This Spider Is A Bit Cheesy




Cheese Ball
  • 1/2 cup thick and chunky salsa
  • 1/4 cup sliced green onions
  • 2 tablespoons LAND O LAKES® Butter, softened
  • 6 ounces (1 1/2 cups) LAND O LAKES® Cheddar Cheese, shredded
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 teaspoon finely chopped fresh garlic
  • 1/8 teaspoon hot pepper sauce, if desired
Coating
  • 3 tablespoons poppy seed
Decorations
  • 2 grape or cherry tomatoes
  • 4 pretzel rods
Serve With
  • Crackers
  • Assorted cut-up vegetables

Combine all cheese ball ingredients in large bowl; beat at medium speed until creamy. Cover; refrigerate 1 hour.
Reserve 2 tablespoons cheese mixture for legs. Shape 1/2 cup cheese mixture into ball for spider head. Shape remaining mixture into round spider body. Place poppy seed into large shallow dish. Roll cheese balls in poppy seed, pressing seeds onto balls to coat. Place onto large plate or platter to form spider. Attach cherry tomatoes for eyes with toothpicks. Cover; refrigerate at least 4 hours or overnight.
Just before serving, attach legs by breaking each pretzel rod in thirds. Insert 3 pieces into each side of body; use reserved cheese mixture to attach remaining pretzel piece to form bent legs.
Serve with assorted crackers and vegetables.

Make A Squirrel Feeder From Mason Jar



My mom is probably the person in my life that I would call a squirrel lover. It was in high school that I first noticed how much she loved her squirrels. It was if she was a squirrel keeper knowing how many there were, where the baby squirrels were located and devoting feeding her pet squirrels. Now that I have my own grand-children my mom has not changed and her devotion to squirrels has continued.

If you have a fondness to squirrels you may want to visit the squirrel lovers club





 Wide-mouth Mason jar and band
Crafting wire (or strong ribbon)
Spoon with a fairly flat handle
Secure the band on the jar
With the Mason jar upright, hold the spoon against it. The spoon’s handle should be pressed against the side, and its bowl should be up above the top of the jar. This will create a little ledge for the squirrels to stand on
Wrap wire around the jar and spoon handle to secure them together
Find a fence or tree for your feeder. Use more wire to attach it and hold it in place

Squirrel FoodSquirrels love walnuts, hickory nuts, hazelnuts, sunflower seeds and peanuts with the shells on. Make sure you only give them raw, unsalted varieties.

Tip: Make sure you place your feeder where you can see it from a window. Watching the squirrels — and other animals — stop in and feast will be so much fun for the whole family. Meanwhile, your birds will be enjoying their own yummy treats!

Celebrate Sausage Month with Sausage Fajitas

Our family is a meat carnivorous one and we love our meat. One of our favorite meats to serve this time of year is sausage. Sausage is so versatile and can be served fresh, cooked or cured. Sausage is not for just part of us but the entire world has sausage in their diet in one form or another. In Mexico it is known as chorizo, bratwurst in Germany, Salami in Italy, Boerewor in South Africa or Lap Chong in China. Valued for taste, variety and convenience sausage is one that many will turn to. Sport focused countries like the U.S. will celebrate the game with sausage. The fame of sausage began years ago with salt drying preservation technique has now became a culinary art.
 
 
 
8 ounces (1/2 of regular size package) smoked sausage halved lengthwise, cut into 1/2-inch-thick slices
1 medium green bell pepper, cut into thin strips
1 medium red bell pepper, cut into thin strips
1 medium onion, cut into thin slices, separated into rings
1 teaspoon dried oregano leaves
1/2 teaspoon ground cumin
1/8 teaspoon hot pepper sauce
4 flour tortillas (8 inch)
Shredded lettuce (optional)
Salsa (optional)
Sour cream (optional)
Combine sausage, bell peppers, onion, oregano, cumin and hot pepper sauce in medium skillet; cook over medium heat 8 minutes, or until vegetables are crisp-tender and sausage is heated through.
Heat tortillas according to package directions.
Spoon sausage mixture evenly down centers of tortillas. Top with lettuce, salsa and sour cream, if desired. Roll up

Cranberry Walnut Pumpkin Bread

This recipe is delicious and oh so yummy. We love that this bread would be perfect for the last 3 months of the year when 3 of our favorite holidays are present. Yummy. Also, just so you know, October 22 is nut day and well we thought would be a perfect time to share this recipe full of nuts. What is your favorite nut recipe??
 
 
 


2 cups all purpose flour
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
6 tablespoons (3/4 stick) unsalted butter, room temperature
1 cup plus 1 tablespoon sugar
2 large eggs
1 cup canned pure pumpkin
1 teaspoon vanilla extract
2/3 cup buttermilk
1/2 cup dried sweetened cranberries
1/2 cup coarsely chopped walnuts

Preheat oven to 350°F. Butter 9 1/4x5 1/4x3-inch loaf pan. Line bottom and 2 long sides with waxed paper. Whisk flour, pumpkin pie spice, baking powder, salt, and baking soda in medium bowl to blend. Using electric mixer, beat butter in large bowl until fluffy. Gradually add 1 cup sugar, beating until blended. Beat in eggs, 1 at a time. Beat in pumpkin, then vanilla. Beat in dry ingredients alternately with buttermilk in 2 additions each. Fold in cranberries and nuts. Transfer batter to pan. Sprinkle with 1 tablespoon sugar.
  • Bake bread until tester inserted into center comes out clean, about 1 hour 10 minutes. Cool bread in pan on rack 15 minutes. Cut around bread at short ends to loosen from pan. Turn bread out onto rack; peel off waxed paper. Cool bread completely. DO AHEAD: Can be made 2 days ahead. Wrap and store at room temperature

    Sweet Honey Pickled Peppers

     
    I love these pickled peppers yummy enough for all your winter pickled pepper needs but so cute I am thinking gift from the kitchen as well.


    1 pound chili peppers, sliced
    6 ounces carrots, sliced
    2 cups apple cider vinegar
    1/2 cup water
    3 teaspoons pickling salt
    1/2 teaspoon alum
    3 tablespoons honey
    pickling spices (we used caraway, garlic and fresh ginger)
    6 tablespoons olive oil
    6 8-ounce jars with lids
    1. Thoroughly wash your jars.
    2. Place about 1 tablespoon of the pickling spices in each hot, clean jar.
    3. Pack peppers into the jars, leaving ½” headspace.
    4. In a pot, combine vinegar, water, honey, alum and pickling salt. Bring to a boil, then reduce heat and simmer about 5 minutes.
    5. Pour pickling solution into jars over peppers leaving ½” headspace.
    6. Add 1 tablespoon of olive oil over the top. Remove air bubbles.
    7. Wipe top rims clean then close the jars tight with two-piece caps.
    8. Process for 10 minutes in boiling water bath.
    9. Let set for 12-24 hours. Check seals.
    10. Ready to eat in 3 to 4 weeks.

    October is "Talk About Your Prescriptions" month. Prescriptions are the result of over 2/3s of all doctor visits. Medicine is the most common form of intervention according to a 2001 National Ambulatory Medical Care Survey. Medication management and safety is vitally important as prescription medicines, over the counter medications, vitamins and or herbal supplements have become more important part of quality medical care as time goes on. You and your family should know how to use and manage prescription safely and effectively. After all they are there to help you



    Medicine is described as a product that changes the way your body works or treats or prevents a disease. I have arthritis medicine that helps how my body works and diabetic medicine that helps treat and prevent disease. Most medications fall into one of two categories a prescription such as blood pressure medicine, diabetic medications, antibiotics or birth control pills. The second is Over the counter drugs (OTC) that you can buy without a prescription, these range from aspirin, antacids, laxatives, and cough medicine.

    The goal of medicine is to lead to better health, improved quality of life, longer life for people with diseases such as cancer, heart disease, and other life threatening conditions. Medication also have risk and it is very important to weigh the benefits and risks for each medicine.



    Distinguishing medication:
    generic medication has the same active ingredients as the brand name it normally goes by its chemical name. Generic drugs work the same way in the body and is the same dosage, safety, strength, how it is taken, quality, performance and intended use.

    dietary supplements and herbal remedies do not have the same strict guidelines as prescription drugs. They do not have to be proven safe, that they work or that they are clean, pure, or actually contain what the label claims.



    Risks and Problems:
    medications can cause problems even if used as prescribed.
    allergic reactions occur when your body's defense system reacts in a bad way to a medicine. Reactions may include hives, itching or a rash. Reactions may also result in the narrowing of the throat, difficult breathing, shortness of breath.



    Side Effects:
    Medication may cause side effects even if used as directed. Side effects such as headaches, dizziness, or upset stomach are common side effects. However rare side effects include liver failure

    Medical use problems include over use of prescribed or OTC drug. This may happen by accident or by not following directions Under use is also a problem that can occur by same means. Drug interaction occurs when a drug interacts with another drug, food, or alcohol and changes the way the drug acts in the body



    Be Prepared
    (1) learn about your health conditions and medicines from your healthcare providers and pharmacist.
    (2) Medication list that includes names of your medications, OTC's, supplements and herbal remedies. Know when they are taken, who prescribed, what used for, how often and dose amount and whether you have refills or not
    (3) Know the facts about all medications, OTCs, supplements, and remedies that you take to help you avoid problems
    (4) use one pharmacy this will help you keep tract of important records. Your pharmacist will also be able to help you monitor which medications you take and what interactions are possible. Always double check your prescriptions as the pharmacist are humans and mistakes are possible.
    (5) never take someone else's medicine and keep medications away from children
    (6) always contact your health care provider with any problems and be sure to ask questions.

    3. Does this new prescription mean I should stop taking any other medicines I'm taking now?

    Don't Be Scared It's Just a Snack

     
    this cheese ball reminds me of one of my favorite movies hell fighter. Oh yes, it is a bit grim and goory but it is for a spooky holiday Halloween. The cheese ball recipe is from Martha stewart.

    1/2 cup (1 stick) unsalted butter, softened
    3 packages cream cheese (8 ounces each)
    2 tablespoons fresh lemon juice
    1/2 teaspoon Worcestershire sauce
    5 dashes hot sauce (such as Tabasco)
    1/2 teaspoon coarse salt
    1/4 teaspoon freshly ground white pepper

    CHEDDAR AND CRANBERRY:

    8 ounces sharp orange cheddar cheese, finely shredded
    2 tablespoons store-bought chutney
    3/4 cup dried cranberries, finely chopped
    Water crackers, for serving

    ROQUEFORT AND WALNUT:

    6 ounces Roquefort cheese
    1 shallot, minced (about 1 tablespoon)
    2 teaspoons brandy (optional)
    1 cup toasted walnuts, coarsely chopped
    Vegetable chips (such as Terra Chips Sweets & Beets), for serving

    GOAT CHEESE AND SCALLIONS:

    8 ounces goat cheese
    2 tablespoons finely chopped scallions
    1/3 cup fresh curly-leaf parsley, finely chopped
    1 English cucumber, cut into 1/8-inch-thick slices, for serving
    1. Put butter, cream cheese, lemon juice, Worcestershire sauce, hot sauce, salt, and pepper into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until combined. Divide equally among 3 medium bowls.
    2. Stir cheddar cheese and chutney with base mixture in the first bowl. Form into a ball. If not using immediately, refrigerate up to 3 days or freeze up to 1 month. Roll cheese ball in cranberries  to coat before serving. Serve with crackers.
    3. Stir blue cheese and shallot with base mixture in second bowl; add brandy, if desired. Form into a ball. If not using immediately, refrigerate up to 3 days; freeze up to 1 month. Roll in walnuts to coat before serving. Serve with chips.
    4. Stir goat cheese and scallions with base mixture in remaining bowl. Form into a ball. If not using immediately, refrigerate up to 3 days or freeze up to 1 month. Roll in parsley to coat before serving. Serve with cucumber slices.

    Creepy Halloween Snack



     
     
     


    Halloween Finger Cookies
    adapted from CookEatShare

    makes approximately 50-60 cookies
    2 sticks unsalted butter, softened
    1/2 cup granulated sugar
    1 egg yolk
    1 tsp. vanilla extract
    1 tsp. almond extract
    2 2/3 cup flour
    1/2 tsp. kosher salt
    Sliced almonds
    Raspberry jam (preferably seedless)

    Preheat oven to 325 degrees Fahrenheit.
    Cream butter and sugar together, until well combined, but not fluffy. Add in the egg yolk and mix together well. Add in the extracts and blend in. Add the flour and kosher salt. Mix well – you will get a crumbly dough that holds together well when you squeeze it in your hand. Take heaping teaspoons-ful of dough (smaller than a walnut, about the size of a peanut shell when you roll it into the finger shape) and squeeze them in your hand so that the ridges between your fingers make marks on the dough and you get a 2-inch- 2 1/2-inch long finger shaped cookie. You can elongate the cookie by gently squeezing the sides. Place the fingers on a parchment lined cookie sheet. Take well formed almond slices and press them into the ends of each cookie – they will look like fingernails. Using the back of a butter-knife, make knuckle ridges.
    Chill the formed cookies in the refrigerator until they are hardened, about 15 minutes.
    Bake at 325 degrees for approximately 22-25 minutes, until the cookies are lightly browned on the edges and bottom. Cool completely.
    To finish off the cookies: place a large spoonful of raspberry jam in a zip-lock style sandwich bag. Seal the bag. Snip off a little corner of the bag so that you can pipe the jam out of the corner. If the almond nails are loose, remove them and place a little jam where the nail was – replace the almond on top of the jam. If the almond nails are not loose, simply pipe a little jam at the base of the nail for that bleeding look.
    Serve and enjoy.

    The golden tortoise beetle (Charidotella sexpunctata) is a species of beetle in the leaf beetle family, Chrysomelidae. It is native to the Americas.
    This beetle consumes foliage of bindweeds, morning glories, and sweet potato (all in the Convolvulaceae). Both adults and larvae feed on foliage.
    This beetle's adults are 5 through 7 millimeters long. It is variable in color from reddish-brown with bl...ack spots through gold, and it is often metallic, earning it the nickname "goldbug." Elytral margins are expanded and nearly transparent. This beetle's color changes through its development, during mating, and during times of disturbance, such as touching by a researcher. Scientists have not examined the color-change mechanism in this species. However, color change in the related Panamanian Charidotella egregia, also called golden tortoise beetle, occurs when this beetle's elytra hydrate and dehydrate. Adults of both species can turn from shiny gold through reddish-brown when disturbed.

    2 cans apple pie filling
    Butter Pecan cake mix


     Sprinkle dry cake mix over apples  Sprinkle a small amount of brown sugar ...
    Add pecans  Cut small slices of butter and place several over the top.  You can add cinnamon if you like   Bake @ 350 for 45 min or so

    Moms Sport Secret : Baked Spaghetti

    With all the ongoing sports being played at this time I think it is a great time to share with you one of my favorite meals that mom would cook on game night. Oh yes, she did cook and yes we were very involved in sports. Just like now our grand-kids play softball, soccer, basketball and hopefully the list will continue. Each sport has a beginning and an end and in the end the winner of the tournament is the champ. This is something that is taking place on the grand-stage presently in baseball, many highschool football teams are entering or will soon be entering playoffs and the cross-country runners will be needing to fuel up as well. The recipe I shared today mom always believed had the stuff to fuel us with energy again.
     
     

    Baked Spaghetti was always my moms way of serving up game night. Doing her share, making sure we were there ready to play, get on the bus and do whatever it was we needed to do. It was her way of saying yes we would be playing and we would make the family proud. Now your time to put some carbs into your family and make sure they do the best they can

    Baked Spaghetti
    taste of home

    1 package (16 ounces) spaghetti
    1 pound ground beef
    1 medium onion, chopped
    2 cloves of garlic, minced
    1 jar (32 oz. ) spaghetti sauce
    1/2 tsp. season salt
    1 tsp. Italian seasoning
    2 eggs
    1/3 c parmesan cheese
    5 T melted butter
    1 container (16 oz.) ricotta cheese
    3 c shredded cheese
     
    Cook spaghetti according to package directions. Meanwhile, in a large skillet, cook beef, onion, and garlic over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce, seasoned salt, and Italian seasonings. In a large bowl, whisk the eggs, Parmesan cheese and butter. Drain spaghetti; add spaghetti to the egg mixture toss to coat Place half of the spaghetti mixture in a greased 9x13 baking dish. Top with half of the ricotta cheese, meat sauce and mozzarella cheese. Repeat layers.
    Cover and bake at 350° for 30 minutes. Uncover and bake for 10 minutes longer or until cheese is melted.
     

    The recipe says, feeds 10 adults or small army. The one my mother would make would be doubled and she could feed the whole team and at times she would feed everyone that came together for one event or another. I simply hope that you Enjoy!!

    Iron Skillet Apple Pie



    IRON SKILLET APPLE PIE
    From FOLK Autumn 2013
    ...
    1 stick, plus 1 TBS butter
    1 c brown sugar (can be cut in half)
    1 c white sugar (can be cut in half)
    1tsp cinnamon
    ½ tsp nutmeg
    4 c Granny Smith Apples, peeled and chopped into small pieces
    1 box refrigerator piecrust (or homemade)
    In large iron skillet, melt 1 stick of butter and 1 cup brown sugar (do not caramelize, just melt the two together). Cover with piecrust; add apples, ¾ c white sugar, cinnamon and nutmeg. Cover with top crust that has been slit in 3-4 places (I always cut a heart shape, feel free to choose your own cutout). Sprinkle top with remaining ¼ cup of sugar and dot with remaining TBS of butter.
    Bake in 350-degree oven, for 30-45 minutes or until crust is brown and apples are tender.

    Shrimp and Macaroni Salad

     


    1 pound cooked shrimp
    2 tomatoes, diced
    2 hard-cooked eggs, chopped
    2 cups cooked elbow or bowtie macaroni, cooled
    1/4 cup chopped celery
    2 teaspoons onion powder
    1/3 to 1/2 cup mayonnaise
    1/2 teaspoon salt and pepper to taste
     
    In a large bowl combine all of the ingredients, adding mayonnaise a little at a time until you like the taste.

    Ways to Ease Your Child's Cold




    Flu season will soon be here and colds and allergies have all ready arrived. Everyone who gets sick seems to struggle maybe none more than mothers of babies. The little ones seem to be so uncomfortable when they are congested. One thing that many moms depend on is the little bulb syringe to clear the snot and allow the little one to breathe a bit better. There may be a problem with this idea though.

    The problem is that giving the bulb a cleaning in hot soapy water may just lead to a case of mold as the water has no real way to escape. Exposure to mold in children under the age of 1 often leads to a hike in asthma conditions. Many mothers have no idea that this even happening.

    Ideas to help your baby sleep better when congested include

    allowing baby to sleep upright. I often allowed the little one to sleep in their car seat which allowed them to feel comfortable with their head up.

    Soft Caramels

    I can remember the holidays at my grandma H's. Each year my grandma, aunts, uncles and the rest would all come together to enjoy a delicious meal. Everyone brought something depending on how talented they were in the kitchen and how much time they had or in many cases how much $$ there was to go around. My aunts always surprised me when they brought in the sweets. There was one year that one of my aunts brought delicious soft caramels. Oh my how yummy. I will never forget everyone getting together, how delicious they were or those yummy caramels that mom and grandma would not let me continue to steal .(sorry I really was an angel as a kid or at least that's how I remember it)
     


    2 cups sugar
    1 cup firmly packed brown sugar
    1 cup Butter
    1 cup milk
    1 cup Heavy Whipping Cream
    1 cup light corn syrup
    1 teaspoon vanilla
     
    Butter 13x9-inch pan; set aside.
    Combine all ingredients except vanilla in heavy 4-quart saucepan. Cook over medium heat, stirring occasionally, 15-20 minutes or until butter is melted and mixture comes to a boil.
    Continue cooking, 25-30 minutes or until candy thermometer reaches 244°F or small amount of mixture dropped into ice water forms a firm ball.
    Remove from heat; stir in vanilla. Pour into prepared pan. Cool completely.
    Cut into 1 1/2x1-inch pieces; wrap candies in plastic food wrap. Store refrigerated.

    optional: cinnamon sticks, whole cloves, allspice and/or star anise for garnish
     
    On a cutting board or sturdy surface, use a knife to cut off the top of the apple. Then take a paring knife and carefully outline where you'd like the "rim" of your apple cup to be. (My rims were about 1/4" wide.) Use a spoon to carefully begin scooping out the center of your apple until you have a nice "cup". (A melon baller also works well for this.)
    Also, if your apple doesn't sit exactly level, take your paring knife and just slice off a few millimeters to even off the bottom to make it even. Just be careful not to let your knife cut through the bottom or sides of the apple when hollowing it out, or the cider will leak out!
    Once you have the inside of the apples hollowed out, brush a little lemon juice over the inside of the apples (to prevent browning). Then fill with your favorite apple cider, garnish with cinnamon or spices if you'd like, and serve!

    Dinner and Dessert all Mushroomed up

    Sausage-Stuffed Mushrooms

    16 extra-large white mushrooms (or about 3 dozen medium to large white mushrooms)
    5 tablespoons good olive oil, divided
    2 1/2 tablespoons Marsala wine or medium sherry
    3/4 pound sweet Italian sausage, removed from the casings
    1/4 tsp ground fennel
    2 large shallots, chopped
    2/3 cup panko crumbs
    5 ounces mascarpone cheese, preferably from Italy
    1/3 cup freshly grated Parmesan
    2 1/2 tablespoons minced fresh parsley leaves
    Salt and freshly ground black pepper

    Preheat the oven to 350 degrees F.
    Remove the stems from the mushrooms and chop them finely. Set aside. Place the mushroom caps in a shallow bowl and toss with 3 tablespoons of the olive oil and Marsala. Set aside.
    Heat the remaining 2 tablespoons olive oil in a medium skillet over medium heat. Add the sausage, crumbling it with the back of a wooden spoon. Cook the sausage for 8 to 10 minutes, stirring frequently, until it’s completely browned. Add the chopped mushroom stems and cook for 3 more minutes. Stir in the ground fennel and shallots and cook for another 2 to 3 minutes, stirring occasionally. Add the panko crumbs, stirring to combine evenly with all the other ingredients. Finally, swirl in the mascarpone and continue cooking until the mascarpone has melted and made the sausage mixture creamy. Off the heat, stir in the Parmesan, parsley, and season with salt and pepper, to taste.  Cool slightly.
    Fill each mushroom generously with the sausage mixture. Arrange the mushrooms in a baking dish large enough to hold all the mushrooms in a snug single layer. Bake for 45 to 50 minutes, until the stuffing is browned and crusty.





    Meringue mushrooms piped out onto a Silpat covered baking sheet. Baked at 250℉ / 120℃ for about an hour and a half. (great step by step guide here)
     
    Meringue.
    * 3 egg whites whipped to stiff peaks with
    * 1/2 teaspoon cream of tartar
    * 1/3 cup cane sugar
    * 1 teaspoon vanilla
     
    The mushroom caps are squished out rather flatly, the stems pulled up rather tall. Just do best you can manage. Press down the peaks with a wet finger, should peaks form which they probably will. Otherwise your mushrooms will have pointed peaks and that's just wrong! Kidding. Actually, you can cut off the peaks of the stems once they're sufficiently dried in order to create a flat surface for the ganache glue to adhere to the bottom of the cap.
    Smear ganache or plain ol' melted chocolate onto the bottoms of the caps like mushroom gills, and onto the top of the stems and glue together. Position upside down to help the chocolate set. Mind, the chocolate is merely melted, not tempered, so the bond will not be as strong but it'll suffice for this. Incidentally, these little vanilla meringue mushrooms with spots of chocolate are oddly delicious, in a cotton candy sort of way. Kids would really dig 'em. I recommend making extras just in case you goof. Plus they're fun.

    Ganache.
     1/4 cup chocolate chips
     1/6 or so cup milk. Cream would be better but I don't have any of that right now.
     
     Zap for 20 or so seconds until the milk foams. Stir. At first it looks hopeless, but keep stirring until all the milk (or cream) is incorporated. It takes a little while for it to complete. If it's too thin, then add a little more chocolate chips while it's still warm. The chocolate need only be a few degrees warmer than body temperature for this to work so don't overdo it with the zapping. Zap, of course means microwave. If you don't have one of those, then a few seconds on the stovetop should do it. Just enough to get the liquid warmer than your body, which should be about 100℉ / 38℃ or a little bit more. This is the thing about chocolate; it's a gentle art.

    The real cake for this sort of thing is a Génoise or another type of sponge cake, and the real frosting is a buttercream, but I didn't bother with that because I'm not trying to impress anybody I just wanted to try my hand at meringue mushrooms and to see if I could come close. This is what I learned: I need to get a few larger platters. I have a few that are silver but they're a pain in the butt. I have about eight inches of extra rolled cake that didn't fit on my platter. I also learned this boxed cake is a little bit too tender. I need something sturdier. Also, those meringue mushrooms don't last forever. I have no idea how to protect them for anywhere longer than, say, a day. But all in all, in'nit it purdy?
    Dust the finished mushrooms with cocoa once they're stuck to the log.

    National Dessert Day

     
     
     
    October 14th of every year will find a very sweet day. It is national dessert day. Yes you must eat your meal before you can still have your dessert but you can feel extra special eating a delicious dessert. Desserts come in many different categories including cakes, cookies, jello, pastries, ice cream, pies, pudding, candy and yes even fruit.
     
    The early desserts required minimal effort or prep and have been dated back to ancient cultures. Desserts were primarily fruit and nuts. Over the years the desserts have grown to a great variety of desserts ranging from simple to complex soufflés and multi-layered cakes.
     
    Today I share with you a recipe from a fellow blogger. This recipe is perfect for any of your fall parties, Halloween treats or even the Thanksgiving dessert table. Yummy!!!!
     
     
     
     
     
    Pumpkin Spice Cookie Cups
    Serves: 24
     
    These peanut butter cookie cups are super fun with pumpkin spice Hershey's Kisses added to them. Kids of all ages will love this fall treat.
     
    ½ cup (1 stick) butter, softened
    ½ cup sugar
    ½ cup light brown sugar, packed
    1 cup smooth peanut butter
    1 large egg
    1 tsp. vanilla extract
    1-1/4 cups bread flour {or all-purpose flour}
    ½ tsp. baking powder
    ½ tsp. baking soda
    ¼ tsp. salt
    24 Pumpkin Spice Hershey's Kisses
     
    Preheat oven to 350°F.
    Spray 24 mini muffin cups with cooking spray; set aside.
    Beat together butter, sugar, and brown sugar until smooth.
    Add peanut butter and mix just until blended.
    Add egg and vanilla and mix well.
    In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
    Gradually add flour mixture to wet mixture, just until blended.
    Roll out your cookie dough into balls. {The size of each ball will depend on how big you want your cookie cups. I did about 1-inch ones}
    Place one ball into each of the 24 muffin cups.
    Bake for 12-15 minutes, or until lightly golden. Unwrap Hershey's Kisses while cookies are baking.
    Immediately press one pumpkin spice Hershey's Kiss into the center of each cookie cup. Allow to cool about 5 minutes, remove cookies from pan and let cool completely on rack.
     

    This Day In Musical History




    Kiss released this song, that to me is one of the best that rock n roll has to offer, on this day October 14, 1975. I was a kid (at the age of 5) when this song was released. Way before internet, video games or the such life was in my opinion easier and a bit different. I can remember the popularity of KISS. In my little life the fall fest in the school gym included a face painting as many others did. The thing that was different was that the faces that were painted included the 4 faces of KISS.

    Maple Apple Dumplings

    Maple Apple Dumplings



    Pie Pastry - your own or purchased
    4 Medium Apples
    2 cups Pure Maple Syrup
    1/3 Cup Pure Granulated Maple Sugar
    1/2 teaspoon Cinnamon
    2 Tablespoons Butter or Margarine
     
    Heat oven to 425°- roll out pastry and cut into about 7" squares. Pare and core one apple for each dumpling. Place apple in center of each square.
    Mix together the Pure NYS Granulated Maple Sugar and Cinnamon - fill apple cavities. Dot each apple top with about 1/2 teaspoon Butter. Bring opposite points of pastry up over the apple. Moisten pastry to seal it together. Place in baking dish.
    Bake 40 to 45 minutes until crust is nicely browned and apples are cooked through (test with fork.) Put dumpling on hot serving dish. Drizzle with hot maple syrup and top with whipped cream or ice cream.

    Snickerdoodle Cookies

    Snicker doodle Cookies are my sons favorites. They are one cookie that I love to bake in the fall. The scent of cinnamon sugar baking in the oven leaves an aroma in the air that is delicious. Bake up some delicious snicker doodle cookies Enjoy!!
     
     

    1 cup (16 tablespoons/1 stick) shortening or unsalted butter (2 sticks), softened
    1-1/2 cups granulated sugar
    2 large eggs
    2-3/4 cups unbleached all-purpose flour
    2 teaspoons cream of tartar
    1 teaspoon baking soda
    1/4 teaspoon salt

    CINNAMON SUGAR MIXTURE
    4 tablespoons sugar
    4 teaspoons cinnamon

    Preheat oven to 400° F. In the bowl of the stand mixer, cream together the shortening, sugar, and eggs.  In the small bowl, sift together the flour, cream of tartar, baking soda, and salt. Add to the shortening mixture and stir on low until combined.  In the small plate, stir together the cinnamon and sugar. Shape dough into balls about the size of a walnut and roll around in the cinnamon sugar until coated all the way around. Place on ungreased baking sheets about 2 inches apart.  Bake about 8 to 10 minutes, until the cookies are lightly browned but still soft. They should puff up then flatten

    Re-Play Review
