Supreme Pizza Casserole #recipe




16
 oz. uncooked fettuccini
2 lbs. ground beef
1 medium onion chopped
2 cans sliced mushrooms drained, 4-oz. each
2 29-oz. jars   your favorite spaghetti sauce
14 oz. jar pizza sauce
1 tbsp. sugar
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. oregano
2 8-oz. bags mozzarella cheese shredded
6 oz. bag parmesan cheese shredded
2 3.5-oz. bags pepperoni sliced
  1. Cook pasta according to package directions.
  2. Meanwhile, in a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain.
  3. Stir in the mushrooms and spaghetti sauce, pizza sauce, sugar and seasonings.
  4. Drain pasta; stir into meat sauce.
  5. Place half of the meat/pasta mixture into greased 10x15" casserole dish.
  6. Sprinkle 1 package of mozzarella cheese over sauce mixture.
  7. Layer 1 package of pepperoni slices on top.
  8. Repeat layers once.
  9. Sprinkle Parmesan cheese over top of pepperoni.
  10. Cover casserole with foil or lid and bake about 1 hour at 350° until mixture bubbles on sides.
  11. Remove cover and bake an additional 10 minutes or so until done.

Truth About Hunger




There are so many factors currently in the economics that is leading families to desperate times. Food is one area in the budget that may have been slimmed. Sadly in some situations hunger may be affecting more neighbors than you realize. In addition, it is known that in America there is one family in every community that struggles with getting enough food to feed the family. 


It was all ready a known fact each year that millions of Americans faced hunger daily. Now the coronavirus pandemic affecting every American has made it even harder for families that are struggling to get enough food to feed their family. In 2020 it is estimated that 54 million individuals are not sure if they have enough to eat or not. Thus food banks are seeing more participants that are in need of help. 


Those visiting food banks have deeply been affected by covid 19. Many often think that the individuals that are in need and visit food banks are those that do not work. This is not the case as many families in need are led by those working part time or full time jobs. However, the issues involved are low wages, underemployment, and other expenses that must be made. 


Programs set up by the government including SNAP or WIC and these are meant to help offer proper nutrition. Many families that are still going hungry earn to much to qualify for such programs.

Smothered farm Chicken


 

  • 2 servings of chicken (we used boneless skinless breasts)
  • ½ tsp sea salt
  • ½ tsp fresh ground black pepper
  • 2 tsp Dijon mustard
  • 2 tsp mayonnaise
  • 2oz grass-fed cheddar cheese, shredded (optional)
  • 4 slices thick cut bacon
  • 1 cup thinly sliced onion
  • 1 medium-sized tomato, diced
Preheat the oven to 350 degrees F. Make sure the chicken is of uniform thickness (pound it down if you need to). Place the chicken onto a baking pan and season with the salt and pepper. In a small bowl mix together the Dijon mustard and mayonnaise and then spread it evenly on the chicken. Bake for 25-30 minutes, or until cooked through
If using the cheddar, sprinkle it right onto the chicken as soon as it comes out of the oven; the residual heat will melt the cheese.
In the meantime, fry the bacon in a heavy skillet until crisp. Remove the bacon from the pan and drain all but 1 Tbs of the drippings. Add the thinly sliced onion to the pan with bacon drippings and cook on medium heat for 10-15 minutes, or until onions are translucent and browning.
Roughly chop the crisp bacon and prepare to assemble the chicken.
Place a piece of chicken onto a plate and top with a portion of the fried onions, followed by the crumbled bacon, and then the fresh tomatoes. Garnish with fresh chives or parsley if desired.

Butterscotch Trifle Recipe


 

This tasty dessert is easy enough for any night of the week and tasty enough for special Sunday dinner 


  • 1 box butterscotch pudding mix
  • Crushed Vanilla Wafers
  • Cool Whip
  • 2 C milk

n a mixing bowl, whisk together the milk and pudding mix. Allow to firm up, about five minutes.
Layer the bottom of two dessert glasses (or more, depending on the size of your glasses. Mine were 12 fl oz glasses) with some of the crushed vanilla wafers. Spoon a layer of the pudding over the crushed wafers and smooth out. Spoon a layer of cool whip over the pudding and spread out. Repeat this process one more time, ending with a layer of cool whip.

Peanut Butter Apple Crumble




Filling

6 granny smith apples , peeled, cored, and diced

1/2 cup creamy peanut butter

3/4 cup light brown sugar , packed

1 tsp. ground cinnamon

1 T. all-purpose flour

Topping

1/2 cup light brown sugar , packed

3/4 cup quick cooking oats

3/4 cup all-purpose flour

1/4 cup (1/2 stick) butter, cold

1/2 cup creamy peanut butter

Instructions

Crumble

In a large bowl, add flour, oats, and sugar. Whisk together until incorporated and there are no lumps.

Add in the butter and peanut butter. Using a fork, cut in the butter/peanut butter until it resembles small pebbles. Set aside.

Filling

In a large bowl, add in brown sugar, flour, and cinnamon. Whisk together until combined and no lumps 

are left.

Add in the peanut butter and stir with spatula until it's incorporated into the dry mixture.

Add in the apples and stir until the apples are completely coated.

Pour the apples into a 10-inch pie plate. Pile the crumble topping on top of the filling.

Place into a 350 degree oven for 40 - 45 minutes or until golden brown and bubbly.

Bit of History on Uncle Sam Day





Today is Uncle Sam Day. NO!!! Not your uncle Sam but the Uncle Sam that represents the United States. 




Where and How did Uncle Sam come about?? Well to tell you what I know there are more than one story behind the name. One story is about soldiers near New York and the meat that was delivered to them The meat was delivered in barrels stamped with the letters "U.S." The meat may have belonged to the United Stats but the man meeting the supply demand was Samuel Wilson. The soldiers started jokingly calling him "Uncle Sam" The second story has to do with Irish Immigrants and their native tongue abbreviation for the United States was "SAM" I like the first story what about you. Uncle Sam Day is said to occur on the 13 of September the same date as Sam the meat man would have celebrated his birthday. 

Did you know that there are other human symbols that represent the United States??? 
  • Brother Jonathan and I truly have a brother named Jonathon but this Brother was a symbol to the United States prior to Uncle Sam. He was first introduced by George Washington as a symbol that represented one of his governors Later it was costumed as a strong young man in striped britches that was in the prime of his life and often stood to show the rocky relations between the United States and Great Britain. Eventually before disappearing Brother Jonathan would come to symbolize the Union during the Civil War 

Brother Jonathan celebrates the American centenary by straddling the towers of the main building at the Philadelphia World's Fair of 1876.

Be Sure To Get The Day Started WIth Breakfast

 September is thee first of many different things. It was the day my gran-daughter (12 year old now) and my other grand-daughter (only 1 now) and even I (not telling my age) took our first breaths. In 2020 it will also hold the first day of fall. While September holds many 1st it also holds true to a month long tradition of eating a better breakfast. 



You may have heard of a balanced breakfast. You may have even eaten what is considered a balanced breakfast. But do you really know what a balanced breakfast is?? A Balanced Breakfast consist of 3 of the four food groups or check this out it must include 3 of these:




  • vegetables and fruits which include a whole gambit of choices like bananas, oranges, pineapples, blueberries, cucumbers, tomatoes, and the list goes on and on. These can be fresh, frozen or dried it makes no difference
  • A source of grain whether it be oatmeal, corn, rice, wheat found in products such as cereal, tortillas, or any other product. 
  • A source of dairy that can easily be found in milk or other choices such as yogurt, cheese, or an alternative choice like soy
  • Meat is the final of the four categories and not only includes meat from animals but also tofu, nuts, seeds and peanut butter. 




Over the next few weeks we will be sharing some great breakfast ideas. But today lets talk about why we should eat a balanced breakfast:
  • It is good for our health. to eat a balance breakfast. Breakfast helps provide our bodies with essential nutrients and has been shown to battle against obesity. In addition it is important in helping keep our bodies blood sugar at a normal level
  • You work better after supplying your body with a good breakfast. Breakfast has also shown to be able to fight off hunger, boost our immunity system 

So start your day off right and enjoy a balanced breakfast

Happy Labor Day enjoy with a Low Labor Recipe

 



Here are a few recipes that will help you enjoy your day with less work so that you can relax and not labor. 

Start with some Pulled Pork Sandwiches



  • 5 pounds pork loin roast
  • 1/4 cup bbq rub 
  • 2 tablespoons canola oil
  • 2 cloves crushed garlic
  • 1 large sweet yellow onion diced
  • 1 – 12 ounce Coca Cola soda (can or bottle)
  • 18 oz BBQ Sauce spicy, sweet, or smoky your choice!
  • 12 buns
  • 4 cups coleslaw
  • pickle chips
  • extra bbq sauce

Optional step but makes it taste great! In a large heavy frying pan on medium-high heat, add the canola oil. Next, add the pork and cook, turning frequently till all sides are brown.

Move the browned pork, chopped onions and garlic to your slow cooker or crockpot Add 12 oz of Coca Cola and the barbecue sauce over the pork loin.

Cook on HIGH for 4 hours or on LOW 7-8 hours. Remove pork into a large pan (roasting pans work well) and shred with 2 forks.

The Movement Into Labor Day

With the start of the month of September the world enters the final 1/4 of the year. Wow, it has gonna rather fast. In the stores you may all ready notice signs of approaching holidays. The sales of summer goods are at a good pace now as stores begin to rid shelves of summer items and ready for approaching holidays. However, the summer heat has not betrayed us as the sweltering days are still around. 



Tomorrow, the first Monday in September we will welcome in a holiday known as Labor Day. It is a day that signifies the passing of summer and the approaching of fall with some areas opening up the school doors around the same time. In many areas this year, 2020 some schools may not open because of the Covid issue. Perhaps some things are different this year but the truth still remains is that Labor Day is always on the first Monday in September



Labor Day is celebrated in the United Stats on the first Monday in September every year and honors the Americans who have helped make this great country strong The day was created by the labor movement in the late 19th century. In 1894 the day became a federal holiday. At that time in history the economy was booming and Americans were working 12 hour days, 7 days a week. The workers did not make a lot and men, women and children worked sunup to sundown to make the money they would be paid. Yes, I did say children many factories would have young children under the age of 10 working. These children also worked in mines and mills to make money to bring home to the family. In addition, the poor, old, and young would often work in unsafe conditions where there was little air, bathrooms or breaks to be taken. 



In the early days of the United States farming was the leading way to make a living. Manufacturing would surpass farming and become the leading source of employment for most Americans and immigrants alike. Labor unions would form as more and more workers were hired to do manufacturing jobs. Thus strikes and rallies began in order to protest the poor working conditions, the long hours and little pay that employees received. 



September 5th, 1882 ten thousand workers would march from city hall to union square in New York City. These workers, who otherwise would have been at work, took their own time to hold the first Labor Day parade. A holiday for the working man had caught on in many states but it would take much more than this to have the federal government recognize the day. Unions and workers would stage strikes in protest of workers rights, pay and other issues related to labor. Eventually the Congress would pass an act in June of 1894 that would recognize the first Monday in September as a legal holiday and the act would be signed by Grover Cleveland.
