Cherries Jubilee

September 25 is the day for the delicious dessert of Cherries Jubilee to shine. Made with cherries and liqueur which is flambéed and then the dish is served with ice cream. There are many delicious varieties of this dessert but I chose to share this one

 



Cherries Jubilee

1 lb. fresh dark cherries, pitted
1/2 cup sugar
1/4 cup orange juice
1/4 cup kirsh
2 tablespoons cornstarch

In a skillet, whisk together the sugar and cornstarch.
Stir in the water and orange juice . Continue to whisk over medium heat until thickened.
Add the cherries and simmer for 5  minutes or until cherries warm through.
Remove the skillet from the heat and pour in the kirsh.  Ignite and allow alcohol to burn off.
Spoon the cherries over ice cream and top with a dollop of whipped cream.

Apple Pie Scented Play Dough

I believe that each season has its own personality. Personality that has its own scents, attributes as things that are down primarily in that season. From the clothing styles we wear to the food we eat normally you will find each season to have its own look and feel. I love living here in Illinois where I can enjoy 4 seasons each year. One of my favorite seasons is fall. From the bonfires to apple picking time the crispness in the air is a favorite time of mine. Why not bring a little bit of that great fall inside to the little ones
 
 
 
Apple Pie Scented Play Dough

1 cup flour
¼ cup salt
½ Tbsp. vegetable oil
1 tsp. cream of tartar
½ tsp. nutmeg
1 tsp. cinnamon
1 tsp. red food color
1 cup water
 
In a large pot, combine all dry ingredients and mix well.
Add in vegetable oil, food color, and water, stir.
Cook over medium heat until the dough pulls away from pot and starts to become dry.
Turn off heat, let cool, and knead.
Notes
If the dough feels too sticky, knead in a tablespoon of flour.

Pumpkin Spice Puppy Chow


Are you ready for fall? Soon harvest season will be here and that always means that a lot of fun is to be had. Try this yummy snack and see what you think


Pumpkin Spice Puppy Chow
Makes 9 cups Puppy Chow
Ingredients:
  • 2 1/2 cups powdered sugar
  • 1 12-ounce package white baking chips
  • 1/2 cup (heaping!) Biscoff spread (creamy or crunchy will work)
  • 1 teaspoon pumpkin pie spice
  • 9 cups rice Chex cereal
Directions
  1. Place powdered sugar in a large sealable plastic bag. Set aside.
  2. Combine white baking chips and Biscoff spread in a microwavable safe bowl and microwave on high for one minute. Stir. Microwave for an additional 30 seconds and stir.
  3. Stir pumpkin pie spice into Biscoff mixture. Fold in Chex cereal and toss to coat.
  4. Pour Chex into plastic bag and shake to coat the cereal in powdered sugar.
  5. Remove coated cereal from bag and serve. Enjoy!

Pumpkin Butter



1 can pumpkin puree (not pumpkin pie mix)
A small lemon
Table sugar (regular granulated or turbinado)
Brown Sugar
Cinnamon
Pumpkin Pie spice (blend of cinnamon, ground ginger, lemon peel, nutmeg, cloves, and cardamom)

In crockpot you will need to mix sugar, spices, and pumpkin puree cook on low setting Use spice amounts that fit your taste that means you can use more or less whatever you prefer.

Start by using this measurement
• 3 cups pumpkin puree (one CAN is usually 15 ounces)
• 3 cups brown sugar
• 3+ Tablespoons lemon juice (half of a small lemon)
• 1/2 teaspoon cinnamon
• 1/4 teaspoon pumpkin pie spices (make sure you add this slowly, in case you don't like the cloves or other spices in it).

Pour the pumpkin puree and spices into the crock pot.  After you put all the ingredients in the pot, mix away. I used a potato masher to fully mix the spices in, and to mash down any larger pieces of the pumpkin still left. Cover the mixture with the crock pot lid and step away. The butter should not burn or smoke but should bubble down for hour or so.

 If you want to do this on a stovetop instead of a crock pot, you can! Combine everything in a saucepan and stir. Then bring the mix to a boil carefully watching to ensure you don't burn the pumpkin! Reduce heat to a simmer, and leave uncovered for 30 minutes or so until the mixture has started to thicken and turns more brown.

After hour or so mixture should cook down and start to turn brown and get thicker if not at that point cook another hour or so. Once it is thicker and darker in color it is time to take the lid off and let it thicken even more. Cook another hour or two in crockpot. It will resemble the thickness of peanut butter. Let butter cool just a bit

Now time to store butter so you can have some now and a bit more later. Simply scoop out the butter and fill container you choose to use whether jar or another dish. Then seal. Stays in fridge good for up to 1 week or in freezer for 6 months. You can also can if you choose.

Apple Bread Pudding




6 cups of bread cut into chunks
2 cups diced apples, you want to use an apple that is good for baking
3 cups milk
4 eggs
½ cup sugar
1 teaspoon vanilla
1 teaspoon cinnamon

Mix together apples and bread.  In separate large bowl whisk together milk, eggs, sugar, vanilla, and cinnamon, then add bread and apples.  Mix together well. Pour into an 11×7 or about that pan.  Place that an into a 9×13 pan and fill the outer pan (9×13 pan) with about 1 inch of water. Your size of pan does not matter so much, as long as the pan with the bread mixture can fit into a pan with water into it. You are creating a water bath, which is important in giving this bread pudding its texture. Bake at 350 for 55-60 minutes.

Cheeseburger Casserole

Looking for a tasty meal to serve this week to your family? Then check out this yummy casserole made from favorites such as ground beef, cheese and pasta. Always a winner at our home.
 
 
 
 
 


6 ounces uncooked rotini pasta (about 2 cups)
2 teaspoons oil
1 ½ cups onions (finely chopped)
1 garlic clove (finely chopped)
1lb lean ground beef
¾ teaspoon salt
½ teaspoon ground black pepper
2 tablespoons tomato paste
1 (28 ounce) can diced tomatoes
2 tablespoons Dijon mustard
2 cups shredded cheddar cheese
¼ cup chopped dill pickles

Step 1: Preheat the oven to 350 degrees. Spray a 9 x 13” inch casserole dish with cooking spray. Bring a large pot of salted water to a boil. Cook pasta according to package directions for al dente, drain.
Step 2: While the pasta is cooking, heat oil in a large skillet over medium-low heat. Add onions and cook until soft (about 5 minutes). Stir in the garlic and cook for 30 seconds. Add the ground beef and cook while breaking up into chunks with a spoon or spatula until browned. Season with salt and pepper. Stir in tomato paste, and then add the tomatoes and mustard. Let the mixture bubble gently until it is slightly thickened (about 2 minutes).
Step 3: Toss the meat mixture with the cooked pasta and spread it into the prepared baking dish. Top with cheddar cheese. Place the baking dish into the oven and bake until the cheese has melted (about 15 minutes). Remove from the oven, sprinkle the chopped dill pickles over the top and serve.

Sloppy Joe Hoagies



2 pounds ground beef or ground turkey
1 onion chopped
1 green pepper chopped (optional - I just grabbed some that I had chopped and frozen)
2 small cans of tomato sauce
1 can of water
1/4 cup of BBQ Sauce (any kind that you got for cheap will do)
2 Tablespoons of Worcestershire sauce
2 Tablespoons of Brown Sugar
2 Tablespoons of Apple Cider Vinegar (any will do)
2 Tablespoons of Mustard
1 Teaspoon of Garlic Salt
 
Brown your beef or turkey in a pan.  Add onion and green pepper -cook until soft. Add all other ingredients. Bring to a boil.  Reduce heat, cover and let simmer for 10 minutes. Serve on any kind of buns you have on hand.
 

Frugal tip: Buy buns or hoagie rolls when they get clearanced out because of their date. Then pop them in the freezer. Pull out only what you need for dinner. Place in the oven around  350 degrees (or along side your french fries) until thawed and warmed through. It is that easy.

Biscuit and Gravy Casserole

On any given weekend you can find our family dining on biscuit and gravy. This delicious casserole looks like it could very easily fit the bill as well




1 lb pork sausage
2 T butter
2 packages Sausage Gravy Mix (makes 2 cups per package)
12 eggs
1 (5 oz) can evaporated milk
½ tsp salt
2 tubes refrigerated biscuits

Cook sausage in 10" Executive Skillet - breaking up using Mix 'N Chop, set aside.
In large saucepan, make gravy according to directions. Add sausage to gravy, set aside.
In large Stainless Steel Bowl (check out our Stainless Steel Bowl Set item #1735) whisk eggs, evaporated milk and salt. Soft scramble eggs with the butter. In a Stoneware Rectangle Baker layer gravy, eggs, gravy, eggs, gravy, then top with biscuits.
Bake for 20 to 25 minutes at 350 degrees until biscuits are golden brown.

Never Forget


I will never forget 9/11/01 and I know there are many that are just like me. Whether we lost a loved one or not does not matter for the grief we all felt and the moment ingrained in our memories forever will be there forever . The moment that the first plane went into the tower with no one expecting that to happen and then just moments later with the second plane hitting we heard of 2 more planes in the air and where we they heading? I was at work with many other individuals that are close to my heart and our boss would keep us updated and we were all glued to the tvs as our daily work continued on. The devestation would continue on for days and the moment of fear would lead to wonderment. Now as the unrest of what will happen next with the area as the U.S. once agains debates about what to do I pray for our country and our leaders

Black Eyed Susans


Here in southern Illinois you can find black eyed susans growing in fields. They are beautiful to me.

Black Eyed Susan have been here in North America for quite some time. Being a native wildflower it has become popular with home flower gardens. The Black Eyed Susan Plant comes in two varieties (1) bush and (2) vine. They come in glorious fall colors of yellow, orange, and gold. If you love flowers but don't have a lot of time to care for them then the Black Eyed Susan is for you.

Black Eyed Susan are grown from seed and if started early in the spring you may be lucky to get blooms the first season. Best to plant the seeds shallow in the soil as early in spring as possible or plant in fall to have flowers next year. The plant will grow  tall with stems as tall as 2 to 3 feet tall. After the flowers are established they will be easy to care for. Resistant to insect and disease

Get Back To Organized

I shared this list of 10 a bit back in combination of a previous post but I think that it would work great here at the start of school as well.
  1. Start early, the earlier a child starts to learn organization skills the easier it is. Princess who is 19 months old can put her toys up, throw trash away, and help keep her room clean. If the area is more organized and neat then managing the area will be better as well.
  2. Meals, home school, homework, playtime, and cleaning chores can all be kept on a schedule. This allows you to know what and when something should be done. If a task is looked at in whole it may seem rather difficult to do. But when broken down it may seem more simple.
  3. Creating a menu in our house helps us to make sure that meals are done. It allows us to see what we are having that night and the next night so we can take out any frozen food that needs to be unthaw as well as prepare anything that we can do ahead of time if we know we will be short of time the following night.
  4. Creating an ongoing shopping list helps us by allowing us to write down whatever we may need and be out of or run out of in short notice. We have a list that hangs on our fridge and we often write down whatever it is that we need alerting the whole house that we will be going to the house on a certain date and time. That way if the teens need anything they can add it to the list as well.
  5. We have a sort of house bank where the teens are paid weekly. I must say that the teens are old enough where we have a chore system in place as well as how much one can earn by doing this chore. Each of the teens has an equal chance to earn the same amount of money. This keeps the house clean and organized as well as the financial matters as far as what the teens make in allowance are easier as well. The teens use their money to buy any extras other than what we supply them.
  6. We have a blast off station where all the kids put their stuff they will need the next morning. We have had this in place for many years and works well. Now, we also have separate places in the teens rooms for the stuff they are responsible for.
  7. Family calendar, we have a large calendar on the kitchen wall where all activities for the entire family are kept. If they are not going to be home for a meal I expect to know why so they place whether they are eating or not on the calendar as well. This allows for family time together, activities are planned and all of us are happier.
  8. Family meetings are another way we help stay organized and the family is managed. We all gather together and discuss what we need to talk about, what upcoming activities will be going on, what meals are planned for next week and whatever we need to talk about.
  9. Clothing is managed by taking out the winter putting up the spring and summer, no new clothing is purchased unless we are ready to get rid of another, and the drawers and closets are organized once a week
  10. We keep important papers in bins, I have 3 , the boys and my hubby each have 1 , the girl both have a shelf for their stuff to keep straight This does help as everything important goes in these bins. While they may need cleaned up often we always know that if we look in the bins we will find it.

Apple and Cheddar Quick Bread


Ladies you may want to keep this recipe close this fall. Its for a delicious apple and cheddar quick bread that will make any one smile. A quick recipe for all those fall nights when the weather is so nice you hate to come in. On those busy school nights when you need something quick to take to an evening event remember this delicious recipe




apple & cheddar quick bread

 1 3/4 c all-purpose flour
2 1/2 t baking powder
1/2 t salt
3/4 c milk + 2 T
1/3 c canola oil
1 egg
2 T brown sugar
1 c finely diced apples
1 c strong cheddar cheese, grated
3 T cheddar cheese, grated

Preheat oven to 400F. Prep your 8×4 loaf pan* by lightly greasing it with butter and then use a mixture of cornmeal and flour to dust the insides with – about a spoonful of each should do. Shake out any excess and set aside.
In a medium bowl, combine the flour, baking powder and salt and whisk everything together. Set aside. In a large bowl, mix together the milk, oil, egg and brown sugar until well blended. Pour in the diced apples and stir in the flour mixture. Add in the cheese in 3 handfuls – stirring between each addition. Dump the batter into your prepared loaf pan and bake for 45-50 minutes. Sprinkle the remaining cheese over top of the bread and cook for 10 minutes longer until the cheese melts and the bread is cooked all the way through – use a wooden skewer in the middle of the loaf to test doneness.

Toasted Marshmallow Milk Shake

Tonight would be an awesome time for a bomb fire. Here in southern Illinois where I live the weather is in the mid 70s right now and a bit rainy and cool. Today is also a day to toast to roasted marshmallows. The recipe I share tonight will make you warm and cozy and enjoy toasted mallows. Oh so yummy



I recommend getting all of the ingredients ready in the blender and then toasting the marshmallows.  You want your marshmallows gooey and hot when you throw them in the blender so they incorporate nicely.  Marshmallows tend to get sticky and harden upon cooling down.


3 scoops vanilla ice cream (use a high quality ice cream or make your own)
1 tablespoon whole milk
I large dollop of plain yogurt
5 Kraft Jumbo Jef-Puffed marshmallows (or homemade)
Whipped cream


Toast marshamllows under a broiler, or, if you’re frisky, over a flame until they just start to blacken evenly (the trick is to make sure it’s evenly toasted and dark, but not turned to charcoal).
Put the milk, yogurt, and then ice cream in the blender. Blend carefully, just until you get a “donut”—when you see the shake holding to the sides of the blender with a hollow core.
Add three of the toasted marshmallows to the blender, and whirl it just until they’re all broken up and distributed evenly. Be careful not to overblend it, making it too melty.
Pour shake into a glass, top with a dollop of whipped cream, break the last two marshmallows on top, and serve with an extra-wide straw.
Repeat if necessary. And it will probably be necessary

Making Tomato Juice + recipe



3 pounds very ripe garden tomatoes, cored, roughly chopped
1 1/4 cups chopped celery with leaves
1/3 cup chopped onion
2 Tbsp sugar (to taste)
1 teaspoon salt
Pinch black pepper
A couple shakes of Tabasco sauce, about 6-8 drops (to taste)

 Put all ingredients into a large non-reactive pot (use stainless steel, not aluminum). Bring to a simmer and cook, uncovered, until mixture is completely soupy, about 25 minutes. Force mixture through a sieve or food mill. Cool completely. Store covered and chilled. Will last for about 1 week in the refrigerator.

Bact To School Time banana Oatmeal Chocolate Chip Cookies

Our grand-daughter started back to school today. It was an awesome day she is in kindergarten and I just know she will love it. One thing I remember as a child is going to my grandmothers house after school and her always having a special treat for us. Occasionally we would get lucky and she had fresh baked cookies. I thought today I would make up a batch of cookies and share with my little one when she got home. I hope you enjoy as I love these tasty treats.
 
 


2 cups all-purpose flour
½ cup white sugar
½ cup brown sugar
1  cup butter/margarine or Crisco
 2 eggs
 ¼ cup milk
 1 teaspoon vanilla extract
 1 teaspoon baking soda
 1 teaspoon baking powder
 1 teaspoon ground cloves
 ¼ teaspoon nutmeg powder
 1 teaspoon ground cinnamon
 ½ teaspoon salt
 3 ripe bananas, mashed
 2 cups quick cooking oats
 1 cup semisweet chocolate chips
 ½ cup chopped walnuts (optional)
 ½ cup chopped almonds

 Preheat oven to 350 degrees F. In a medium bowl, cream butter and sugar together until smooth.
Stir in the eggs. milk and vanilla. sift together the flour, baking soda, baking powder, salt cloves, nutmeg and cinnamon, stir into the creamed mixture. Add the mashed bananas and rolled oats alternating it then add chocolate chips, and nuts mix until well blended. Drop dough by rounded spoonfuls onto unprepared cookie sheets. Bake for 11 to 14 minutes in the preheated oven to desired consistency (I like them toward soft side and chewy side). Remove cookies from pan to cool on wire racks for 5 min

Dog Days

Today is national dog day and I thought I would share a treat that we could give our loving furry partners.
 

Easy-Peasy Peanut Butter Dog Treats (makes about 3 dozen)



2 cups whole wheat flour
1 1/2 teaspoons baking powder
1/3 cup smooth natural or organic peanut butter
1 cup hot water or 1 cup skim milk
Optional: 1 egg (Oscar loves eggs, so I put one in – plus it’s awesome for a shiny coat)

Preheat the oven to 375°F.
Mix together the flour and baking powder in a big bowl.
In a separate bowl, mix together the peanut butter and hot water until smooth. Slowly add the dry mixture and mix well. Add a little more water or milk if the dough is too dry, or flour if it’s too wet.
Place onto your counter and roll to 1/4″ thickness.
Cut with a cookie cutter and place on a cookie sheet.
Bake for 20 minutes or until lightly brown. Let cool, and then let the begging begin!

Use those Leftovers Easy Pulled Pork Barbecue Biscut

our family loves pulled pork and this recipe is great for using up those delicious leftovers. Oh my two meals in one now that's what I call a time buster and yummy. Enjoy
 
 
 
 
 
1/4 to 1/3 cup barbecue sauce
1 tube refrigerated biscuits, 10 biscuits
leftover pulled pork, about 3/4 cup
dill pickle slices
thinly sliced roma tomatoes
finely chopped red onion or sweet onion
shredded Cheddar and Monterey Jack cheese blend, about 1/2 cup

 

Heat oven to 400°. Lightly spray 10 muffin cups with baking spray or grease lightly. Flatten biscuits slightly and press into muffin cups, pressing up the sides. Put about 1/2 teaspoon of the barbecue sauce in each cup. Top with about 1 to 1 1/2 tablespoons of pulled pork, then top with a thin slice of tomato and a pickle. Sprinkle with a little onion and then top each cup with shredded cheese. Bake for 12 to 14 minutes, until lightly browned.
Makes 5 to 10 servings, depending on the meal and appetites.

Tempt Your Families taste Buds with Doritos Chicken Casserole


Looking for a frugal and easy recipe to tempt your families taste buds tonight well then you should check out this recipe filling with a bit of spice and oh don't forget the cheese. My family will love it. Gonna make it when we have a crowd.

  • 2 to 3 cups diced cooked chicken 
  • 1 cup sour cream 
  • 1 can cream of chicken soup 
  • 1/4 cup finely minced onion 
  • 1 tsp. chili powder 
  • 1/2 tsp. salt 
  • 1/2 tsp. pepper 
  • 1/2 tsp. garlic powder 
  • 1/2 cup grated Cheddar cheese 
  • 1/2 cup grated Mozzarella cheese 
  • 1 bag (medium size) bag of Doritos, crushed


  • Grease or spray a 2-quart casserole dish. 
    Cover bottom of casserole with half of the crushed Doritos. 
    Mix all other ingredients, except cheese, and place on Doritos. 
    Put remainder of crushed Doritos on top of this. Add cheese on top. 
    Ready to bake! 
    Bake at 350° for 30 to 40 minutes.
