A Go To Meal Like Mom Would Make

I grew up in a very active family. To say that we stayed busy would be an understatement of sorts. We played sports, were involved in clubs like boy scouts and girl scouts and any other activity that we could find to do. Our parents were busy as well. They both had jobs outside the house but they were also the reason that we were so actively involved they were members of clubs and events as well as having great friends that we would get together with quite often. When time became precious and mom worried about preparing a meal for us that would be good and nutritious she would turn to good old recipes like this one from Taste of Home What is your favorite go to meal on a busy night?


  4 cups uncooked wagon wheel pasta 1 pound lean Italian Sausage 2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
1 cup medium salsa
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 teaspoon dried oregano
1/2 cup sour cream
1/3 cup shredded Monterey Jack cheese













Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the soup, salsa, mushrooms and oregano. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in sour cream; heat through. Drain pasta; serve with sauce mixture. Sprinkle with cheese. Yield: 5 servings

Plum Pudding Is Seasonal

And Said what a good boy Am I.

Plum Pudding ironically has landed on the list of national holiday food not during the Christmas Season but splat in the middle of February.



My grandmother would make this treat for my dad during the holidays. It would be make ahead of time as most plum puddings are. I found this tasty treat that would be perfect to serve to your valentine or during the upcoming Easter dinner.




  • 3 red or black plums, sliced 1/2 inch thick
  • 1 6-ounce container blackberries
  • 1 4-ounce container blueberries
  • 2 6-ounce containers raspberries
  • 3/4 cup sugar

    • Grated zest of 1 lemon
    • 2 tablespoons fresh lemon juice
    • 4 hamburger or hot dog buns, split
    • Whipped cream (optional)

     

    In a saucepan, over medium-high heat, bring the plums, blackberries, blueberries, half the raspberries, the sugar, and 1/4 cup water to a simmer. Cook, stirring occasionally, until the blueberries begin to burst, about 5 minutes. Remove from heat. Stir in the lemon zest and juice and the remaining raspberries. Transfer to a bowl and let cool for 15 minutes.

    Line an 8-inch square baking dish with 2 sheets of plastic wrap, allowing at least 6 inches to hang over each side. Place the bottoms of the buns in the dish, cut-side up. Spoon half the fruit mixture over the buns. Top with the remaining buns, cut-side up, and the remaining fruit mixture. Cover with the overhanging plastic wrap, a plate, and two 15-ounce cans. Refrigerate until chilled, at least 1 1/2 hours. Spoon the pudding into bowls and top with whipped cream (if using).

    Spaghetti Casserole

    Spaghetti in our house is one of those dishes that some like and others can live without. This Spaghetti casserole is one that I have found pleases them all. They love casseroles in this house an for some reason while this one is very much like spaghetti the non spaghetti lovers like it as well.
     
     
    box spaghetti noodles, boiled and drained
    1 pound browned ground beef or turkey
    1 jar spaghetti sauce
    garlic powder, minced onion, pepper
    1/3 cup Parmesan cheese
    1/2 cup mozzarella cheese
     
    1. Brown meat and boil noodles.
    2. In a large pot mix together all the ingredients except the mozzarella cheese.
    3. Pour spaghetti mixture into a 9×13 baking dish.
    4. Bake covered at 350 degrees for 20 minutes.
    5. Add mozzarella cheese and bake another 5 minutes uncovered.
    Notes
    If you are freezing this dish, let it thaw completely before baking and add about 10 to 15 minutes to the baking time.

    Spring Cleaning


    Its that time of year again for spring cleaning. Sometimes rewarding and at times stressful spring cleaning can make you feel overwhelmed and in the end help you feel refreshed.

    Before you start spring cleaning if possible delegate. Since the entire family lives in the house the entire family should help be responsible for its cleaning. Even the little ones can help out here and there. Enlist the entire family that helped make the mess to help clean it up. Here is an age appropriate chore chart to help you decide what chores should be done by who.


    Prioritize work by making a list of exactly what needs done. Some items may need tossed out others simply cleaned. up. If you make a list of what to do it will be easier by allowing you to check off that item when done. This often also allows you to feel as if the goal is being achieved.

    Have supplies ready, many of us have to much in the field of supplies. The best thing to do is have some multi - cleaners ready at the whelm and several rags or paper towels. Keep in mind while cleaning that little things do happen and do not over react. Life is messy so we all should realize that our homes should show what my mother would have said "A Lived In Look"
