Roast Beef and Yorkshire Pudding



about 1.5kg (3lb) roasting joint of beef – top rump, topside or silverside
2 carrots, chopped into large pieces
1/2 celery head, chopped into large pieces
2 onions, chopped into large pieces
1 rosemary sprig

For the Yorkshire puddings
150ml (1/4pt) sunflower oil
100g (3 1/2oz) plain flour
3 medium eggs, beaten
150ml (1/4pt) whole milk

Remove the joint of beef from the fridge a couple of hours before you want to cook to allow it to come up to room temperature. Preheat the oven to gas 8, 230°C, fan 210°C. Put the carrots, celery and onions in the base of a large baking tray. Top with the rosemary sprig. Weigh the joint to calculate approximate cooking times. If it isn’t already, tie the joint up with butcher’s string, so that it is a fairly consistent thickness. Rub the joint in plenty of salt and pepper and sit on top of the vegetables.
Roast the beef in the oven for about 20 minutes per 450g (for medium rare), making sure you reduce the oven temperature to gas 6, 200°C, fan 180°C after the first 20 minutes. Check the centre of the beef with a meat thermometer and when it reaches 52-55°C, remove from the oven and leave to rest under a sheet of kitchen foil and a tea towel for at least 30 minutes. (Aim for 60°C if you want the centre to be medium and 65°C for medium well. If you don’t have an meat thermometer then the approximate timings and weight calculations should work nicely for a joint that is the rarer side of medium/rare.)
Increase the oven temperature to its highest setting (gas 9, 240°C, fan 220°C). Pour enough sunflower oil into six holes of a muffin tin to fill each around a third of the way up. Sit the muffin tin inside a larger baking tray with enough of a lip to catch any spilling oil. Put the tray in the oven for 5 minutes or until the oil is shimmering. Sift the flour and 1 tsp salt into a clean bowl. Whisk in the eggs until you have a smooth paste, then gradually incorporate the milk. Pour the batter, through a sieve to remove any lumps, then pour into a jug to make pouring easier.
Half fill each of the six muffin holes with the batter and bake for 20 minutes, turning the oven temperature down to gas 4, 180°C, fan 160°C after the first 5 minutes. Do not be tempted to open the oven door before the cooking time is up. Transfer the cooked Yorkshire puddings, upside down, to a wire rack over some kitchen paper to catch any excess oil. Cut the butcher’s string from the rested beef joint and carve the beef at the table. Serve with the Yorkshire puddings, gravy and your vegetable sides of choice.

Deep Dish Biscuit Pizza Casserole #Recipe



2 (28 oz) cans plum tomatoes, drained
2 (16 oz) packages refrigerated biscuit dough
1 pound ground Italian sausage, cooked and drained of fat
1 (8 oz) package pepperoni slices
1 (8 oz) package low moisture mozzarella, thinly sliced
1 cup shredded parmesan
1 cup shredded Italian cheese blend
2 tablespoons Italian seasoning
Salt and pepper, to taste

Preheat oven to 375ยบ F and liberally grease casserole dish with nonstick spray.
Open biscuit dough. Roll out to create a pizza crust and place in baking dish (make sure it extends up the sides of dish).
Layer mozzarella slices evenly on top of crust, followed by pepperoni and sausage.
In a large bowl, crush the plum tomatoes with a fork, then stir in parmesan, Italian seasoning, salt, and pepper.
Spread tomato sauce evenly over pizza, then sprinkle with Italian cheese blend.
Bake for 1 hour, or until dough is cooked through and cheese is bubbly.
Serve hot and enjoy

Crockpot Christmas Crack



1 (16 oz) jar of salted peanuts
1 (16 oz) jar of unsalted peanuts (I subbed in unsalted cashews instead)
1 (12 oz) bag of semi-sweet chocolate chips
1 (12 0z) bag of milk chocolate chips
2 (10 oz) bags of peanut butter chips
2 (1 lb.) packages of white almond bark or vanilla candy coating

Put peanuts in the bottom of the crockpot and then add all of the chocolate on top. Turn the crockpot on low (covered) for 2 hours. Remove the lid and stir well. Cook for another 30 minutes and stir again. Drop by the spoonful onto waxed paper and allow to harden for an hour or more.

Wake Up.... You Are The Driver

The roads during this time of year are notoriously busy. With so many on the roads going here and there the roads can get a bit crazy. Some are good drivers, some are not so good and then there are those that need to be taking a nap rather than driving. Drowsy driving is a major issue on the roads. Adding to the struggles of driving in tough conditions the risk, danger and at times tragic results of drowsy driving can be overwhelming.



Drowsy driving takes place when a driver becomes sleepy or fatigued while driving. If the driver has not slept enough, has a sleep disorder, takes medication or is a shift worker. Being tired affects the ability of the driver to drive safely even if they do not fall asleep. Drowsy driving leads to:



  • drivers having less able to pay attention to the road
  • drivers have slower reaction time if the need to brake or steer suddenly
  • affects drivers ability to make good decisions
Facts about Driving Drowsy



Around 1 out of every 25 adult drivers ages 18 or older report having fallen asleep while driving in the past 30 days
The National Highway Traffic Safety Administration estimates that drowsy driving was responsible for 72,000 crashes, 44,000 injuries and 800 deaths



Drivers more likely to drive drowsy include:
  • drivers that do not get enough sleep
  • commercial drivers who operate vehicles such as tow trucks, tractor trailers and buses
  • Those that work the night shift or long shifts
  • untreated sleep disorders such as sleep apnea
  • drivers who take medications that make them sleepy 
While those are the largest categories of drivers who often drive drowsy we are all acceptable to the issue. Before getting in the car to take that drive be sure that you have had enough sleep and avoid taking any medications that may make you sleepy.

Scrapple Popular Dish With Pennsylvania Dutch

Have you ever heard the saying "Use the Whole Hog" With Scrapple that is just what they are striving to do. Made up of a mush of pork scraps and trimmings that are combined with cornmeal and wheat flour and spices. The mush is made up of left over meat after butchering that is not used or sold elsewhere. The mush is formed into a semi solid congealed loaf and slices of the scrapple and then pan fried.


Scrapple is best known as an American food of the Mid-Atlantic states of Delaware, Maryland, New Jersey, Pennsylvania, and Virginia. Scrapple is commonly referred to as ethnic food of the Pennsylvania Dutch, Mennonites and Amish. Scrapple can be found in supermarkets both fresh and frozen in different regions



It is suggested that the Europeans may have been the first to use scrapple. While it may have started there it quickly became a German dish that was known as panhas. The dish made use of locally available ingredients. It was brought to America by German colonists who settled near Philadelphia in the 17th and 18th centuries.

Originally scrapple was created to help rural immigrants to stretch food. Made up of the pigs head, brains, heart , liver, skin and other trimmings. The meat is boiled with the bones to gain a bit of extra flavor. When a good broth was achieved the bones were discarded. The meat was simmered with cornmeal, wheat or buckwheat flour, onions, and spices like sage and thyme. This mixture was formed into loaves and pan fried. A traditional breakfast dish served with apple butter, ketchup, mustard, honey or maple syrup. Served along side a mess of eggs and toast.

Italian Fig Cookies #Recipe


CUCIDATI (ITALIAN FIG COOKIES)




Dough
4 cups all-purpose flour
1½ tablespoons baking powder
¼ teaspoon salt
½ cup sugar
1 cup vegetable shortening
1 egg
1 tablespoon vanilla extract
½ cup milk
Filling
1 cup dried figs
1 cup dried dates, pitted
¾ cup raisins
½ cup walnuts, chopped or ground in food processor
½ teaspoon ground cinnamon
¼ cup honey
¼ cup orange marmalade
Icing
2 cups powdered sugar
1 teaspoon vanilla extract
4 tablespoons milk (approximately)
sprinkles

Sift flour, baking powder, and salt in a large mixing bowl. Whisk in the sugar and combine well.
Cut in the shortening with a fork or pastry blender and work the mixture until it looks like cornmeal.
In a separate bowl whisk together the egg, vanilla, and milk.
Add the egg mixture to the flour mixture and mix with an electric mixer for a full 3 minutes. Dough will be soft.
Remove the dough from the mixer and knead by hand for 5 minutes.
Divide the dough into 4 equal pieces, wrap each with plastic wrap, and refrigerate for at least 45 minutes.
To make the filling, grind figs, dates, and raisins in a food processor until coarse.
Place fig, date, and raisin mixture in a bowl. Add the remaining ingredients and mix well. Mixture will be thick. Set aside.
Preheat oven to 375° and line two cookie sheets with parchment paper.
Work with one piece of dough at a time, leaving the remaining pieces in the refrigerator until needed. On a floured surface roll the dough into a 12-inch square. Cut dough into 2×3-inch rectangles. Spoon about 1 teaspoon of filling into the middle of each rectangle. Carefully fold the short edges over to meet in the center and pinch to seal. Seal the sides as well.
Place each cookie, seam-side down, on a baking sheet, leaving 1-2 inches between each cookie.
Bake for 12 to 15 minutes, or until the cookies are golden in color.
Remove from oven and transfer to a wire rack to cool. Cool completely before icing.
For the icing, mix together the powdered sugar, vanilla, and enough milk to achieve the desired consistency. You’ll want the icing to be thick enough not to be runny, but still easily spreadable. Ice the tops of the cookies and decorate with sprinkles, if desired. Let the icing set completely before storing in an airtight container.

Pomegranate Christmas Cupcakes



3 1/2 cups all-purpose flour
* 6 tsp. baking powder
* 1 1/2 tsp. salt
* 2 1/2 cups sugar
* 1 cup butter, room temperature (2 sticks)
* 1 tsp. vanilla extract
* 1 tsp. almond extract
* 1 1/2 cups milk
* 9 egg whites

Icing
* 1/2 cup salted butter, softened (1 stick)
* 8 ozs. cream cheese (regular, room temperature)
* 1/2 tsp. vanilla extract
* 1/2 tsp. almond extract
* 3 cups confectioners’ sugar
* Pomegranate seeds, to garnish

Preheat oven to 350 degrees. Combine flour, baking powder and salt. Cream sugar, butter, vanilla and almond extracts, milk, and egg whites. Slowly add dry ingredients to wet ingredients until the batter is fully incorporated, making sure to scrape down your bowl for any leftover dry ingredients.
Line a standard 12 (1-cup) cupcake pan with cupcake liners and pour batter three-quarters full. Bake cupcakes for 17-20 minutes, or until a toothpick comes out clean.
Meanwhile, prepare icing: Cream butter and cream cheese with vanilla and almond extracts until well incorporated and smooth, making sure to whip out any lumps created from the butter or cheese. Slowly incorporate confectioners’ sugar, adding 1 cup of sugar at a time. (I like to use the medium-fast speed on my KitchenAid standing mixer so that all of the ingredients are incorporated smoothly and evenly.)
Remove cupcakes from oven and transfer to a rack, cooling completely. When cool, ice cupcakes and sprinkle with pomegranates seeds for a ruby red Christmas touch.

Gluten Free Christmas Bars #Recipe

Christmas is for everyone including those on special diets. These gluten free christmas bars are pretty little bites that taste great as well.

4 cups almond flour
¼ cup gluten-free oat flour (I used Bob’s Red Mill)
1 tsp baking powder
½ teaspoon salt
12 tablespoons butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract




Frosting:
6 tablespoons butter, softened
1 cup powdered erythritol OR powdered sugar
3 to 5 tablespoons heavy cream
½ teaspoon vanilla
Food colouring as desired


For the bars:
Preheat oven to 325F and line an 8 x 8 inch pan with parchment paper.
In a medium bowl, whisk together almond flour, oat flour, baking powder and salt. In a large bowl, beat butter and erythritol or sugar until creamy. Beat in the eggs and vanilla extract, and then beat in almond flour mixture until dough comes together.
Press dough firmly into prepared pan and smooth top with a flat-bottomed glass. Bake 30 minutes, until just golden brown around the edges and slightly more firm to the touch. Remove and let cool in pan.

For the Icing:
Beat together butter and powdered erythritol or sugar.
Add cream, 1 tablespoon at a time, until desired consistency is achieved. Stir in vanilla and food coloring.
Spread or pipe onto cooled bars.

Bacon Wrapped Meatloaf Stuffed Bell Peppers



3 large Bell peppers
2 pounds ground beef
3/4 cup Panko bread crumbs
1/2 cup finely chopped onion
1/4 cup sriracha ketchup
2 eggs , beaten
11/2 teaspoons salt
11/2 teaspoons ground black pepper
12 slices bacon

Preheat the oven to 375F.
Cut the peppers in half long-wise and remove seeds and membrane.
Set aside.
Mix the ground beef, panko, onion, ketchup, eggs, salt, and pepper together until it is well blended.
Pack an equal amount of the mixture in each Bell pepper half.
Wind bacon around the pepper and meatloaf, securing it with toothpicks.
Bake for 30 minutes or until the internal temperature reaches 155F and the bacon is crispy.
Remove from the oven and let stand 10 minutes before serving.

Finally, it is important to pinpoint that needs should not be confused with wants. For example, an iPad is not a need.  It is something children might want to have, but it is not an absolute need for their development.

Another important factor children and young people should bear in mind is that rights come with responsibilities.  As they move from childhood to adolescence to adulthood, depending on their country and cultural context, children have to assume certain responsibilities.

Mewwwy Chwistmas



This my friend is Tweety Bird wishing us a Mewwy Chwistmas. We wish him the same and to show you all just how much we love him we are going to share some great information with you all about our friend

Tweety is a yellow canary character featured in Looney Tunes and Merrie Melodies. He has also been known as Tweety pie and has appeared in more than 40 cartoons in the Looney Tunes Golden Age. HIs first appearance was in 1942 in a clip titled "A Tale of Two Kitties" Believe it or not the clip did not have Sylvester the Cat in it. Tweety and Sylvester did not meet up for another 5 years.



Tweeties head is larger than his body and in the early days matched his temper which was very short. Don't worry as time went on Tweety calmed down.

Pickle Rolls



1 pound thinly sliced ham
1 quart dill pickles, drained and blotted dry
3 packages of softened cream cheese

Take the cream cheese out of the refrigerator to soften up before making the roll ups.  Once the cream cheese has softened resume construction.
Drain the pickle juice and place pickles on a paper towel to blot them dry.  Layout a double layer of ham slices. Carefully spread the cream cheese onto the double layer.
Roll a pickle up tightly in the ham slices. Wrap into plastic wrap. Refrigerate at least 2 hours to overnight before serving.
To serve, cut each roll crosswise into 1 inch slices. Arrange cut side up on serving platter.

Warnings About Soda Pop

Have you ever opened up that can of soda pop and took a sip only to find the taste was not what you were expecting?? The taste of the soda may be due to it going bad. Yes, soda pop like most food and drinks can go bad. This is the reason that you should be sure to take a look at the date printed on the can that shares "Best if Used by Date".



Manufacture's estimate how long the product will stay at its peak quality. Soda that has remained unopened past this date will still be safe to consume for a bit of time if it has been stored properly and remains damage free. To ensure food borne illnesses it is still best to dispose of any food or drink that has passed the shelf life or show signs of spoiling. However, soda is just a bit different, how do you know when soda pop is no good.

  • can appears to be leaking or rusting it should be disposed of
  • dented or bulging cans should be tossed out
  • discoloration of the soda after being opened is a sign it has started to go bad
  • if the soda seems to have an odd flavor, appearance, or odor then get rid of it

Beware diet soda may go bad quicker than regular soda. Sweetener in the diet soda break down chemically in time and will change the taste of the soda.

Soda pop should be stored in a cool dry area. Soda has shelf life of 6-9 months after the sell by date. After that time it is best to dispose of .

The Sound of The Bagpipes

If you have ever heard them they offer a sound that is unforgettable. I love to hear the bagpipes as they are played but some that I know do not care so much for them. Bagpipes are woodwind instrument that uses enclosed reeds fed from a constant reservoir of air in the form of a bag. The Scottish Great Highland bagpipes have been played for more than a millennium. Large parts of Europe, northern Africa, and Western Asia have heard the sound of bagpipes for quite sometime.



Bagpipes are thought to have been present during pre-Roman era. Thru the years the bagpipes have continued to bring beautiful music. The expansion of the British Empire including the Highland regiments in the British military have been known to play the bagpipe. Bagpipers were trained to go to battle during the World War I and World War II. Today, many police and fire services in Scotland, Canada, Australia, New Zealand, Hong Kong, and the United States have adopted tradition of playing bagpipes.

Taking Care of Dry Skin

Does your face feel dry and brittle?? Most likely the winter weather has created a mess out of your skin There are a few things you can do.


Use water only to wash your face. This will help avoid using harsh cleaners. Dry skin on face will produce less oil than normal and using only water will help to prevent skin from flaking off. The use of harsh cleansers might only cause the oils produced to be washed off, thereby worsening the problem. So instead of using harsh cleansers or any kind of soap, wash your face with plain water only. Make sure to use warm water, not hot, as the latter can trigger further dryness and flaking.

Warm water and not hot should be used when washing face. It is not a good idea to use cleansers. Facial cleansers may have ingredients that cause dryness increasing the problem of dry skin. Sulfate, salicylic acid, or any form of alcohol should not be used. Likewise hot showers should not be taken.

Hot showers may strip off the natural oil barrier from your body. Natural oils are needed to help trap moisture and keep skin smooth and well moisturized. The lower the temp of water used for your shower and try to take shorter showers. Short, warm baths or showers followed up by drying skin and applying a gentle moisturizer is recommended.



Olive oil is rich in healthy fatty acids and antioxidants, olive oil is definitely good for your skin. The oil helps sooth and condition your skin and helps to treat dryness. It only takes a few drops.

  • Olive Oil Scrub--- tablespoon of honey, four tablespoons brown sugar and 2 tablespoons of olive oil. Mix Scrub on dry skin prior to taking a shower or applying moisturizer.

It may surprise you that milk offers a soothing feeling on itchy and dry facial skin. Lactic acid helps exfoliate dead skin cells and boosts moisture.


  • Soak washcloth in cold milk. Place cloth on face leave for 5-7 minutes. USe second cloth soaked in warm water to wash milk from face. The milk naturally moisturizes the skin and is safe to do so. 

Keep in mind dry skin is treatable. It simply takes a bit of care and the right remedies.

Rocky and Bullwinkle


The Adventures of Rocky and Bullwinkle and Friends was the title of an American animated television series. Airing originally in November of 1959 the series would run for 5 years. Jay Ward productions structured the show as a variety show. The flying squirrel Rocky and moose Bullwinkle were the stars of the show. Two adversaries in the adventures were Russian like spies named Boris Badenov and Natasha Fatale who worked for the dictator Fearless Leader. The shows also featured Dudley Do-Right of the Mounties, Peabody's Improbable History that featured a dog named Mr. Peabody and his boy Sherman who traveled thru time and Fractured Fairy Tales which were fairy tales retold thru comedy. The show appealed to both adults and children.

Taking Care of the Caregiver


Medical care has improved in leaps and bounds from the days of the old and even so some things do not change. Just like in the past many individuals will stay at home and be cared for by a caregiver. The caregiver is often provided by people who are not health care professionals. An average of 1 out of every 3 adults in the United States provides care to other adults. This can put strain even on the toughest of those among us. Being a caregiver can have many ups and downs. and be tough on even the most rugged individual. Thus caregivers must take steps to preserve your own health and well being. 

My own husband can be considered a care-giver of mine as he helps to take care of my injured foot. A caregiver is anyone who provides help to another in need. Being there for each other is something that is common with couples as well as families. When a loved one needs help it is often a blessing to have someone to help. However, it is different than the normal row that takes place between couples and families

The role change may leave feelings of anger, frustration, exhaustion, loneliness and depression. Loved ones often feel not only the emotional stress but also the physical stress of being a caregiver. The added stress may lead to changes in their own personal health. Factors that may make it harder on caregivers are:
  • being female
  • no formal education on taking care of others
  • living with the individual you are caring for
  • social isolation
  • depression
  • financial issues
  • lack of choice or opportunity
Caregivers need to be careful not to be so focused on their loved one that they forget their own health needs. Signs of stress include:

  • feeling overwhelmed
  • constantly worried
  • feeling tired
  • too much or not enough sleep
  • weight gain or loss
  • easily irritated or angry
  • losing interest in activities once enjoyed
  • sadness
  • frequent headaches, body pains, other physical issues
  • alcohol or drug abuse

There are no perfect caregivers. As long as we are doing the best and making good decisions then the job is being done well. Caregivers need breaks as well. Native American Christmas Carol

It is said that around 1640 a Jesuit missionary priest living among the Huron people wrote a Christmas carol, their first. A chapel made up of fir trees and bark was created to celebrate the manger in Bethlehem. The animals at this nativity were the buffalo, the bear and the fox. The nativity scenes were dressed up as Native Americans.

The carol was originally written in the Huron language then was transferred into French and English.

When all the birds had fled,
That mighty Gitchi Manitou
Sent angel choirs instead;
Before their light the stars grew dim,
And wandering hunters heard the hymn:
“Jesus your King is born, Jesus is born,
In excelsis gloria.”



Within a lodge of broken bark
The tender Babe was found,
A ragged robe of rabbit skin
Enwrapp’d His beauty round;
But as the hunter braves drew nigh,
The angel song rang loud and high…

Is not so round and fair
As was the ring of glory
On the helpless infant there.
The chiefs from far before him knelt
With gifts of fox and beaver pelt.

O children of the forest free,
O sons of Manitou,
The Holy Child of earth and heaven
Is born today for you.
Come kneel before the radiant Boy
Who brings you beauty, peace and joy.

Organize Your Purse

With everything else that is going on organizing ones purse often becomes overlooked. The holidays is one of the most important times to keep it all together and organized in your purse. Many will be doing more shopping than the otherwise do and finding the cash, credit or debit card is very important to do easily. Perhaps, that is why it is important to organize your purse. If you agree here are some tips that may help you out.


Your wallet should be placed into the main part of your purse. This will make it harder for someone to get to but easy for you to get to since you know where it is. Inside your wallet should be your ID or driver's license, any credit cards or gift cards and at least $20 in cash.

A small toiletry kit of items including pads, tampons and tissues should be carried in your purse. Keep the kit separate in a little bag, this will help keep it together and from getting lost in your purse or falling out accidentally Things to keep in this bag may include:

  • 3-5 pads or tampons
  • A travel pack of tissues
  • Floss
  • Band aids
  • Hand sanitizer
  • Sunscreen
  • Extra contacts or solution
Cosmetics are great to carry in a purse as well. A small makeup bag should be filled with lotion, lip balm and any cosmetics. If you do not use many cosmetics then by all means place them in the toiletry kit bag. If you know you will be needing cosmetics from time to time then you should carry a cosmetic bag. The cosmetic bag should include 
  • Lip balm
  • Lotion
  • A brush
  • A compact mirror
  • Mascara
  • Cover-up
  • Any other makeup you use on a regular basis
Keys should be kept in a secure side pocket if possible. If you do keep your kets in an outer side pocket, make sure it closes by zipping or snapping. Phone should be kept in a place where it won't get lost.
