Double Peanut Scotchies
1/2 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar, lightly packed
1/2 tsp baking soda
1/2 tsp vanilla
1 large egg
1 1/2 cup flour
1/2 cup peanut butter (smooth or crunchy)
1 cup butterscotch chips
Heat the oven to 375 F. In a large bowl, cream the butter and both of the sugars. Add the egg, vanilla, and baking soda. Stir in the peanut butter. Stir in the flour. Add the morsels.
Drop by tablespoonfuls onto nonstick baking sheets. Use a fork to make crisscross patterns. Sprinkle with the sugar. Bake for 9 to 10 minutes. Allow to set before removing.
Makes 9 to 12 large cookies.
