Easy Baked Beans Casserole



8 slices bacon, diced
1/4 cup minced onion
2 cans (16 ounces each) baked beans
1/2 cup ketchup
1/4 cup dark corn syrup or brown sugar
2 teaspoons dry mustard

  1. Heat the oven to 350 F. 
  2. In a large skillet over medium heat, cook the bacon until almost crisp; add the onion to drippings and continue to cook until tender.
  3. Add the beans, ketchup, corn syrup or brown sugar, and ground mustard; mix well.
  4. If ​the skillet is not oven-safe, transfer the mixture to a greased baking dish.
  5. Cover and bake in the preheated oven for 30 minutes

Make Chocolates With Your Valentine and Spice It Up

With Valentines day just a few days away our minds begin to trail to how to make it perfect for the one we love. Chocolates would be a nice touch and fairly easy gift as chocolates are available in many different places. What would be a better gift than chocolate?? Spending time with the one you love in the kitchen making chocolates.

Chocolate bark is a great choice to make with your valentine. There are a variety of chocolates that can be used from white , dark, milk, or maybe you want to use a combination of all of them. Simply by using toppings and food coloring you can personalize the bark in a festive creative style.




This almond bark mix adds a little spice by using Chile or chipotle powder.

12 ounces dark chocolate wafers, about 2 cups
1 ½ teaspoons chipotle chile powder
6 ounces white melting chocolate wafers, about 1 cup
12 ounces pink melting chocolate wafers, about 2 cups
½ cup chopped almonds
flaked sea salt for sprinkling

Line an 8 X 8 baking pan with parchment paper. I use 2 8 X 10 inch pieces and criss cross them across the bottom.
Place dark chocolate wafers in a heat proof bowl and place on top of a small saucepan filled with a few inches of water, but don’t let water touch bottom of bowl. Bring to a boil and melt the chocolate, stirring often. Add the chipotle chile powder and mix into the melted chocolate. Pour into the prepared pan, spreading the chocolate to the edges and gently tap the pan to even out the chocolate. Place in the refrigerator to set, about an 20 minutes.
Melt the white chocolate wafers in another heat proof bowl and the pink chocolate wafers in a different heat proof bowl using the same method as above.
When chocolate is melted, remove the pan from the refrigerator and pour ¾ of the pink chocolate over the dark chocolate, then drizzle the white chocolate over the pink chocolate, leaving some of the pink exposed. Top with chopped almonds and use a butter knife to swirl the two chocolates together. Top with flaked sea salt and sprinkle with extra chili powder if desired. Refrigerate until hardened, about 20 minutes. Break or cut into pieces. Store chocolate in an airtight container in a cool spot or in the refrigerator.

Have a Pizza Bagel Today



February 9th is National Pizza Day. Every year this special date is observed. What is your favorite pizza?? Do you like it as thin crust, Chicago-style, deep dish or maybe its a combination. It seems in America we all have our own choice. Did you know:

Pepperoni is the most popular pizza at 36% all pizza pies ordered Over 3 billion pizzas are sold in USA each year. That's not to mention the 1 billion frozen pizzas


Of all US restaurants 17% are pizzerias. (I personally think there must have been more when I was a kid) The first pizzeria to open was in Naples Italy in 1738 The first pizzeria in the United States was Gennaro Lombardi which opened in 1895 in New York City.

Each year Americas consume on average 23 lbs. of pizza per person each year.




Today is also bagel day. Bagels are in the bread family but unlike many bagels are boiled then baked. Boiling helps create a soft inside while keeping a crisp outside. Bagels originated in Poland during the early 17th century. Bagels are now a billion dollar seller in the United States. With a great variety of flavors and varieties bagels have became very popular in the USA


Pizza Bagels

bagels
tomato sauce
shredded mozzarella cheese
desired toppings
Heat oven to 350° F. Place bagels on a lightly greased baking sheet, cut side up. Spread a thin layer of tomato sauce over bagels, then top with cheese and desired toppings.
Bake for 8-10 minutes, or until heated through. Broil for 2-3 minutes, or until cheese is spotty brown.


Grapefruit the wonder Fruit



Grapefruits were created during the 18th century. Mix of a pomelo and an orange the name of this fruit was due to the fruit growing in clusters like grapes.








Shades of grapefruit vary from white to yellow to pink or red. Taste is also a varying feature with some being more acidic, bitter , sweeter or more sugary than others. 

Grapefruits are great for healthy skin as well as help fight against many diseases and conditions. Grapefruit pulp , juices and peels all provide nutritional benefits as well including helping with blood pressure and heart health.  Grapefruit may also help with weight loss along with a healthy diet. Grapefruit has been at the root of many diets. Grapefruit is nutritious and also has some mysterious fat burning properties. Eating 1/2 grapefruit or a glass of grapefruit juice before meals may help fill you up. Therefore the thought is you will eat fewer calories at meals and thus lose weight. 
Store your grapefruit in a cool dry place. Storage place should be away from sunlight. When choosing grapefruits try to choose the ones that have reached their peak ripeness.

Toothache Type of Day


You know the feeling, the one where your head pounds, your gums throb, and your mouth is sore and tender. It's a toothache most likely a dental cavity due to tooth decay or it may be due to gum disease or accident. Its time to head to the dentist and get there soon. What?? can't see doctor today?? Now what do you do:

Saltwater rinse is one thing you can do until you can get to dentist. Swish warm, salty water around in your mouth. A simple mix of 1/2 teaspoon table salt in 8 ounces of water will help you out. Remember do not swallow. In addition to rinsing floss around your sore tooth to remove any bits of food that may be stuck.



Dentists suggest acetaminophen for children to take for toothache pain. Adults can choose from over the counter medicines like Ibuprofen, acetaminophen or aspirin. However, swallow the aspirin and do not put aspirin on tooth or gums. Many believe that putting the aspirin on the tooth or gum will help but it does not work according to dentist and could be more harmful.



Cold compresses can help when ones face is swollen. Simply place an ice pack on your cheek. The pain may ease and swelling may go down. If your tooth has an abscess or pus in the root of your tooth it may be swollen as well. Fever and red gums means you should go to doctor or dentist at once

clove oil and garlic are a couple of natural remedies to help reduce tooth ache. The oils in the two is very common to that in tooth gels that are meant to help numb pain. Remember neither these home remedies or the gel are meant to last more than a couple of days

American Story of Chocolate

February 9th Hershey made news!!!!

The parents of Milton Hershey were Mennonites from Lancaster County Pennsylvania. Milton's father struggled with the skills of being a businessman all though he was very inquisitive and smart. Milton attended formal schooling but because the family moved so often he attended 7 schools in 8 years. The family worked in the confectionery business and before hitting off in the chocolate they had tried other candy making traits. 

Milton tried the chocolate field after being successful at producing caramels. Prior to his attempt at chocolate the Swiss had perfected milk chocolate. Hershey would protect his own formula for making milk chocolate to do so it would take much experimentation. (I can imagine that this was tasty experiments)

February 9th 1894 Hershey Chocolate Company was found. The founding of the company meant that many would be able to buy delicious chocolate. Hershey would sale the chocolate at newsstands, grocery stores,  and vending stands. 
In 1900 the famous Hershey chocolate bar was introduced. Following a few later in 1907 the Hershey kiss would be available. Following closely behind the chocolate bar with almonds. Years to come would see an entire town develop around Hershey, an amusement park and a school for underprivileged children. 
Hershey continues to be the largest producer of quality chocolate in North America.

Children's Dental Health Month



February is the month that American Dental Association sponsor National Children's Dental Health Month. It is a time to raise awareness about the importance of children's dental health. Childhood is the perfect time to develop good dental hygiene habits. Regular dental visits help children get a good start on lifetime of healthy teeth and gums.

Dentist, hygienists, health care providers, and educators come together to promote the benefits of good oral health to children, caregivers, teachers and others. It is important to protect our children teeth when they are unable to do so. Childhood tooth decay is 5 times more common than asthma and 7 times more common than hay fever. We all know a child with asthma or hay fever so imagine how many children we may know that have bad teeth.



Were you aware that gum disease is contagious?? Parents can transfer the bacteria through saliva to children that they share a spoon with. This often leads to the hours of school that are lost each year due to dental issues. The CDC states more than 50 % tooth decay goes untreated in low income children



Tips for Ensuring Our Children Teeth are Cared for

Brush for two minutes, 2 times per day…with our kids.
Show them how to clean between teeth…FLOSS!
Limit sugary snacks & drinks between meals, eat healthy.
See the dentist regularly for family checkups, and ask them about sealants & fluoride.
Establish good dental hygiene habits early. When your child is 12 months old, you can begin using toothpaste when brushing his or her teeth.
When the gaps between children’s teeth close, it’s important to start flossing.
Serve as a good role model by practicing good dental hygiene habits ourselves.
Check our child’s mouth for the signs of periodontal disease, including bleeding gums, swollen and bright red gums, gums that are receding away from the teeth and bad breath.

Boy Scouts of America and Dutch Oven Monkey Bread



One of the largest scouting organizations in the United States is the Boy Scouts of America. It is also one of the largest youth organizations in the U.S. There are more than 2 million youth participants and another 1 million adult volunteers currently. The Boy Scouts of America was  founded in 1910. As part of the international Scout Movement there has been more than 110 million Americans that have participated since the beginning.



The goal of the Boy Scouts of America is to train youth in responsible citizenship, help develop character and self reliance. Outdoor activities, educational programs, and for older boy scouts career oriented programs through community organizations. For younger scouts values of trustworthiness, good citizenship and out door skills such as camping, aquatics, and hiking help strengthen the boys. The goals of boy scouts include:

The colors of the cub scouts is blue and gold. The blue stands for truth and spirituality, steadfast loyalty and the sky above. The gold stands for thee warm sunlight, good cheer and happiness. Today, February 8th is the birthday of the boy scouts of America and on February 10th, our local boy scouts will celebrate with a blue and gold banquet.

My grandson is in his first year of scouts. Boys ages 7 to 11 can begin scouts at the first level. Boys 11 to 18 is the second group. Young women having completed 8th grade through the age of 21 can become involved in boy scouts as well. Girls have the opportunity to join cub scouts in 2018 and in 2019 older girls can earn the rank of Eagle Scout.




1/2 stick butter
2 rolls of Pillsbury biscuits
1/4 cup sugar
1/4 cup brown sugar
2 Tbsp cinnamon
Notes:
dessert or breakfast

Set dutch oven over a couple coals to warm up, then melt the butter in the dutch oven.
Tear each biscuit into quarters.
Mix sugar, brown sugar, and cinnamon in plastic bag.
Drop each quarter biscuit into bag and shake to coat well.
Place biscuits in dutch oven.
Stir all the biscuit pieces once to cover in butter, then arrange them into a single layer.
Bake at 350 degrees for 30 minutes.
Serves 6 to 8.

May want to line oven with foil to catch melted sugar.

All dutch oven recipes use a 12-inch dutch oven, unless specified. If you have a 10-inch dutch oven, use about 2/3 to 3/4 of the ingredient amounts but keep the temperature and time about the same.
If no temperature is listed, use 350 degrees.

A Presidents Birthday


Another Birthday wish today goes to President Ronald Reagan. Ronald Wilson Reagan was born in Tampico Illinois on February 6, 1911. If you are a history buff or you simply lived what is now considered what is not considered history then you should know that Ronald Reagan was the 40th president of the United States. Between the years 1981 to 1989 Reagan served as president and was known as the Great Communicator.

Prior to Ronald Reagan's election those elected to office of President had served as lawyers and soldiers. Reagan himself was an actor. He started life out in Illinois, serving as a radio sports announcer in the midwest. His trip through Hollywood traveled through acting in feature films in the 1930s. Reagan did serve in World War II as lieutenant in the Army Air Corps where he appeared in training and propaganda films. He also presided as president Screen Actor's Guild from 1947 to 1952.



Ronald Reagan joined the republican political party in 1960s. Serving two terms as governor of California before entering the presidential race in 1976. Reagan would lose to Gerald Ford in the first presidential race but in 1980 he would run again against Jimmy Carter and win In the first few weeks after being elected president Reagan would be shot but bounce back.

Ronald Reagan helped with freeing American captive in Iran during Carter's term and for resurrecting a no-nonsense image of Americans strength abroad. During Reagan's reign the military spending and bold anti communist rhetoric contributed to collapse of the Soviet Union. Reagan gained a personal friendship with Russian leader Mikhail Gorbachev. Reagan would serve two terms the second of which would be scarred by scandal. But through it all Ronnie and Nancy Reagan would standout for traditional American values.

In 2004, Ronald Reagan died at age 93 after a long struggle with Alzheimer’s disease.

Breakfast Muffins



3-4 pieces whole wheat bread, torn into small pieces (enough to fill muffin tins almost to top)
3-4 slices deli ham (look for preservative-free)
1 cup shredded cheddar cheese
8 eggs
1 cup milk
2 teaspoons ground mustard
1/2 teaspoon ground pepper (or more or less to taste)
dried Parsley

Preheat oven to 400 degrees F. Grease muffins tins well.
Drop bread pieces evenly in muffin tins until they come about 2/3 of the way up the tin.
Sprinkle ham pieces evenly in each tin.
Sprinkle cheese evenly in each tin.
Whisk together eggs, milk, ground mustard, and pepper.
Pour egg mixture evenly in each muffin tin.
Sprinkle a little dried Parsley on the top of each one.
Bake for 15-18 minutes or until golden brown on top and cooked through the middle.

Freezer Meal Instructions:
To Freeze: Bake according to instructions and fully cool. Place in a single layer in a freezer container or bag. Seal well, squeezing out excess air, and freeze.
To Prepare: Wrap a muffin in a moist paper towel and microwave in 30 seconds increments until heated through. Or thaw in the refrigerator and warm in the microwave.

Babe Ruth Birthday



Today I would love to wish a great hero of baseball a Happy Birthday. This Man played many many years ago. George Herman "Babe" Ruth Jr. played 22 seasons, from 1914 to 1935. Ruth had nicknames such as "The Bambino" and "the Sultan of Swat". Ruth played pitcher for Boston Red Sox but his true feat was when he played a slugging outfielder for the New York Yankees. 



Babe Ruth won many MLB batting and some pitching records. He had a total of 714 career home runs, 2,213 runs batted in, and had a .690 slugging percentage which still stands today. Ruth would be voted into the Baseball Hall of Fame and become one of the first five members. 



Babe Ruth started life as George Herman Ruth Jr. and at seven years old was sent to a reformatory known as St. Mary's Industrial School for Boys. While at the school Ruth would learn life lessons as well as gain baseball skills. He would enter into minor league baseball for the Baltimore Orioles in 1914 but 2 years later would be sold to Red Sox. Ruth would get a reputation of the ability to not only pitch but hit long home runs. These feats seem nearly common now but in the old days they were qualities that helped him stand out. 



The Red Sox would sell Ruth to the Yankees and the "Curse of the Bambino" a 86 year championship drought would take place. Playing for the Yankees Ruth would help earn seven American League Championships and 4 world series. In many Ways Ruth helped make baseball the popular sport it is today. Not only was he an awesome player with legendary power but also had a charismatic personality. 



Babe Ruth would pass of cancer in 1948.

Happy Birthday To A Great Baseball Player ==== Hank Aaron

February 5, 1934 a hero in the game of baseball was born. Nicknamed the "hammer" or "hammerin' Hank" Henry Louis Aaron was born. Aaron was a player for the American Major League Baseball. Hank played right fielder and in later life worked as the senior vice president of the Atlanta Braves. It was the Atlanta Braves team that Hank Aaron had spent 21 seasons playing ball for the national league. The years between 1954 through 1976 were some great years of ball. Hank held the MLB record for career home runs for 33 years and continues to hold several MLB offensive records. Between the years of 1955 to 1973 Aaron hit at least 24 homeruns and often played more. 



Early life for Hank Aaron saw him raised in and around Mobile, Alabama. Aaron grew up in a rather large family with seven siblings. One of his brothers Tommie Aaron played in the MLB as well during his lifetime. Aaron started his game playing in the Negro American League in minor league ball. Aaron was among the last negro league baseball players.

While right field was where Hank Aaron felt at home in the game he also played other positions in both the infield and outfield. His last two seasons saw him play primarily as designated hitter. All together Hank Aaron played 20 seasons Aaron won the golden glove 3 years, held the Most Valuable Player position In May 1958 and June 1967 he earned the Player of the Month. Aaron batted in (RBI) a total of 2,297 runs and holds the record for most career runs batted in. He is listed in the top 5 for career hits and runs. 



After retirement Hank Aarons stay involved with the game. He found work in the front office with Atlanta Braves. In 1982 he was inducted into the National Baseball Hall of Fame in 1982. In 1999 the MLB introduced the Hank Aaron Award to recognize top players. In 2002 Aaron received the Presidential Medal of Freedom.

Make It Better with Pie



Pie is something that many of us are very familiar with. If you do not know what a pie is, it is a baked dish normally made of pastry dough that encases or covers a filling of various sweet or savoury ingredients.


A filled pie is one that has a single crust normally on the bottom. This type of pie is made in a baking dish. The filling is placed on top of the pastry. The top of the pie is left open. Bavarian Cream Pie's are contained in this category.



A top crust pie is one where the filling is in the bottom of the dish and then the pie is covered with pastry or other covering before baking. One example of this pie is a savory potato pie. 



A two crust pie is filled completely with filling of choice. A pastry shell is on the bottom and top of the pie.

Shortcrust pie is a pastry used for pie crust. It is not the only type of crust that can be used other than traditional pastry. Baking powder biscuits, mashed potatoes and crumbs are just a few other topping suggestions.

Pies came about with the need to take along an easy to store food source that would last along the long journeys whether on land or sea. Before pies animals would be taken on the journeys but this was not space smart. Hunter foraging was another attempt at being able to eat nutritious food while on the journey but it did not work out as well either.

There were many inventions that made pies possible. These including the baking process being introduced as well as the creation of flour. Early pies were flat and round. However using a crust of ground oats, wheat, rye or barley mixed with honey led to an early type of pastry. Greeks are believed to have originated a pie pastry. Romans used a plain pastry of flour, oil and water to cover meats and birds that were baked. The pastry was not intended to be eaten.

Pies were used by travelers and workers in the cold northern European countries. Variations of meats, cereal crop were used. In medieval times cooks did not always have access to an oven so pies were cooked in an open fire. In England "Pyes" were baked in the 12th century. During the 14th century pie birds were used at the request of King Henry VI. The early American pies made from pilgram recipes were primarily berries and fruits. The Native Americans helped them find the ingredients. Pies allowed ingredients to be stretched America seems to have a love for pies. Fruit pies are often served with ice cream. North American style pie is often served a la mode. Apple choice is the traditional choice but any pie with sweet fillings may be served in this manner.
