Swedish Ginger Cookies
1 cup margarine, softened
1 1/2 cup sugar
1 egg, beaten
2 tbsp dark corn syrup
1 tbsp water
1 1/2 tbsp orange zest
3 1/4 cups flour
2 tsp baking soda
2 tsp cinnamon
1 tsp ground ginger
Garnish: sugar
Beat together the margarine and sugar in a large bowl.
Add the egg.
Beat until light and fluffy.
Add the corn syrup, water, and zest.
Set aside.
Sift together the flour, baking soda, and the spices.
Gradually add to the margarine mixture.
Roll the dough into walnut-size balls.
Place on ungreased baking sheets.
Press a fork dipped in sugar onto the cookies to flatten.
Bake at 375 F for 8 to 10 minutes.
