Peppermint Cookies

tip: chop the candy canes in a food chopper or place 
in baggie and crush using hammer

1 cup margarine
1/2 white sugar
1/2 cup brown sugar
2 3/4 cups flour
1 teaspoon salt
1/2 teaspoon baking soda
2 eggs
1 1/2 teaspoons vanilla
1/2 cup crushed candy canes

Cream together the margarine and sugars:

Add in the eggs, mixing well after each egg. Add in the vanilla and mix again. In a separate bowl, mix together the dry ingredients. Add to the sugar mixture in thirds, mixing well after each addition. Fold in the crushed candy canes.

Drop by spoonful onto a greased cookie sheet.

Bake at 375 degrees 12-14 minutes. Transfer to cooling rack.

these cookies are great right after the holidays because candy canes are at 1/2 or more off the price they were
