red, purple, black, pink and the list goes on. The shape of radishes is as variable as the color . Shapes can be long, cylindrical or round. Radishes can be prepared raw, cooked or pickled. The radish oil is another valuable item that comes from radishes.



Radish oil is used in a many health applications. Another name for radishes is daikon. While daikons or radishes are small in size they pack lots of use. The whole radish including leaves, flowers, pods and seeds can be used.

1 cucumber, seeded and sliced into matchsticks
1 medium carrots, shredded
6 medium radishes, shredded
1 teaspoon extra virgin olive oil
1 teaspoon apple cider vinegar
1 teaspoon maple syrup or honey (optional)
3 Tablespoons cilantro, chopped
salt and pepper to taste

Add the cucumber, carrot, and radishes to a medium bowl. Mix with the olive oil, apple cider vinegar, maple syrup or honey (if using), and cilantro. Top with salt and pepper to taste and serve.
