Egg Day

October 13th is celebrated as World Egg Day. Promoting the benefits of eggs is something that happens world wide during this special day. No Yolk eggs are exactly what they are cracked up to be. The only draw back of eggs may be high cholesterol. Eggs are high in nutrition and low in fat and are enjoyed by individuals world wide.

Perhaps on some shows like Fear Factor or another such show you have see n 1,000 years old eggs and wondered are they real?? Well, many consider these eggs yummy treats. The egg is buried in the ground for a set amount of time. In China there are 1,000 year old eggs. But while you may not want to try a 1,000 year old egg you may want to check out this Egg Burrito:




1 Tbsp. olive oil
1 Tbsp. finely chopped red bell pepper
1 Tbsp. finely chopped yellow bell pepper
1 Tbsp finely chopped green bell pepper
1 Tbsp. finely chopped red onion
3 large egg whites
1 8-inch whole wheat flour tortilla warm
1 slice low-sodium turkey bacon cooked, chopped
Ground black pepper optional
2 Tbsp. fresh tomato salsa

Heat oil in medium nonstick skillet over medium-high heat.
Add bell peppers and onion; cook, stirring frequently, for 3 to 4 minutes or until soft.
Add eggs; cook, over medium heat, stirring frequently, for 2 to 3 minutes, or until eggs are set.
Top tortilla with egg mixture, turkey bacon, and pepper (if desired).
Roll tortilla burrito-style.
Serve with salsa.

  1. I love eggs and hard boil a dozen every week for my husband and me, but weekends are all about scrambled eggs! Your burrito looks delicious packed with all those veggies!

  2. We love eggs in our home, especially scrambled or dip eggs, as well as hard boiled for egg salad. This burrito sounds / looks really good, and I will have to try it!
