Fried Fish Poor Boy
12 ounces tilapia fillets
2 teaspoons Cajun spice
½ teaspoon salt
1 egg white
½ cup cornmeal
2 tablespoons oil
2 tablespoons water
5 tablespoons mayonnaise
3 tablespoons chopped pickle
4 hamburger buns
Lettuce
Season the fish with Cajun spice and salt. Whisk together the egg white and water in a small bowl. Pour the cornmeal into another bowl. Cut the fish fillets in half and then dip it in the egg mixture followed by the cornmeal. Add 1 tablespoon of oil to a skillet over medium-high heat and add the fish. Cook for 5 minutes on each side. In a bowl, stir together the mayonnaise and pickle. Assemble the sandwiches with the mayonnaise-pickle spread, lettuce, and fried fish.

The Loss of a Child
Losing a child is to me one of the hardest pains to have to deal with. I personally have never lost a child of my own but I have had loved ones that have. My sister lost her unborn child while she was living with me. Yes... I know this child was not mine but I loved this baby nearly as much as she did and attended all doctor appointments and was getting the nursery prepared as well. In addition, some may say that it was never born yet I would have to disagree with them.
My daughter in high school dated a young man for a few years. I can well imagine they may have been together still if one fateful night had not happened. One night while out with friends and my daughter at home this young man tried what they refer to as "huffing" Inhaling Freon from an air conditioner. This instantly froze his lungs and killed him. What a shock it was for everyone involved. While this was not my child it was a child that was very close to our family. Moreover, it was a serious boyfriend of my
IF you should ever be close in detail to a friend that loses a child some things to keep in mind are
- never say you know how they feel
- let them cry and talk to you if that is what they feel like doing
- keep them in the loop of plans they may not feel like doing it but keeping them in the loop helps they feel like they still belong
- remember allowing them alone time, not requiring them to call you but calling them on occasion just to see how they are is important
- speak of the good times like we used if possible
- help is normally welcome but no pressure

avocado and shrimp salad #recipe
dressing:
1/4 tsp. sea salt
1/4 tsp. freshly ground black pepper
2 tbsp. extra-virgin olive oil
1/4 cup fresh lime juice ((approximately 2 limes)*)
1 tsp. minced garlic ((approximately 2 cloves))
1/4 cup freshly chopped cilantro (packed)
Additional Ingredients:
1 lb. wild caught jumbo shrimp (cooked, peeled and deveined, chopped, 16-20 count)
1/2 cup corn
1/2 cup black beans (drained and rinsed)
1 cup cherry tomatoes (halved (approximately 12-14))
1/4 cup sliced red onion (more or less to taste)
1 in large english cucumber (sliced lengthwise and thenhalf (or 2 small seedless cucumbers))
2 avocados (peeled, pitted and chopped)
Garnishment:
black pepper (to taste)
pinch freshly chopped cilantro (aor two will do)
Lime juice (optional - to taste)
Combine ingredients for the dressing into a small bowl and whisk together until combined.
In a large bowl, combine all ingredients until the 'Additional Ingredients' section, tossing in the chopped shrimp and avocado last.
Add dressing to the shrimp avocado salad, tossing to coat. Serve immediately. This will keep in the fridge for up to 2 days, but is best when freshly made.
Optional: add garnishment, to taste, of additional black pepper, lime juice, and cilantro.

Asteroids
Happy Asteroid day!!!
Asteroids are minor planets that exist in the inner solar system. These objects orbit the sun but are not considered planets and were a lot like comets. It is believed that there are millions of asteroids that orbit the sun. Many of these can be found between mars and Jupiter. Asteroids are made up of mineral and rock and are larger than one meter in length.
The United Nations declared June 30th as International Asteroid Day. Today is the day to educate about asteroids. On June 30th
1908 an asteroid named Tunguska impacted over Siberia Russia It is believed that the earth is due to be hit with an asteroid sometime in the future but noone knows when. However, if we could simply devise a space machine like they had in that game Asteroid that was so popular in the late '70s and 80s.
The asteroid is a space themed multi directional shooter arcade game. The game was created by Rains, Logg and Walsh and released to play in 1979 by Atari. In the game the player controls a spaceship that is in an asteroid field and occasional UFOs. To win the player shoots and destroys the asteroids and saucers without hitting anything in the path. As the game goes on the number o asteroids increases. The game Asteroids was one of the first games during the golden age of arcade games. Other arcade games such as defender and gravitar were created with the game asteroid in mind.
I can recall hours of playing the arcade game. Did you ever play the game??
