Nonstick cooking spray
1 1/3 cups finely crushed zwieback or graham crackers
2 tablespoons packed brown sugar
1 egg white, lightly beaten
2 tablespoons butter, melted
3/4 cup Cascadian Farm® strawberry fruit spread
2 containers (6 oz) Yoplait® honey vanilla Greek yogurt
6 cups fresh raspberries, blackberries, blueberries, and/or halved strawberries
Fresh mint sprigs and/or Lemon Cream* (optional)
1. Preheat oven to 350°F. Coat a 9-inch pie plate with nonstick cooking spray. In a medium bowl, combine finely crushed zwieback and brown sugar. Add egg white and melted butter; stir until well mixed. Press mixture evenly onto bottom and up side of prepared pie plate. Bake for 10 to 12 minutes or until edge is browned. Cool completely on a wire rack.
2. Meanwhile, for glaze, in a small saucepan, melt fruit spread over medium-low heat. Transfer to a large bowl; cool slightly.
3. Spread yogurt into crust-lined pie plate. In a large bowl, gently toss berries and fruit spread. Spoon over yogurt. Cover and chill for 3 to 6 hours before serving. If desired, garnish with fresh mint and/or serve with Lemon Cream.

Key Lime Cake
- 1 package (18.25 oz) lemon cake mix
- 1 1/3 cups vegetable oil
- 4 eggs
- 1 package (3 oz) lime Jell-O
- 3/4 cup orange juice
green food coloring (optional)
FROSTING:
- 1/2 cup butter or margarine (1 stick), softened
- 1 package cream cheese (8 oz), softened
- 3 tablespoons lime juice
- 4 cups powdered sugar
green food coloring (optional)
Container: 9x13 cake pan, 2 medium mixing bowls, hand mixer
Prep Time: 15 minutes
Cook Time: 30 minutes
Combine all ingredients in mixing bowl. Add 3 drops green food coloring if you want a more intense green color.
Bake according to directions on box (25-35 min.). Cool.
Frost with frosting and refrigerate.
FROSTING:
Beat butter and cream cheese together. Add juice and powdered sugar. Blend with mixer until smooth.

Black Eyed Peas Soup and Chicken Noodle Soup recipes
2 1/2 pounds fresh black-eyed or pink-eyed peas, shelled (3 cups)*
3 cups water
2 large beef bouillon cubes
1 medium onion, chopped
1/2 (16-ounce) package kielbasa, sliced, browned, and drained (optional)
Bring first 4 ingredients and, if desired, sausage to a boil in a saucepan. Reduce heat; simmer 40 minutes or until tender. Serve with Sweet Onion Relish.
*1 (16-ounce) package frozen black-eyed peas may be substituted. Reduce cooking time to 30 minutes or until tender.

8 ounce(s) 8 ounces dried kluski egg noodles, (about 2 2⁄3 cups)
2 tablespoon(s) chopped flat-leaf parsley
Bring chicken and water to a boil in a 6- to 8-quart stockpot. Skim off and discard foam from surface of water; add broth and remaining stock ingredients. Bring to a second boil, reduce heat to low, and simmer, partially covered, until chicken is tender, about 50 minutes. Remove chicken to a cutting board. When cool enough to handle, remove skin and bones; discard. Shred meat; set aside. Strain broth through cheesecloth-lined sieve into clean pot; press solids to extract liquid. Stir baby carrots, celery, parsnip, salt, and pepper into broth and bring to a boil; reduce heat to low, cover pot, and simmer 6 minutes. Stir in noodles; continue to simmer 4 minutes. Stir in chicken and parsley. Remove from heat and let soup stand 10 minutes, or until noodles are just tender.

thick-cut potato and vegetable chips, for serving
Melt the butter in a large skillet over medium-low heat. Add the onions and ½ teaspoon salt and cook, stirring occasionally, until deep golden brown, 30 to 35 minutes. Remove from heat and let cool. In a medium bowl, mix together the onions, cream cheese, sour cream, chives, ¼ teaspoon salt, and ⅛ teaspoon pepper. Serve with the chips.

HEAT oven to 350ºF. LINE 13x9-inch pan with foil, with ends of foil extending over sides. Mix crumbs, 1/2 cup nuts, 1/4 cup sugar and butter; press onto bottom of pan. Bake 10 min. MEANWHILE, beat cream cheese, remaining sugar and vanilla with mixer until well blended. Add sour cream; mix well. Add eggs, 1 at a time, beating after each just until blended. Pour over crust. BAKE 35 min. or until center is almost set; cool completely. Refrigerate 4 hours. Top with remaining nuts and caramel topping. Use foil handles to lift cheesecake from pan before cutting to serve

Impress your New Year Eve guest with this easy to make Lazy Lasagna Bolongnese
1 onion (1/2 lb.), peeled and chopped
2 tablespoons olive oil
1 cup finely chopped parsley
1 pound ground beef chuck
1/2 pound mild Italian sausages, casings removed
1/2 teaspoon dried thyme
2 tablespoons balsamic vinegar
1 can (6 oz.) tomato paste
1 can (8 oz.) tomato sauce
2 cups fat-skimmed chicken broth
Béchamel sauce
1 box (9 oz.) oven-ready dried lasagna
About 1 1/4 cups shredded parmesan cheese (about 5 oz.)
1/4 teaspoon ground nutmeg
Rinse mushrooms; trim off and discard discolored stem ends. Thinly slice mushrooms. In a 5- to 6-quart pan, combine mushrooms, onion, and olive oil. Cover and stir often over medium-high heat until mushrooms are juicy, about 4 minutes. Uncover, add parsley, and stir often over high heat until vegetables are lightly browned, 5 to 8 minutes. Pour mixture into a bowl. Add beef and sausages to pan. Over high heat, crumble meats with a spoon and stir often until well browned, 10 to 15 minutes; discard fat. Add mushroom mixture, thyme, vinegar, tomato paste, tomato sauce, and broth; stir until boiling. Reduce heat and simmer, stirring often, until most of the liquid has evaporated, about 30 minutes. Spoon 1 cup béchamel sauce into a shallow 9- by 13-inch casserole (3 qt.) and spread evenly over bottom. Arrange 1/4 of the pasta evenly over béchamel sauce to cover as much of the casserole bottom as possible. Spoon 1/3 of the meat sauce over pasta in casserole and spread level. Drizzle meat sauce with about 1/2 cup béchamel and sprinkle with about 1/4 cup cheese. Cover cheese with another 1/4 of the pasta and top with another 1/3 of the meat sauce, 1/2 cup béchamel, and 1/4 cup cheese. Arrange a third layer of pasta over cheese and cover with remaining meat sauce, 1/2 cup béchamel, and 1/4 cup cheese. 1 package dried rice noodles
1 orange
1 tangerine
1 tbsp sesame oil
1 tbsp sweet chili sauce
2 tsp honey
½ tsp salt
In large pot, boil 6 cups water. Add noodles and cook until tender. While they cook, peel citrus fruits and cut into wedges. Put in large bowl. Drain the noodles and rinse with cold water, then combine in bowl with fruit. In medium bowl, whisk sesame oil, sweet chili sauce, honey, and salt until mixed. Taste-test the sauce (it’ll be strong, but it will mellow out in the noodles) and adjust ingredients to taste. Drizzle over noodles and fruit and serve.
Creamy Grape Salad
Sure, you could just stick 12 grapes on a stick and call it lucky. But how fun is that? Whip up this creamy and fresh dessert instead. Each grape represents one month of the year—some grapes (and months) are sour, others are sweet. Grape growers in Spain started the tradition in 1909, and would eat 12 grapes before midnight. The tradition spread to Portugal, Cuba, Mexico and Peru. Make grapes your lucky fruit of the night!
8 ounces of low-fat cream cheese, softened at room temperature

Spicy Maple Cashew Popcorn Snack
This delicious snack is one that would make a great indoor out of the cold weather sit and watch T.V. sort of snack. The delicious popcorn mixed in with a bit of spice and maple with cashews makes the perfect delight for the family to share. I can remember many nights when my mom would make up a popcorn snack and we would sit snuggled on the couch under covers as we enjoyed a delicious snack of popcorn together.
1/4 cup unpopped popcorn kernels (about 6 cups popped)
1/4 cup dry-roasted cashews
1/3 cup sugar
1/3 cup maple syrup
1 tablespoon butter
1/2 teaspoon salt
1/4 teaspoon ground red pepper
Heat canola oil in a medium heavy saucepan over medium-high heat. While saucepan heats, line a jelly-roll pan with parchment paper; set prepared pan aside. Add popcorn to oil in saucepan; cover and cook 2 minutes or until kernels begin to pop, shaking pan frequently. Continue cooking 2 minutes, shaking pan constantly. When popping slows down, remove pan from heat. Let stand 1 minute or until all popping stops. Stir in cashews. Combine sugar and remaining ingredients in a small saucepan; bring to a boil. Cook 1 minute, stirring constantly. Remove from heat; cool 1 minute. Pour hot syrup mixture over popcorn mixture; toss well to coat. Immediately spread popcorn mixture out onto prepared jelly-roll pan. Cool 3 minutes.
Make Your Own Fruit and Caramel Dippers
My granddaughter is hooked on McDonalds Apple Dippers and when riding in the car these are easy for her mommy to pick up for a quick snacke but at home here is a quick recipe that they often use.
8 oz. cream cheese
2 tbsp. packed dark brown sugar
8 oz. cream cheese
2 tbsp. packed dark brown sugar
Beat cream cheese and brown sugar until fluffy
Turtle Bars
2 cups all-purpose flour
1/2 cup confectioners' sugar
1 cup unsalted butter
1 14-ounce can sweetened condensed milk
1 large egg, beaten
1 teaspoon pure vanilla extract
1 cup pecans, coarsely chopped
3/4 cup semisweet chocolate chips
1 cup toffee-and-chocolate baking pieces (such as Heath or Skör)
Heat oven to 350° F. Combine the flour, confectioners' sugar, and butter in the bowl of a food processor. Pulse until a crumbly dough is formed. Press the dough firmly into a greased 9-by-13-inch pan. Bake until just golden, about 13 minutes. Whisk together the condensed milk, egg, and vanilla. Pour the filling over the baked crust. Sprinkle the pecans, chocolate chips, and toffee pieces evenly over the filling. Bake until the filling is set, the edges are golden brown, and the toffee is melted, about 25 minutes. Cool completely in the refrigerator, about 2 hours. Cut into 32 bars.

2 large egg whites
1 large egg

To prepare the filling, place 6 candies, fat-free cream cheese and the next 6 ingredients (fat-free cream cheese through sour cream) in a food processor; process until smooth. Stir in minichips and peppermint extract. Divide the filling evenly among prepared crusts. Bake at 325° for 12 minutes or until done. Cool in pans on a wire rack for 30 minutes. Remove mini cheesecakes from pans, and cool completely. Top each mini cheesecake with 1 teaspoon whipped topping. Crush the remaining 6 candies; sprinkle the crushed candies and chocolate sprinkles over the cheesecakes.

Flourless Peanut Butter Chocolate Chips
1 cup creamy peanut butter
3/4 cup sugar
1 large egg
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate morsels
Parchment paper
Preheat oven to 350°. Stir together peanut butter and next 4 ingredients in a medium bowl until well blended. Stir in chocolate morsels. Drop dough by rounded tablespoonfuls 2 inches apart onto parchment paper-lined baking sheets. Bake at 350° for 12 to 14 minutes or until puffed and lightly browned. Cool on baking sheets on a wire rack 5 minutes. Transfer to wire rack, and let cool 15 minutes.

Breakfast Casserole
I love Breakfast Casseroles in the winter time. They are so super easy to put together and bake the next morning.
1 lb. bacon
1 tbsp. butter
2 onions, chopped
2 cups fresh sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 tsp. salt
1/4 tsp. garlic salt
1/2 tsp. ground black pepper
4 eggs
1 1/2 cups milk
1 pinch dried parsley
1 cup shredded Cheddar cheese
Preheat oven to 400 degrees. Grease a 9x13 in. casserole dish. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside. In a separate skillet, melt the butter and fry onions and mushrooms until tender. Place potatoes in bottom of prepared dish. Sprinkle with salt, garlic salt, and pepper. Top with bacon, then onions and mushrooms. In a large bowl, beat eggs with milk and parsley. Pour over casserole. Top with grated cheese. Cover and refrigerate overnight. Bake in preheated oven for 1 hour or until set. If preparing and baking the same day, cook for 45 minutes

This will be a busy week for us. It is the week of the youth encounter in Springfield so for 3 days we will be gone there leaving tommorow about noon. While we are gone oldest son and hubby will munch on leftovers Then when we return the plan is as follows

Peppermint Meltaways
1 cup butter, softened
1/2 cup confectioners' sugar
1/2 teaspoon peppermint extract
1-1/4 cups all-purpose flour
1/2 cup cornstarch
FROSTING:
2 tablespoons butter, softened
1-1/2 cups confectioners' sugar
2 tablespoons milk
1/4 teaspoon peppermint extract
2 to 3 drops red food coloring, optional
1/2 cup crushed peppermint candies
Directions
In a small bowl, cream butter and confectioners' sugar until light and fluffy. Beat in extract. Combine flour and cornstarch; gradually add to creamed mixture and mix well.
Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until bottoms are lightly browned. Remove to wire racks to cool.
In a small bowl, beat butter until fluffy. Add the confectioners’ sugar, milk, extract and food coloring if desired; beat until smooth. Spread over cooled cookies; sprinkle with crushed candies. Store in an airtight container. Yield: 3-1/2 dozen.

Use for Leftover Ham
If you are anything like me then you have ham leftover from the Holiday dinner. If you do or if you are looking for a simple supper then try this Ham and Swiss Loaded Potato from my recipes
4 baking potatoes (about 1 1/2 pounds)
1 cup diced 33%-less-sodium ham (about 6 ounces)
1 cup (4 ounces) shredded Swiss cheese, divided
1/2 cup thinly sliced green onions, divided
1/2 cup fat-free sour cream
1/4 teaspoon freshly ground black pepper
Preparation
Pierce potatoes with a fork; arrange in a circle on paper towels in microwave oven. Microwave at high 16 minutes or until done, rearranging potatoes after 8 minutes. Let stand 5 minutes.
Preheat broiler.
Cut each potato in half lengthwise; scoop out pulp, leaving a 1/4-inch-thick shell. Combine potato pulp, ham, 1/2 cup cheese, 1/3 cup green onions, sour cream, and pepper.
Spoon the potato mixture into shells. Combine 1/2 cup cheese and remaining green onions, and sprinkle over potatoes. Place potatoes on a baking sheet; broil 4 minutes or until golden.

I love chex mix snack mixes because they make alot and are also economical many offer the sweet and salty in a snackmix together. This recipe I found on Eat At Home Cooks is a great one that you may like to try as well
cinnamon graham crackers, broken into bite-size pieces (I used two of the 3 packs that came in the box)
1 large box of rice chex cereal
a generous cup of pretzels
1 cup pecans
2/3 cup butter
1/2 cup honey
1 bag butterscotch chips
Combine the crackers, pretzels, nuts and cereal in a large bowl. In a microwave safe bowl, melt the butter and honey together. Drizzle this over the mix and stir to combine. Put it out onto two large cookie sheets that have been sprayed with cooking spray. Bake for 12-15 minutes at 350 degrees. Stir several times during the cooking. (Warning – cereal dropped on the oven burner stinks)
Cool the mix completely before stirring in the butterscotch chips. Store in an air tight container.
