Peach Suite Review

I was recently introduced to a hotel supplier by the name of Peach Suite. I know so we are not running a hotel but we are running a family and if you are anything like me you may also be planning on staying in a few hotels. Perhaps because he does learn them the hard way the viewers who watch the story will remember these simple lessons. Old Fashioned Beef Stew

Good and filling to prepare you for the work of the day March is one of those months where the weather here is very unpredictable. It may be that the weather is very cold and you will want to sleep in and get up a bit late to do nothing sort of day off or it may be a get up early work in the yard prepare for the beauty and bounty of spring sort of day off. Either way this type of recipe from The Dinner Toast will do great


1 lb. lean beef chuck, trimmed
2 T. all-purpose flour
2 t. vegetable oil
2 yellow onions, thinly sliced
2 c. mushrooms, sliced
2 cloves garlic, minced
2 t. tomato paste
2 c. low sodium beef broth
4 c. carrots, sliced
2 russet potatoes, thinly sliced
1 c. green beans, 1 inch pieces
1 T. cornstarch
1 T. cold water

  1. Coat beef with flour shaking off excess
  2. Heat oil in large non-stick pot, sauté beef until browned, about 6 minutes
  3. Remove beef and place on plate
  4. Add onions and mushrooms to pot, sauté for about 6 minutes, add garlic and cook for another minute
  5. Pour off fat and then return beef to pot
  6. Add enough water to just cover, bring to boil then reduce heat to low and simmer for about 1 ½ hours
  7. Skim off any foam and add carrots, potatoes and green beans, cover partially and simmer for 15 minutes
  8. In a small bowl combine cornstarch and water, stir into stew
  9. Heat on high and boil uncovered for one 1 minute
  10. Serve and enjoy

Thankful Thursday

Thankful that my friend I asked for prayers for yesterday was released from the hospital. While not all a-ok she will be seeing a doctor that can help her out and now we are aware of the problem. Is it not funny how great friends become more than friends they become family. So that I am thankful for as well a group of great women at work who are like sisters to me.



Thankful that our little town that suffered a F4 tornado last year on lapday will be coming together for a reunion of sorts to remember those that we lost and to show our support for each other. Harrisburg Illinois will stand strong and the Bulldog Nation will continue on.

Praise Him In The Storm


One year ago our little town was hit by a F4 Tornado. It was devestating with loss of life and lots of buildings, homes and property destroyed. Our family found ourselves in the midst of this storm and was not for sure at the time what we were to do. All that we knew was that God knew what he was doing and all would be well. He would always be with us through this and so many other things. Amen!!!! Praise God that 1 year later we are here to tell the story.

Green Beans with Nuts and Cranberries



kosher salt and pepper
1 1/2 pounds green beans, trimmed
2 tablespoons extra-virgin olive oil
1/2 cup roasted, unsalted mixed nuts, roughly chopped
1/4 cup dried cranberries

Bring a large pot of water to a boil. Add 1 tablespoon salt and the green beans and cook until tender, 4 to 6 minutes. Meanwhile, in a large bowl, combine the oil, nuts, and cranberries. Drain the green beans and transfer them to the bowl. Add 1/2 teaspoon salt and 1/4 teaspoon pepper and toss to coat. Serve warm or at room temperature.

Green Popcorn

 
 
8 cups popped popcorn
1/4 cup butter
3 tablespoons light corn syrup
1/2 cup packed light brown sugar
3 ounce package lime-flavored or other green gelatin

Preheat oven to 300 degrees F. Line a 15x10x1-inch pan with aluminum foil. Place popcorn in large bowl. Heat butter and syrup in small saucepan over low heat. Stir in sugar and gelatin; bring to a boil over medium heat. Reduce heat to low and gently simmer for 5 min. Pour syrup immediately over popcorn, tossing to coat well. Spread evenly. Bake in preheated 300 F oven for 10 min. Cool. Remove from pan and break into small pieces.

Cool Mint Oreo Brownie Cupcakes

Cool Mint Oreo Brownie Cupcakes


  • 1 pkg. Cool Mint Oreo cookies
  • 1 box brownie mix (9 x 13 pan size, I used Betty Crocker)
  • ingredients on the box to make the brownies
Frosting:
  • 1/4 cup shortening (I used butter flavored)
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1/2 tsp vanilla extract
  • 1 Tbsp. milk
  • dash of salt
  • 6 drops of green food coloring
  1. Prepare brownie batter according to the package directions.
  2. Place half of the package of oreos in a quart or gallon sized freezer bag and crush. I used my rolling pin to crush them. You want them to be chunky pieces.
  3. Fold the crushed cookies into the brownie batter.
  4. Place liners in your muffin tin and spray with non-stick cooking spray. Fill the sprayed muffin liner with about 1/4 cup of the batter. You should get about 16 brownie cupcakes.
  5. Bake at 350 degrees for 18-20 until a toothpick inserted in the center mostly clean. You want to take them out when a few crumbs still stick to the toothpick. Allow to cool for 20-30 minutes.
  6. While they cool, mix together the frosting. In a large bowl, cream together the butter and shortening with a mixer.
  7. Add sugar a cup at a time, beating well after each addition to make light and fluffy
  8. Add extract and food coloring along with milk and beat until incorporated and fluffy. You can add a little more milk if needed.
  9. Pipe or spread the frosting onto the cooled brownie cupcakes and place a cookie from the remaining in the package on top of each frosted brownie cupcake.

Bacon, 1 Slice, crisp cooked, crumbled 1 Tbsp. Cooked Bacon Pieces
Baking Powder, 1 tsp. 1/2 tsp. Cream of Tarter plus 1/4
tsp. Baking Soda
Balsamic Vinegar, 1 Tbsp. 1 Tbsp. Cider or Red Vinegar plus
plus 1/2 tsp. Sugar
Bread Crumbs, fine and dry 1/4 cup 3/4 cup soft Bread Crumbs or 1/4
cup cracker crumbs
Broth, Beef or Chicken, 1 cup 1 tsp. or cube of Beef or Chicken
Bouillon +1 c. water
Butter, 1 cup 1 cup Shortening plus 1/4 tsp. Salt
if desired
Buttermilk, 1 cup 1 Tbsp. Lemon Juice or Vinegar
and milk to make 1 c.
Chocolate, Semisweet, 1 oz. 3 Tbsp. Semisweet chocolate
pieces or 1 oz.unsweetened
chocolate plus 1 Tbsp. granulated
sugar OR 1 Tbsp. unsweetened
Cocoa powder plus 2 tsp. Sugar
and 2 tsp. Shortening.
Chocolate, sweet Baking, 4 oz. 1/4 cup unsweetened cocoa
powder plus 1/3 cup granulated
sugar and 3 Tbsp. shortening
Chocolate, unsweetened, 1 oz. 3 Tbsp. unsweetened cocoa
powder plus 1 Tbsp. cooking oil or
shortening melted
Cornstarch, 1 Tbsp. (for thickening) 2 Tbsp. all-purpose flour
Corn Syrup (light), 1 cup 1 cup granulated Sugar plus 1/4
cup of water
Egg, 1 whole 2 egg Whites or 2 egg yolks, or
1/4 cup refrigerated or frozen egg
product, frozen
Flour, cake, 1 cup 1 cup minus 2 Tbsp. of all purpose
Flour
Flour, self-rising, 1 cup 1 cup all-purpose flour plus 1 tsp.
Baking Powder, 1/2 tsp. Salt, and

we were in florida and it was the first time and only time I really hope to return one day. I was with my children and I believe the one word would be awesome

4. February 26th is National Pistachio Day...are you a fan of the little green nut? Do you use them in cooking and baking or prefer to eat them right out of the shell?

I have always loved pistachios. Watergate salad is my favorite recipe where I use this little green nut




5. When did you last have to compromise with someone? Were you happy to reach a compromise or slightly irritated it came to that?

In life it seems we are always making compromises. I stand up for myself but allow the other person to share their opinion as well. In the middle we will reach a compromise
.

Not a letter but phone calls, office visits and yes I did get forward in what I was working towards.

We are looking forward to many auction sales as we build up and get ready for resale season.

Chocolate Popcorn

Happy birthday Ric Flair. Yep thats right that straight collared, wild woman lover, one of the best wrestlers of all times is celebrating his birthday today. One of my favorite things to do through the years was to watch wrestling. This is one activity I shared with my own father, my husband and even my brother and children.

Check out this delicious recipe I shared goes great with wrestling fans who love to have a snack while enjoying watching T.V.
 
 
Chocolate Popcorn
 
 
1/2 cup sugar
1/2 cup light corn syrup
1/2 stick butter
2 tablespoons cocoa
1/2 teaspoon salt
8 cups popcorn

 

Over medium heat, using a 4 quart pot, combine the sugar, corn syrup, butter, cocoa, and salt and bring to a boil. Once the mixture is well mixed, add the popped corn. Cook and stir until popcorn is coated, approximately 2 minutes. Cool mixture and shape into 3-inch balls.
