Kodiak Casserole

Kodiak Casserole from Taste of Home
2 pounds ground beef

4 cups diced onions
2 garlic cloves, minced
3 medium green peppers, diced
4 cups diced celery
1 jar (5-3/4 ounces) pimiento-stuffed olives, undrained
1 can (4 ounces) mushroom stems and pieces, undrained
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 jar (8 ounces) picante sauce
1 bottle (18 ounces) barbecue sauce
2 tablespoons Worcestershire sauce
3 to 4 cups medium egg noodles, cooked and drained
1 cup (4 ounces) shredded cheddar cheese



In a Dutch oven, cook beef and onions over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the remaining ingredients except cheese. Cover and bake at 350° for 1 hour or until bubbly. Sprinkle with cheese just before serving. Yield: 16-20 servings

Caramel Corn recipe a fall favorite

Most of us love delicious caramel corn during the autumn and harvest time of year. It makes a delicious snack, great item for bake sales and a great treat for someone you love. You can read all about how Lands End helps The United Way  out selling caramel corn at a fall bake sale every year in the article Baking Caramel Corn for a Cause In the meantime perhaps you would like to make some for yourself or someone you love as well.

32 cups plain popped popcorn
1 cup dry roasted peanuts, if desired
2 cups firmly packed brown sugar
1 cup Land O Lakes® Butter
1/2 cup light corn syrup
1 teaspoon salt
1 tablespoon vanilla
1 teaspoon baking soda

DirectionsHeat oven to 200°F. Combine popcorn and peanuts, if desired, in large roasting pan; set aside.
Combine brown sugar, butter, corn syrup and salt in 3-quart saucepan. Cook over medium heat, stirring occasionally, until mixture comes to a full boil (8 to 10 minutes). Continue cooking, stirring occasionally, 5 minutes.Remove from heat; stir in vanilla and baking soda. Carefully pour hot syrup mixture over popcorn and peanuts in pan; stir until well coated. Bake, stirring every 15 minutes, 1 hour or until caramel corn is crisp. Immediately place caramel corn onto waxed paper. Cool completely. Break into bite-sized pieces. Store in tightly covered container.

Wow!!! Its been a while since I have participated in Aloha Friday. It is one of my favorite memes where bloggers get to ask an easy question that other bloggers can give a simple answer to. But like I posted earlier I have been very busy in September. One thing that we have been doing is setting up shop again it is a consignment / antique shop that we both love. It is a lot of work to do though and keeps us very busy. My Aloha Friday question has a lot to do with our shop in that I would like to know:

Slow Cooker Beef Stew

Slow Cooker Beef Stew

1 tablespoon vegetable oil

1 pound beef stew meat
1 package Simply Potatoes® Diced Potatoes with Onion
1 cup rutabaga, cubed
1 cup baby-cut carrots, cut in half lengthwise
2 stalks celery, coarsely chopped
2 cans (14 ounces each) beef broth
1 bay leaf
1 teaspoon dried thyme leaves
3/4 teaspoon salt
1/2 cup water
1/4 cup all-purpose flour

Heat oil in 10-inch nonstick skillet over medium-high heat. Add stew meat; cook until browned. Drain grease.  In 3 1/2 to 4 quart slow cooker, combine browned meat and all remaining ingredients except water and flour. Cover; cook on LOW 8 to 10 hours.  In small bowl, combine water and flour; stir until mixture is smooth. Slowly stir flour mixture into stew. Increase heat to HIGH. Cover; cook 15 minutes or until slightly thickened.

Halloween Punch recipe

4 (1-liter) bottles cold lemon-lime seltzer

3 (1-qt) tubs lime sherbet
Black food color spray, optional (see Note after Snakes & Soup recipe)

Stir 2 liters seltzer and half of the sherbet in a punch bowl until blended. Float scoops of the remaining sherbet on top of punch. Pour remaining seltzer over scoops (it will create a foamy top). Budgeting Calories

Being a diabetic is not always easy to do. The truth is that I like to eat and what I like to eat is not always good for me nor is the amount I want to eat. So one thing I do is to seperate calories throughout the day. I am to have no more than 1,500 calories a day. So I seperate this in 3 different meals and then if I do not use all the calories I can allow myself a small snack. I know it is a bit crazy but it is what works for me

Thankful Thursday

Wow!!! Where has the time went? It seems like yesterday was the first of September and here we are tomorrow going to start the second week of October. I have been so busy as of late but it has been a good busy. A good busy filled with laughter and tears as well as good friends, blog friends old and new friends. I am thankful that God has created a path of life for me created with wonderful friends. I am also so happy that he placed a life partner my husband and me together. Through it all we have been able to comfort each other, love each other and best of all have fun and laugh with each other. My children are all taking different rolls on as well. Feeling the urge to move out but yet wanting to stay at home as well. I am proud of all of my children more than words can express. My children are special to me and as a mother I know that i will always be there to help them whenever needed but I am also thankful that they are brave enough not to let life hold them back to take a stand and go for the goal. Oh how that does a mothers heart good. Life has created paths that were not so straight and narrow but somehow through it all we have been able to raise a beautiful family, have wonderful friends and our life feels so filled and for that I am thankful.

3/4 c sugar
1/8 t salt
1 box vanilla wafers (34 cookies)
4 T lemon juice
4 T orange juice
1 can carnation milk (large)

Beat yolks : add juice, salt and sugar Cook til thick Cool Fold in stiffly beaten egg whites Whip milk and mix in custard Crush 13 wafers and spread in bottom of freezing tray Pour in custard Crush remaining wafers on top and freeze

Homecoming Parad Had Lots of Red

This past week was homecoming at our local high school. Yeah!!! Since I graduated from the school here I loved seeing all my old friends come back to town. There was lots of great red in the parade as well.

 always lots of great fire departments that take part in the local parades. In fact until I moved to Southern Illinois I had never seen so many fire trucks, police cars and EMS in parades. The crowd loves them and I know that my son in law does as well.


This is a picture of one of the homecoming queen candidates. I also love this picture because of the beautiful house in the background. I have always loved the large houses along main street.




Yet another homecoming queen candidate. Yes I was standing right across from this lovely large house. I am still admiring its beauty.

 The American Flag is even more beautiful than the houses. The great red, white and blue may it wave proudly forever.

Sour Cream Meatloaf

Tempt my Tummy Tuesdays


Sour Cream Meat Loaf

2 lb hamburger
1/2 medium onion, finely chopped
3/4 c sour cream
1/4 ketchup
2-3 slices bread, crumbled
1 egg, beaten
salt
pepper

Sauce
1/2 c ketchup
1/8 c brown sugar
1 t mustard

Mix all ingredients for meatloaf. Bake 350 degrees in a loaf pan for 1 to 1 1/2 hours til done Baste with sauce about 1/2 way through cooking

I am a lady who does not wear a lot of jewelry but has several pieces. My daughters are the same way with lots of jewelry but they wear a lot more than I do. Even my grand daughter has gotten started on a jewelry collection owning her first pieces of jewelry. Hamberg-a-la-Berniece or "Eggs For John"

This is an old swedish recipe that is easy to make and would make an easy supper meal as well

Hamberg-A-La-Berniece or "Eggs for John"
2 lb ground beef
2 eggs
1/2 c cracker crumbs
1/2 c milk
1 t salt
1/4 t pepper

mix all and form into small balls Drop into boiling tomato gravy, cover and simmer 15 minutes

Tomato Gravy
1 large can tomatoes no 3 not tomato juice or puree
1 c water
1 T minced onion
1 t salt

Bring all to boil, drop meatballs in When meatballs are done thicken gravy Stir gently so as not to break up meatballs Serve over potatoes

serve with a side salad and fruit

I am sure if it were possible we would all love to do everything that needs to be done in a day but do it easily and with less work. The Get It Done Guys 9 9th book is exactly that in the book he shares his thoughts on How To Work Less and Do More. I was able to read some of the excerpts from Steves book and must say that I love the manner in which it is wrote. Straight forward with a bit of humor so that it does not seem boring or overwhelming. Starting any new adventure in life takes  a bit of attitude and a lot of work. I love the fact that the book How to Work Less and Do More is out there so individuals like myself who often get overwhelmed with the ongoings of life can receive a helping hand. Just listen to the video and you will see how not only young but how friendly, eager and wonderful advice that he can offer.

Quick Tip: How to Start Meetings On Time
There's nothing that's more of a time suck than waiting for people to show up to a meeting. You say, "The meeting will start promptly at 2pm," and people think they can be a few minutes late. After all, they aren't the one sitting in a conference room twiddling their thumbs waiting; you are.

Instead, schedule your meetings for odd times: 2:05pm, 11:13am. People remember the meeting time and they're there on time. I have no idea why it works, but I'll go check out some scientific journals and see what I can figure out. Meet you back here in 9 minutes, exactly.
