Spaghetti with Shaved Veggies

Spaghetti WITH SHAVED VEGETABLES

1 pound box spaghetti
1 pound carrots, peeled
1 pound zucchini, ends trimmed
1 tbs lemon zest
5 tbs unsalted butter, cut up
Shaved Parmesan cheese
1/4 tsp pepper
1/2 tsp salt
1 tbs lemon juice

Bring a pot of salted water to a boil. Shave zucchini and carrots into ribbons. Cook pasta as package directs. Add zucchini and carrot shavings to the pasta pot. Cook until vegetables are tender. Remove and reserve 1 cup pasta cooking water, then drain pasta mixture.
(2.) Melt butter in same pot used to cook pasta. Add garlic, cook 30 seconds. Remove from heat. Return pasta and vegetables to pot. Add zest and juice, salt and pepper, toss. Add enough reserved pasta water to create a thin sauce. Top with cheese, then serve.
