Top Hat Craft

Here's a fun craft for both Presidents day and one that would be great for St. Patricks Day. The stovepipe hat of Abe Lincoln and add a four leaf clover to make it perfect for that Irish day. To make this craft you will need

7" paper plate

2 sheets of black construction paper

1 sheet black felt (optional for hat band)

Scissors

White craft glue

Black acrylic paint

Paintbrush

Place paper plate right side up on the work surface. Paint with black paint and set aside to dry. Glue two sheets of black construction paper together. Line them up side by side; they should be lying horizontally with the long sides at the bottom. Allow to dry. This step is optional and is great for kids that are a little older, 6 and up. Cut two 2"-wide strips from the black felt. When the paper plate and the glue on the construction paper are both dry, roll the construction paper up so that the two ends touch each other. Roll up enough to where it fits in the top of the plate, leaving enough plate for the hat brim. Glue the rolled paper together to secure and hold for a few minutes until the glue grabs.
If you did step 3, continue here. If you skipped step 3, move on to step 6. Take one of your felt strips and glue it along the bottom circumference of your "hat" where the hat band would go. Take the other black felt strip and wrap it around the remaining uncovered part of the circumference. You will have excess felt and will need to trim off what you don’t need before gluing it in place. Once trimmed, go ahead and glue the remaining hat band in place. Place the hat "tube" on top of the plate. Pipe a generous line of glue around the bottom of the hat tube to secure the tube to the plate. Place about 10-15 sheets of construction paper on top of the hat tube to help give it some weight and allow the glue to grab. Allow the glue to dry about 45 minutes.
The hat is now ready to use as a table decoration! If you want to make this craft into a wearable hat, poke a hole in the middle of the paper plate and cut out an opening big enough to fit the crown of your child's head. You can also attach a thin piece of elastic to either side of the hat to create a chin strap.

Bucket Gardening Saves Money and Space

The warmer weather has me thinking about gardening a bit. While I have a rather nice yard and quite a bit of room for a nice size garden. This year though I have been thinking about doing some bucket gardening around the patio just to add some atmosphere and of course another great area to raise a few veggies that we use so much through the year. The Hunger Actionnys had some very useful ideas and I thought I would share it with you

STEPS TO A SUCCESSFUL BUCKET GARDEN

1. Select a bucket that has not had any toxic material in it such as building/painting materials or cleaners/chemicals. Drill or nail several holes into the bottom of the bucket or put rocks in the
bottom few inches of the bucket to allow for drainage.
2. Fill your bucket with soil. If you are sure of the quality of the soil in your yard you can use that, but a good blended potting soil is rich in nutrients and will work better.
3. Select the plants you want in your bucket. Below are some planting tips for each plant type.

TOMATOES: Cherry, patio or bush varieties work the best. Place your tomato plant in the center of
the bucket and stake it. Drive a four foot pole several inches into the soil about 3” away from the
stem. Tie the plant loosely to the pole with some type of cloth. One tomato plant per bucket!!!

CUCUMBERS/MELONS/SQUASH: Plant the seeds or plants in the front of your bucket and train
them to grow over the side onto your porch, steps, deck or windowsill.

PEPPERS: Place these bush-like plants on either side of the tomato plant.

POLE BEANS: Plant seeds to the rear of the bucket and train the vines to grow up a string tied to the
edge of the bucket.

Some of my Favorite Recipes

The theme over at the Ultimate Recipe Swap is "favorite" I decided I would share a few of my favorites as well. So here are three of them

Indian Pudding Day

Today is the national holiday to celebrate Indian Pudding. If you are not sure what Indian Pudding is you are not alone. The Nibble describes Indian Pudding as
What’s Indian pudding? It’s a baked pudding served hot or warm, made of cornmeal, milk, molasses and spices. It’s a richer, sweetened form of hasty pudding, a porridge of cornmeal cooked in milk or water. (Remember the song, Yankee Doodle: “Father and I went down to camp/Along with Captain Gooding/And there we saw the men and boys/as thick as hasty pudding.”)
The name Indian Pudding doesn’t imply that it’s a Native American (or Pacific Rim) recipe. The Plymouth Colony emigrants were accustomed to warm plum puddings, bread puddings and the like. But flour was scarce—no wheat grew in New England. However, corn grew; the native Wampanoags had plenty of cornmealSo “Indian” pudding was born, using cornmeal plus butter, eggs, milk, molasses and spices such as as cinnamon and ginger. The pudding was topped with heavy cream. None of these were Native American ingredients. The word “Indian” referred to the corn—hence Indian pudding, Indian bread (cornbread) and so forth.

2-½ tablespoons unsalted butter

3 cups milk

5 tablespoons yellow cornmeal

1/3 cup molasses

1/3 cup maple syrup

½ teaspoon ground ginger

¼ teaspoon ground cinnamon

¼ teaspoon salt

1 egg, beaten

1 cup cold milk

2 pints premium vanilla ice cream,

whipped cream or light cream (half and half) for topping

Preheat oven to 300°F. Grease a 1-½ quart soufflĂ© mold or baking dish with 1 tablespoon of the butter; set aside. Heat 3 cups of milk in a saucepan until it is close to boiling. Add the cornmeal and reduce heat to low. Stir until the mixture thickens (about 5 minutes). Remove from the heat and add the remaining butter, the molasses, maple syrup, cinnamon, ginger, salt and egg. Pour into buttered dish.
Place in the preheated oven and bake for 30 minutes. Pour the cold milk over the pudding and return to the oven. Cook for 1 hour and 30 minutes to 1 hour 45 minutes until the top is brown and crisp. Serve hot or warm with topping of choice.

Hershey Spreads Happiness

Spreading happiness is something that I get to see everyday. I am lucky enough to work in a facility where 45+ adults with mental disabilities live. It may seem funny but I have learned so much from these individuals over the years. One thing that I have learned is that no matter how bleak your life may look you can be happy. One great way to spread happiness is to share a smile. Smiling can often be contagious so if you keep a smile on your face not only will you be happy but those that meet and greet you will probably end of smiling as well.

Find a great topic to talk about and keep the smile going. One of my latest bright spots of conversation is my grandson that was born less than a week ago. It seems that babies have a great way to spread the joy of happiness because we know it is a miracle and a great beginning. The next time you are spending a few moments with someone on the elevator, in a cab, on the bus, at work even at a restaurant. Stop and say hi and share a conversation allows the day to be less boring and may just leave you both with smiles on your face and happiness in your hearts.

Perhaps one of the greatest ways to share happiness is through sharing chocolate. Keeping a few tasty bars of Hershey minis in your purse, pocket or bag allows you to be on the ready when you see someone having not such a bad day. Offer them a piece and allow them to take a step back in surprise and enjoy a moment where they can take a deep breath. Perhaps that little moment allows them to get hold of their selves and puts a bit of happiness on a other wise not so great day.

How do you spread happiness? I would love to know what ideas you have or have tried to bring happiness to the environment you are in. By keeping happiness in my heart, a smile on my face and the desire to spread happiness to others my life seems to be happier and more content. It is no fun to sing the blues and while there are times that this happens if you have helped to bring happiness to others then when you are singing the blues you can often count on others to return this blessed feeling as well.

Granola Recipe and Welcome Wednesday

http://takeitfrom-me.blogspot.com/2011/02/welcome-wednesday-216.html

Photobucket Vanilla Almond Granola prepared in the crockpot

5 cups granola (not quick cooking)

1/2 cup oil or melted butter

1/2 cup honey

1 cup coconut

1 T Cinammon

1 T Vanilla

1 cup slivered almonds

(optional) dried fruit, chocolate chips, extra nuts,

Mix all ingredients except for the optional add-ins together in your crockpot and cook on high for 3-4 hours stirring every 30 minutes or so. Cover but make sure you vent with a chopstick (or spoon) so that you don't get soggy granola. When golden brown and cooked thoroughly, add any extra stuff you want (chocolate chips, dried fruit, extra nuts, etc.). The best part about making your own granola is that you can customize it to your tastes perfectly! Pour it onto a a piece of waxed paper or parchment and allow to cool thoroughly. Store in an airtight container for several weeks or freeze to eat later.

Coconut Bark Almond Joy

With the concept of real food in mind as well as this being the day of the Almond I thought it would be a great time to share this recipe for coconut bark almond joy recipe from real food living

•6 Tablespoons coconut oil, organic, virgin, expeller-pressed

•1 teaspoon vanilla extract

•1 1/2 Tablespoons unsweetened cocoa powder (my family likes less – I use 1 Tablespoon for their version and 1 1/2 for mine)

•1/2 teaspoon xylitol or stevia – more to taste (experiment with your own family preferences) –OR– 1 Tablespoon pure maple syrup (My kiddoes like it MUCH sweeter and I use Agave Nectar for them, about 3 Tablespoons per batch.)

•2 Tablespoons unsweetened shredded or chopped coconut

•1/4 cup ounces almonds, raw, chopped

Measure the coconut oil (solid) and melt. Whisk in vanilla, cocoa and sweetener until COMPLETELY dissolved. Failure to do this will result in separation and an oily top. Whisk in remaining ingredients and again, make sure they are completely incorporated. Pour mixture into pan and tip pan to evenly spread to even thickness. (I use an 8 x 8 cake pan lined with parchment or 9 x 13 pan for double batch.) Place pan in freezer on level shelf and let sit 10 minutes (longer for double batch) or so. It will harden quickly and you simply snap off the desired amount to eat. Keep cold.

2 carrots, julienned or grated

3 cloves garlic

1 tablespoon grated ginger (find it already grated in a jar or grate your own)

1 head broccoli broken into florets or 4 cups frozen broccoli florets

At this point, bring pot of water to boil and add soba noodles. They need only about 4 minutes to cook; have colander waiting for them so they don’t overcook.

3.Stir garlic and ginger into beef and cook another minute. Add broccoli and beef stock and continue cooking until broccoli is tender and bright green. Stir in soy sauce and sesame oil. Make sure all is hot.

4. Drain noodles when they are done and place about 1 cup noodles in each of 4 bowls. Divide beef and broccoli mixture evenly among bowls. Garnish each plate with lemon zest and serve immediately

February is Dental Month

Our childrens teeth are important they are one thing that we can not purchase more of if they go bad. They are valuable and should be cared for before they are ever present in a childs month. Starting when they are young after nursing a warm cloth should be used to wipe the childs gums off. My daughter did this with her 2 year old and now has not trouble taking her to the doctor. Now that she has a new baby she will follow this procedure again. Here is a childs toothchart that I admire as it allows you to know what tooth or teeth your child has and what still needs to come in

Unforgettable Nat King Cole

February 16 National Almonnd Day

Almonds have been around for centuries. They were mentioned in the old testament of the bible and spoke of it as symbolism of divine approval. Romans would shower newlyweds with almonds as a sign of fertility charm. Almonds were also shared by explorers who helped to spread their growth. Explorer  Franciscan Padres brought the almond tree from Spain to Americas where they eventually became a strong resource. The custom of almonds at weddings has survived but now are given to guest Almonds are hidden inside a sweet cinnamon flavored rice pudding in Sweden as a Christma custom The one that finds it will have good luck for a year. On this the day of the Almond I thought I would share some delicious recipes using almonds.

Toasting almonds is easier than one normally thinks and helps to intensify the flavor. Toasted almonds are less likely to sink in cake and bread batter so many recipes call for toasted almonds. Here is two methods

Saucepan method:

Place almonds in a heavy, ungreased skillet. Stir often over medium heat until golden brown.

Oven method:

Preheat oven to 350 degrees F. Spread nuts in one layer on ungreased shallow baking pan.
Bake for 10 to 15 minutes, stirring occasionally, until golden.

Microwave method:

Place 1/2 cup slivered almonds and 1 tablespoon margarine or butter in a 9-inch microwave-proof pie plate.  Microwave on high, stirring every minute until brown, 4 to 5 minutes.

Almond Amaretto Bars
•1 cup (2 sticks or 16 Tablespoons) ice cold butter, cut into cubes

•1/2 teaspoon salt

•1/2 cup powdered confectioners' sugar

•2-1/4 cups all-purpose flour, divided use

•4 eggs, slightly beaten

•2 cups granulated white sugar

•1/3 cup amaretto (almond) liqueur

•1/4 teaspoon almond extract

•1 cup sliced almonds

Preheat oven to 350 F. Line 9- x 13-inch baking pan with nonstick foil. Place butter, salt, powdered sugar, and 2 cups of the flour into a food processor. Pulse until a soft dough forms. Do not over-process. Press dough evenly into the bottom of the prepared pan. Bake for 15 to 20 minutes, until golden brown. Remove from oven and reduce oven temperature to 325 F. Place remaining 1/4 cup of flour, eggs, granulated sugar, amaretto, and almond extract in a large bowl. Beat on medium speed until smooth. Pour evenly over the baked crust and sprinkle with almonds. Bake an additional 30 to 35 minutes, until filling is firm. Cool to room temperature. Lift cookie bars out on the foil and cut to desired size to serve.

Yield: 24 to 36 bar cookies, depending on cut size
