Tip and Recipe Fried Green Tomatoes


Here is a quick tip that you may not need just yet but place it in a great place so when you get ready to fry those early green tomatoes.

Tip: slightly salt the tomatoes to help dry up the moisture of the tomato before breading. This will help the breading stay on the tomato slice to fry and get that lovely crispy

FRIED GREEN TOMATOES

- 4 green tomatoes, thickly sliced
- 1/2 cup all purpose flour
- 1/4 cup yellow cornmeal
- 1 egg
- 1/3 cup milk
Salt and pepper, to taste
Oil, for frying


Preheat oven to 200ºF.
Mix flour, corn meal, salt and pepper in a small bowl. In a separate bowl, beat egg and milk until combined.
Place a frying pan over medium heat. Add enough oil to the pan to cover the bottom 1/4" inch deep. (If using an electric frying pan, heat the oil to 350ºF to 375ºF.)
Dip sliced tomato into egg mixture covering both sides; then dip sliced tomato into flour mixture covering both sides.
Place prepared tomato into preheated frying pan. Cook each side of the tomato until golden brown and crusty. Keep fried tomatoes in preheated oven until ready to serve.

Earth Day Cupcakes : Paula Dean Recipe



8 ounces sour cream
1 tablespoon vanilla extract
2 cups all-purpose flour
2 1/4 cups sugar
3/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup strong brewed coffee
1 cup vegetable oil
3 large eggs
Chocolate Fudge Frosting:
1 cup sugar
1 cup heavy whipping cream
5 (1-ounce) squares unsweetened chocolate
10 tablespoons butter
1 cup confectioners' sugar
Topping:
30 to 40 chocolate sandwich cookies
36 gummy worms




For the cupcake:
Preheat oven to 350 degrees F. Line 3 cupcake pans with cupcake liners.
In a large bowl, combine all the ingredients. Beat at medium speed with an electric mixer until smooth. Pour into cupcake liners about 2/3 full. Bake for 16 to 18 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove from pans, and let cool completely on wire racks.

For the frosting:
In a medium saucepan, combine sugar and cream. Bring to a boil over medium-high heat; reduce heat, and simmer for 6 minutes, stirring frequently. Remove from heat; add chocolate and butter, stirring until melted and smooth. Let cool for 10 minutes. Whisk in confectioners' sugar. Let mixture cool until it reaches a spreadable consistency, then top cooled cupcakes with frosting.

For the topping:
Place cookies into a resealable plastic bag. Crush cookies with hands to make a "dirt" consistency. Sprinkle frosting with cookie crumbs, top with gummy worm and enjoy

Organically Grown review

Our celebration for Earth week that leads up to Earth Day on the 22nd has been going great so far. This is my younger brother at our last family get together He normally always has paper in hand as he is a self made salesman of his own kind. I am proud of him as he went back to school this past year and is trying really hard. I am sure that my dad would be very proud of him.

Raspberry Granola Bars

Raspberry Granola Bars

1 egg white
1/4 cup margarine or butter, softened
1/4 cup packed brown sugar
1/4 cup canola oil
1 teaspoon vanilla
1 1/4 cups Gold Medal® all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups Cascadian Farm® organic oats & honey granola
1 cup Cascadian Farm® organic raspberry fruit spread

Heat oven to 375°F. Grease 8-inch square pan. In large bowl, beat egg white, butter, brown sugar, canola oil and vanilla with spoon until creamy. Beat in flour, baking powder and baking soda. Stir in granola. Press about two-thirds of the dough in bottom of pan. Spread spreadable fruit over dough to within 1/2 inch of edges. Crumble remaining one-third of dough on top of the fruit. Bake 25 to 30 minutes or until golden brown and set. Cool completely, about 30 minutes. For bars, cut into 4 rows by 4 rows.

Bug Catcher


I can remember catching lightning bugs in the spring, summer and late fall. We always had lots of fun but never had a bug catcher that looked like this. To make your special one a bug catcher you simply have to visit Parents online here which states that to make a bug catcher you:

Rinse a plastic bottle and let it dry. Draw a rectangle on one side of the
bottle and cut it out with a knife. Cut wire screen to cover the opening (but
don't attach it yet). Trim a colorful piece of foam to fit around the screen.
Let your child fill the bottle with sticks, rocks, and other objects to make a
habitat for his bug collection. Use glue to attach the screen and frame over the
opening. Twist off the lid to let the bugs into their new ho
me.

Easy Skillet Cordon Blue


1/2 cup Italian-seasoned breadcrumbs
1 teaspoon pepper
1/2 teaspoon salt
8 chicken tenders (about 1 lb.)
1 tablespoon butter
1 tablespoon olive oil
8 Canadian bacon slices, cut into thin strips
4 Swiss cheese slices, halved

Combine breadcrumbs, pepper, and salt in a large zip-top plastic freezer bag. Rinse chicken tenders, and add to freezer bag. Seal bag, and shake to coat. Melt butter with oil in an ovenproof skillet over medium heat. Cook chicken 3 1/2 to 4 minutes on each side or until done. Arrange Canadian bacon strips over chicken in skillet, and top each with 1 cheese slice. Broil 5 1/2 inches from heat 2 minutes or until cheese is melted

This recipe comes from a rotarian cookbook from the early 1970's and looks like it may of been from California. I found it in Illinois at a little thrift shop, me and my love for cookbooks.


LIDO Salad

2 packages of strawberry jello

1 package of lemon jello

2 packages of frozen strawberries

1 #2 can crushed pineapples

2 mashed bananas

1 package pecans

1 large carton sour cream


Dissolve the jello in 3 c boiling water Add the frozen berries. Chop up berries in the hot mix. Then add fruit and nuts. Put 1/2 mix into a large flat container. Chill and let harden. When firm "frost" with large carton of sour cream Pour over 1/2 mix on top and chill.

Cleaning out the Freezer

This week I plan to use what I have in the freezer. We have been doing great this week. Here are the meals that I have planned:

barbq chicken, potato's
roast, veggies,
leftover night
sweet and sour chicken, rice
bacon sandwiches, chips
spaghetti
beef and noodle

sounds decent yet no need to go to the store yet. This is the last menu that I can squeeze out so I will have to go to store next week for sure. There is $100 in grocery budget which is great so we will be fine and surprisingly better than I thought.

Dolly Parton God's Coloring Book



I shared a term in a post the other day that I had heard a long time ago "God's Coloring Book" and was not for sure where I had heard it. SO upon doing a bit of searching I realized that it was from a Dolly Parton song that I had heard many years ago (1977) as a young girl I loved Dolly and still do and my mother would buy me records that I would play over and over til I knew the songs by heart. I love this song and hope you like it as well. This is what moves me today in the beautiful day that God has provided us. What moves you? Share here

Mexican Lasagna

MEXICAN LASAGNA


3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (15-ounce) can black beans, drained
1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped

Preheat the oven to 425 degrees F. Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste. Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.
