One dish that i love to bring to summer time get together's is Texas Cowboy Caviar. Simple to make and it seems to be a favorite where ever we go. You can shake up the recipe and make it your own each time you make it . Turn up the heat, turn down the heat, great for garden veggies to be added, or switch it up however you like it.
Texas or Cowboy Caviar
Texas or Cowboy Caviar
- 2 15 ounce cans black beans, drained and rinsed
- 1 15 ounce can corn, drained
- 1 cup red onion, diced
- ½ cup jalapeno pepper, diced
- ½ cup cilantro, chopped
- ½ cup fresh lime juice
- ¼ cup olive oil
- 2 cloves garlic, minced
- ¼ teaspoon ground cayenne (more or less to taste)
- salt & pepper to taste
Instructions
- Combine all ingredients in a large bowl.
