Mostaccioli Bake Recipe


8 ounces uncooked mostaccioli


1 egg

1 egg white

2 cups (16 ounces) 1% cottage cheese

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

1 cup (4 ounces) shredded part-skim mozzarella cheese, divided

2/3 cup shredded Parmesan cheese, divided

1/3 cup minced fresh parsley

1/4 teaspoon salt

1/4 teaspoon pepper

2-1/2 cups meatless spaghetti sauce, divided

Cook pasta according to package directions. Meanwhile, in a large bowl, combine the egg, egg white, cottage cheese, spinach, 2/3 cup mozzarella cheese, 1/3 cup Parmesan cheese, parsley, salt and pepper; set aside. Drain pasta; stir in 2 cups spaghetti sauce. Layer half of the pasta mixture in a greased 11-in. x 7-in. baking dish coated with cooking spray. Layer with spinach mixture, remaining pasta mixture and remaining spaghetti sauce. Cover and bake at 350° for 35-40 minutes or until bubbly. Uncover; sprinkle with remaining mozzarella and Parmesan cheeses. Bake 5 minutes longer or until cheese is melted. Yield: 8 servings.

Chocolate-Raspberry Mousse Cake


This three-layer cake uses ganache in two different ways, showing off its versatility. It’s whipped to increase the volume, creating a filling that’s lighter in color and texture. It’s also spread directly over the top of the cake for a thick, dark frosting. Make the cake a day ahead so it has time to set up before being served.




CRUST

1 1/2 cups chocolate cookie crumbs*

6 tablespoons unsalted butter, melted

1/4 cup raspberry preserves



FILLING

8 oz. semisweet chocolate, chopped

2 tablespoons raspberry flavoring syrup, divided**

2 1/2 cups whipping cream, divided

1 tablespoon sugar



TOPPING

6 oz. semisweet chocolate, chopped

3/4 cup whipping cream



1. Heat oven to 375°F. In medium bowl, stir together cookie crumbs and melted butter. Press into bottom of 9-inch springform pan. Bake 10 minutes or until set. Remove from oven; gently spread preserves over crust. Cool completely on wire rack.



2. Meanwhile, place 8 oz. chocolate and 1 tablespoon of the raspberry syrup in large bowl. Heat 1 1/2 cups of the cream in medium saucepan over medium heat or in microwave on high until cream comes to a boil. Immediately pour cream over chocolate; stir until smooth. Let stand until cool but still liquid (about 65°F.). (To speed up process, place bowl with chocolate in bowl of ice water; stir constantly.) Beat at medium speed 2 to 4 minutes or until slightly soft peaks form; spread over crust. Refrigerate.



3. In large bowl, beat remaining 1 cup cream, remaining 1 tablespoon raspberry syrup and sugar at medium speed until firm but not stiff peaks form. Spread over chocolate filling. Refrigerate.



4. Place 6 oz. chocolate in large bowl. Heat 3/4 cup cream in small saucepan over medium heat or in microwave on high until cream comes to a boil. Immediately pour cream over chocolate; stir until smooth. Cool until slightly thickened but still pourable (about 75°F.). Spoon over raspberry filling. Cover and refrigerate until set, at least 8 hours or overnight. (Cake can be made up to 2 days ahead.)



5. To easily cut cake, leave cake in springform pan; use hot dry knife to cut through top layer. Refrigerate. When ready to serve, remove springform pan ring; slice completely. Store in refrigerator.



TIPS *Look for 100-percent chocolate cookie crumbs, such as the Oreo brand, which are located in the supermarket baking section near graham cracker crumbs or in the ice cream topping section. If you can’t find them, substitute crushed chocolate wafer cookies.

**Raspberry flavoring syrup often is used to flavor coffee, so look for it in the gourmet coffee section of the supermarket.

Petite Sweet Soaps
We were able to review the adorable Petite Sweet Soaps. The little candies reminded me of yesterday and while very attractive I knew they would last longer than an equally beautiful piece of candy would. Creating the soaps was a fun time The kit provided was easy to use and I had no trouble creating the goodies with my teens. I would say that with younger children the kit may be more of a team work with adult with the adult leading the child. The delicate candy soaps were created fairly easily and looked great I had to warn a few individuals not to eat it because it is soap and not the candy they may think it is.

Slow Cook Candy

1 16 oz. jar roasted, unsalted peanuts


1 16 oz. jar roasted, salted peanuts

1 12 oz. package semi-sweet chocolate chips

1 bar (4 ozs.) german chocolate, broken into pieces

3 lbs. (two 24 oz. pkgs.) white almond bark, broken into pieces

1Put ingredients into a 4 or 5-quart crockpot in EXACT order as listed. Cover and cook on low 3 hours. DO NOT remove lid! Turn off and allow to cool slightly. Mixture will not be melted but will be soft. Mix thoroughly and drop by teaspoon size cookie dropper or a teaspoon onto wax paper. Let cool thoroughly. Makes approximately 150 - 170 pieces. NOTE: This candy is made best by following the recipe to the letter. Make other variations and changes at your own risk, as this is the voice of experience speaking. Please take into consideration that it may alter the quality of the finished product. Thank you and LOL!

Happy Birthday to my Daughter

Grateful for a Bright Future

Today is my daughters 20th birthday 20 years ago around 9:00 p.m I was headed into surgery. She was not meant to be here yet but decided to come a bit early. She has always been that way always a little bit ahead of her time. That is part of what I am thankful for both my daughter but also her grace that she has.

Another note of thankfulness is that my grandson may be born as early as Thursday He is all ready 9+ lbs. and the doctor thinks mama is ready and the wee one is ready to be introduced to the earth. Oh how thankful I am that there will be a new member of the family born rather soon. I am also thankful that I can rest assured that my grandchildren will be raised by loving parents in a Christian family.

These two one born 20 years ago and the other to be born very soon helps me to be thankful that my future looks very promising

Time To Eat Out As A Family

Monday Menu Planning

Thanks to some rather great sales that I found at the supermarket Saturday my menu looks very interesting and teen pleasing I am sharing them on the menu plan monday at organized junkie .com

Monday: Doritos Taco Salad
3/4 pound ground beef, browned and drained

5 Roma tomatoes, finely chopped
2 small yellow onions, minced
2 garlic cloves, minced
1 large jalapeno pepper, seeded and finely chopped
1 cup chopped fresh cilantro
1 tablespoon cumin
1 teaspoon coriander
1 head iceberg lettuce, finely chopped
1- 15oz. can black beans, drained and rinsed
3/4 cup crumbled fresh white cheese (queso fresco, Cotija, Panela, Feta)
1 cup crumbled Doritos nacho cheese (more to serve on the side)
Olive oil
Salt & Pepper

FOR THE DRESSING:

1/4 cup canola oil
1 lime, juiced
1 teaspoon honey
1 teaspoon cumin
salt & Pepper

Coat the bottom of a skillet with some olive oil. Heat and add half of the minced onion. Cook, stirring occasionally, until onion starts to brown, about 7 to 8 minutes. Add the garlic and cook for 1 to 2 minutes. Add the browned beef, cumin and coriander. Mix well. Add half of the tomatoes, half the jalapeno pepper and half of the cilantro, mix well, and cook for and additional 15 minutes. Season with salt and pepper. Remove from heat and cool down completely. in a bowl mix together the black beans, remaining minced onion, remaining tomatoes, remaining jalapeno and remaining cilantro. Season with salt and pepper and mix well. Whisk together the oil, lime juice and honey. Add the cumin and season with salt and pepper. In a large bowl, mix together the lettuce and the bean mixture. Add the cheese, the cold meat and the crushed Doritos. Drizzle the dressing on the salad and toss well. Serve with extra Doritos on the side.

Tuesday: Chilli

1 Medium Onion Chopped

1-2 Bell Peppers Chopped
2 Cloves of Garlic Diced
1 Tablespoon Olive Oil
1 lb of Ground Beef Browned
1 can of Kidney Beans
1 can of Chick Peas
1-3 Tbsp of Chili Paste
1 Can of Diced Tomatoes
1 Can of Tomato Paste
1 tsp ground Cumin
1 Tbsp Molasses
Salt and Pepper to Taste

Heat olive oil in the bottom of a large pot, saute onions, bell peppers, and garlic until softened. Add in browned beef beans, tomato and tomato paste, chili paste, salt and pepper, cumin and molasses. Keep heat on medium until the chili comes to a simmer. Turn down heat to low, keep covered and cook for 1-2 hours. Enjoy.

Wednesday: meatloaf
2 eggs

1/2 cup tomato juice or V8
1/4 cup ketchup
1 Tbs Worcestershire sauce
1/2 tsp each salt and pepper
1 cup bread crumbs
1/2 cup quick cooking oatmeal
6 cloves garlic, minced
1/2 cup fresh parsley or 1/4 cup dried
1 carrot, minced
2 ribs celery, minced
1/2 green pepper, minced
1 onion, minced
1 pound ground beef

Preheat oven to 350 degrees. Mix together the eggs, tomato juice, ketchup, Worcestershire sauce, salt, and pepper. Stir in the bread crumbs and oatmeal. You can chop the vegetables by hand or in a food processor. Then mix them into the mixing bowl and stir well. Finally, add the meat and mix together with your hands. (If you’d rather use a mixer, just be sure not to overmix.) Spray a loaf pan with cooking spray and spread the meat in it. 
Top with your choice of toppings, like 2 Tbs brown sugar and 2 Tbs mustard, or 1/4 cup ketchup and 1 Tbs red wine vinegar.

Cheesy Potatoes:

Cheesy Potatoes


1 Package of Frozen Hashbrowns
1 (10 oz) can Cream of Potato Soup
1 cup of Sour Cream
1 bag (2 cups) of Shredded Cheddar Cheese
Salt an Pepper to taste

Mix all ingredients together in a large bowl. Spray a 9X13” pan with cooking spray. Spread potato mixture into pan. Bake for 1 hour at 350 degrees.

Thursday: sloppy joes and fries

1 pound lean ground beef

1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/2 teaspoon garlic powder
1 teaspoon prepared yellow mustard
3/4 cup ketchup
3 teaspoons brown sugar
salt to taste
ground black pepper to taste

In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids. Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.

Friday: hamburger goulash

•1 pound Hamburger

•1 whole Small Onion, Diced
•3 cloves Garlic
•14 ounces, weight Diced Tomatoes
•6 ounces, weight Tomato Paste
•2 cans Water (use Tomato Paste Can To Measure)
•¼ teaspoons Italian Seasoning
•Salt And Pepper, to taste
•1-½ cup Large Elbow Macaroni

Cook hamburger and drain. Dice onions and garlic and place in the skillet with the cooked meat. Cook on low for about 3 minutes. Add diced tomatoes, tomato paste and 2 cans of water (use the tomato paste can to measure). Add salt, pepper and Italian seasoning (you can add more Italian seasoning).
Simmer for 5 minutes. Add dry macaroni and simmer for at least 10 minutes, covered. When pasta is cooked, it is ready to serve. This recipe is also great as leftovers (you can always double the recipe).
