1 stick Butter (not Margarine)
1 whole Onion, Small, Finely Chopped
2 whole Jalapeno Or Red Serrano Hot Peppers, Finely Chopped (I Use 3)
1 whole Sweet Bell Pepper, Red, Orange, Or Yellow, Finely Chopped
3 cups Corn, Frozen Or Fresh
2 teaspoons Sugar
Salt And Pepper, To Taste
Melt the butter in a large skillet then saute the onions, and hot and sweet peppers.
Add in the corn. Simmer until hot (in my case, it was until all the corn was thawed).
Sprinkle with sugar.
Allow to simmer on low for approximately 10 minutes, giving the flavors time to meld together!
Salt and pepper, to taste.
Easily doubled.\
