Shamrock Snack

Shamrock Snacks

Shamrock Snack


- Pkg of Yogurt Pretzels
- White Chocolate Chips (I used about 1/2 a bag, or 1 cup)
- Green Frosting (I made my own, using a great recipe from Allrecipes.com found HERE)
- Green Sprinkles

Place about 1/2 cup of white chocolate chips in a glass dish, and microwave for 30 seconds at about 50% power.  Stir.  Do this two or three times, until you are able to completely melt the chips.  DO NOT OVER HEAT!

You should be able to stir the chocolate smooth and free of lumps.

2)  Line a surface or baking sheet with wax paper.

3)  Dip the bottom half of a pretzel in the melted chocolate, making sure each side is nicely coated.  Place the pretzel onto your wax paper.

4)  Repeat Step 3 with the second and third pretzels, laying each to form the shape of a shamrock.

5)  If you have broken pretzels, you can use them for the stem of your shamrock.  If not, you can carefully cut pretzels like we did below.

 6)  Dip the end of the shamrock stems into the melted chocolate, and put into place on the wax paper.

 Here is what your shamrocks will look like when assembled.  Some of them, we chose to lay the stem flat, while others (like this one below) we had placed so that it stood off of the wax paper.

And we thought we'd try to to make some four-leaf clovers while we were at it... of course, right?

7)  Time to mix up some frosting!  I used a great Sugar Cookie Icing recipe from Allrecipes.com, found HERE.  I like this frosting because it sets hard, and is easy to whip up.  I doubled the recipe, and found that I had twice as much frosting as I needed.  So if you use one package of yogurt pretzels, you can expect to follow the recipe as it is written.
Icing Recipe:
- 1 cup powdered sugar
- 2 tsp milk
- 2 tsp light corn syrup
- 1/4 tsp almond extract (or vanilla)
- we added green food color

I added it to a piping bag with a small tip, but you could just as easily use a Ziploc bag and cut a small tip off of the corner.

8)  Outline your shamrocks with the icing.  Add your sprinkles soon after, before the frosting begins to set!

Winter Time Prep with a Snack and dressing ideas

Baby It's cold out there!!!!



I am not sure where you are but I can say for sure that here where I live it is cold with several inches of snow on the ground and more promised to come. So if you have to go outside for any reason it is best that you dress to say warm and safe. If possible eat a snack as it will help to fuel your body. A good snack would be something like 


7 cups CHEX cereal 
1 cup mixed nuts or peanuts 
1 cup pretzels 
3 tablespoons melted butter 
1/4 teaspoon garlic salt 
1/4 teaspoon onion salt 
2 teaspoons lemon juice 
4 teaspoons worcester sauce 
1 envelope Hidden Valley Ranch Dressing mix (in the salad dressing aisle) 

Combine cereal, nuts, and pretzels in a bowl and set aside.  

Stir together the remaining ingredients.  Once combined, gently stir the liquid mixture into the cereal mixture until well coated.

Pour mixture onto a jelly roll pan or 13x9 baking pan. 


Bake at 250 degrees for 45 minutes, stirring every 15 minutes.  Spread of paper towels to cool and store in an airtight container.  

Now that you have the perfect winter snack you will want to grab some sunscreen to help protect our children from the bright suns ultraviolet rays. Dressing in layers will help keep us warm. Its a good idea to use enough layers so that if the top layer gets wet you can shed it and still stay warm. Cotton clothing is not the best idea as it does not keep the body very warm. Wool, denim and other fabrics is perfect for layering. Long underware, turtle necks and sweaters are perfect for layering and helping to keep you toasty warm.  Warm socks and boots are also part of the cold weather attire and to top it all off a hat will help keep the warmth in.

Happy Presidents Day


Presidents Day is always on the third monday of February. This year the date falls on February 16th. President's day combines both George Washington's and Abe Lincoln's birthday and was established in 1968 when it was decided to change several federal holidays. The idea was to establish this law in 1971 so that all would fall on a monday and create a three day weekend. Presidents day was created to pay honor to all the men who have served as president.


Honor the Presidents of our country with a patriotic parfait.  Pick up strawberry jello, blueberry and cool whip at the grocery store. And celebrate the Presidents with your kids.  Have a prize for the kid that knows the most about our countries great leaders.



Prep Time:
 10 minutes
Chill Time: 6 hours

Ingredients

1  4-oz. package red, flavored instant gelatin (such as cherry or strawberry Jello)
40  blueberries
1 tub of cool whip
Make Jello as directed, chill for at least 4 hours.  Spoon 1/4 cup Jello into each glass. Then spoon in 1/4 cup cool whip over Jello and smooth tops. Slowly spoon 1/4 cup Jello over cool whip in each cup (you will use up Jello) and chill until firm, 2 hour.  Top with final layer of cool whip. Divide blueberries among parfaits and serve.

Gumdrop Cookies

3/4 cup shortening
1 cup sugar, divided
1/2 teaspoon almond extract
1-3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped fruit-flavored or spiced gumdrops
2 egg whites
Directions
1. In a large bowl, cream shortening and 3/4 cup sugar until light and fluffy. Beat in extract. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in gumdrops.
2. In a small bowl, beat egg whites until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form. Fold into dough.
3. Drop by heaping teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-15 minutes or until golden brown. Cool for 1 minute before removing from pans to wire racks to cool completely. Yield: 3-1/2 dozen.

National Wedding Month

With all the love in the air for valentines day. It seems no surprise that this romance month is also the National Wedding Month. In Most of the country it is frigidly cold and romance helps keep it warm but I would have thought that one of the spring or early summer months would have been the date to celebrate such an occasion. However, I was wrong and the romance brings about a loving moment of a wedding.

Our family will be the guest to several weddings this year, (4) in fact or at least we think so. Our middle daughter will be the bride to an out door wedding in the Cave In Rock state park here in Illinois with a pirate kind of theme but a ready to rumble theme as well. She is in the process of making all of her decor , invitations and everything. We will celebrate with a spring picnic theme.

My niece will be the next bride and will celebrate a heated wedding in mid August. We know the bride will glisten in the heat of the summer but the sparks of love will be bright as well. The little home town wedding will be catered by her mom and her dad will proudly walk her down the aisle

Our eldest daughter will have a fall wedding with lots of fun and romance. She loves the fall season and looks forward to wearing her colorful black and white dress. This will be her second wedding .I believe that it will be beautiful and look forward to it

My youngest son recently asked his gf for a few years to marry him but they have not set a date and are not sure if it will be soon or not. I just know that whenever it happens they will be ready and I will be helping whereever needed.

National Plum Pudding Day

Celebrated on February 13th, National Plum Pudding Day is a day to learn more about this delicious dessert. A favorite dessert my dad had was that of plum pudding. My grandmother would often make it for him as a surprise. As a kid I could never understand what the fuss was all about. My grandmother made many delicious goodies but to daddy it was the plum pudding. 
If you have never seen or tasted plum pudding it is a round , thick, sweet and  delicious. Centuries ago it was a treat that kings and queens would dine on. The coffee cans that grandmother collected in preperation for her baking time was only the start of plum pudding. 



* Six (6) candied and sliced pineapple rings
* 1 lb. whole candied cherries
* 1 lb. raisins, dark and golden mixed
* 1 lb. dates, pitted and chopped
* 1 cup chopped citron
* 1/2 cup each chopped, candied orange and lemon peel

Put the prepared fruit into a large bowl.

* 2 cups sifted flour
* 1/2 cup white sugar
* 2 teaspoons cinnamon
* 1-1/2 teaspoons baking soda
* 1 teaspoon salt
* 1/2 teaspoon allspice
* 1/2 teaspoon cloves

Sprinkle 1/2 cup of the flour over the fruit and set aside. In a second bowl, sift the rest of the flour together with the soda, salt and spices, and set aside.

* Three (3) eggs
* Juice of one lemon
* 1-3/4 cups buttermilk
* 1/2 cup oil
* 1/4 cup orange juice
* 1/4 cup brandy
Beat the eggs. Then add the buttermilk and remaining ingredients to the egg mixture, and mix together well. Now blend the liquid mixture with the flour mixture until it forms a batter.
Pour the batter into the large bowl containing your fruit. Use a wooden spoon to stir and mix well, making sure the fruit is well-covered with batter. (now here is something that I will never forget grandma using all those coffee cans) Grease 1 lb coffee cans and pour the mixture into each until they are about 3/4 full. Cover each one securely with foil, and place in a pot or steamer. Steam in any covered pot or canner, allowing the water to rise to no more than halfway up the filled tins.
Steam your puddings in consistently heated water for at least 4 hours. Check a tin periodically to note when the steaming is complete, when the dessert no longer appears creamy. When your plum pudding is steamed, remove it to a counter or dry shelf and let it cool for about 30 minutes. 
While the puddings are cooling, cut up cheesecloth pieces amply enough to securely wrap around the individual puddings, and soak each cloth in brandy. (Grandma only did this step for the grown ups I believe she used a sweet syrup mixture for the kids but can not find her recipe to share)
Carefully remove each cooled pudding from its mold. Wrap each pudding in a cheesecloth. Over wrap each packet in aluminum foil, then set them to mature in a corner of your refrigerator for two weeks to a month. When you’re ready to serve, steam each pudding again for about an hour.

*  Plum pudding, also know as Christmas pudding, is a steamed or boiled pudding usually served during the holiday season.
*  In many recipes, plum pudding actually contains no plums.  The reason for this is in the 17th century, plums were referred to as raisins or other fruits.
*  The name Christmas pudding is first recorded in 1858 in a novel by Anthony Trollope.
*  Plum  pudding is usually made up of nutmeg, raisins, nuts, apples, cinnamon and dates along with other ingredients.
*  In England, traditionally every person in the home holds onto the wooden spoon together to help stir the batter.  While they are stirring, they also have to make a wish!
*  Plum pudding has also been known to be called plum duff.

Happy Birthday Abe and a recipe that may of been his BDay Cake







Cake
  • 1 cup (2 sticks) butter
  • 2 cups sugar
  • 3 cups cake flour
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 1 cup unsalted almonds, chopped
  • 6 egg whites
  • ¼ teaspoon salt
Frosting
  • 2 cups sugar
  • 1 cup water
  • 2 egg whites
  • ½ cup candied cherries, chopped
  • ½ cup candied pineapple, chopped
  • few drops vanilla or almond extract

Preheat oven to 350 degrees. Cream butter and sugar until light and fluffy. Sift together flour and baking powder; remove 2 tablespoons and set aside. Add sifted ingredients, alternating with milk, to creamed mixture. Stir in vanilla and almond extract. Combine almonds with reserved flour and add to batter. Beat egg whites until stiff. Add in salt. Fold into batter. Pour into three greased and floured 8- or 9-inch cake pans. Bake for about 20-25 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool 5-10 minutes then remove from pans and cool on racks.
Tips & Notes Some historians say Mary Todd Lincoln didn't serve the cake with frosting, but it certainly adds great flavor! 
While cake is baking, prepare frosting: Combine sugar and water in a saucepan, stirring until sugar is dissolved. Bring to a boil; cover and cook about 3 minutes until the steam has washed down any sugar crystals that may have formed on side of pan. Uncover and cook until syrup reaches 238-240 degrees on a candy thermometer. Whip egg whites until frothy; add in syrup in thin stream, whipping egg whites constantly until frosting is spreading consistency. Mix in cherries, pineapple and vanilla or almond flavoring. Frost cake once it has cooled.

Paul Bunyan Day and a Delicious Bunyan Burger Recipe



Paul Bunyan Day is always on February 12th which is also his birthday. There are many states that celebrate Paul Bunyan day. Michigan, Minnesota, Oregan and California all observe Paul Bunyan day. Minnesota also has a Paul Bunyan theme park aka Paul Bunyan Land. 




Was Paul Bunyan a real person? Some say yes that he was a French-Canadian timber man named Fabian "Joe" Fournier. Fournier was to believed to be born in Quebec Canada and later moved to Saginaw, Michigan after the civil war and later hired as a foreman in the logging business. He was known as the top man in the logging area because of his size and talent with an ax 



The word "bunyan" sounds like the french-canadian slang word "bonyenne" which english translation means "Good Grief" which is often used when something extraordinary. The tale was shared by mouth and sometimes these tales get shared and changed as they spread. The first known publication of the Paul Bunyan tale was told by James MacGillivrary and later recorded and published by W. B. Laughhead in 1916.

Magic Cake

It's "magic" because cake and frosting are made together from one simple recipe


Frosting Ingredients

  • 1 (3-oz.) pkg. cream cheese, softened
  • 1/2 cup (1 stick) butter or margarine, softened
  • 1 1-lb. pkg. (approx. 3 3/4 cups) C&H® Powdered Sugar
  • 1/3 cup milk

Cake Ingredients

  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup water














Frosting Instructions

Preheat oven to 350°F. In large mixing bowl, beat cream cheese and butter at medium speed until smooth. Add confectioners' or powdered sugar alternately with milk, beating 1-2 minutes or until blended. Remove 1 cup frosting from bowl; set aside.

Cake Instructions

Grease and flour 8x8-inch square baking pan. With mixer at slow speed, add eggs to remaining frosting in mixing bowl. Add vanilla; beat until blended. In small bowl, combine flour, baking powder and salt. Add flour mixture to mixing bowl alternately with water and continue beating 1-2 minutes or until well blended.

Pour into prepared pan; bake 30-40 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely. Place cake on serving plate. Spread sides and top of cake with remaining frosting.

For Cupcakes:
 Follow cake recipe and then pour batter into 12 medium muffin cups lined with paper baking cups, filling 2/3 full. Bake 25-30 minutes or until cupcakes spring back when lightly touched in center. Remove from pan. Cool completely. Spread tops of cupcakes with remaining frosting.

Pepper Jack Cornbread


I am a bread lover and often eat it with my meal. After I recently found out that most our family both those born in the family and those that are new members love Pepper Jack cheese so this recipe would be delicious with stew, casserole, beans and so many other things. Enjoy!!


Pepper Jack Cornbread


  • 1 package Cornbread Mix
  • 2 tsp. sugar
  • 1/8 tsp. baking soda
  • 3/4 cup buttermilk
  • 1 egg
  • 3 Tbsp. chopped onion
  • 3/4 cup diced Pepper Jack Cheese (Monterey jack cheese with jalapeno peppers)
  • DirectionsPreheat oven to 425 degrees F. Generously grease 8"x8"x2" pan. Blend together cornbread mix, sugar and baking soda. Add remining ingredients and mix well. Pour and evenly spread batter in pan. Bake 23-27 minutes or until browned.
    To Double Recipe, bake in well-greased 9"x13"x2" pan, 23-27 minutes.
    For a crispy crust, heat well-greased pan in oven until sizzling hot. Fill with batter and bake.

    Have a Heart Sugar Cookies




    • 1 cup - butter or margarine, softened
    • 3/4 cup - firmly packed Domino® Light Brown Sugar
    • 3/4 cup - Domino® Granulated Sugar
    • 2 - eggs
    • 2 tablespoons - milk
    • 2 teaspoons - vanilla
    • 4 cups - all-purpose flour
    • 2 1/2 teaspoons - baking powder
    • 1 teaspoon - salt

    Glaze:

    • 1 - (1 lb.) pkg. Domino® Confectioners Sugar (approx. 3 3/4 cups)
    • 4-6 tablespoons - water or milk
    • Food coloring

    Instructions

    Beat butter and sugars together in large mixing bowl until light and fluffy. Add eggs, milk and vanilla; beat well. Stir together flour, baking powder and salt in small bowl; gradually add to sugar mixture. Cover and refrigerate dough 3-4 hours until chilled.

    Preheat oven to 375°F.

    On well-floured surface, roll out half of dough at a time, to 1/8 inch thickness. Cut into heart shapes. Bake on ungreased cookie sheet for 8-10 minutes or until lightly browned at edges. Cool. Decorate as desired.

    Makes about 7 dozen cookies.

    To Prepare Glaze:
    In large bowl, combine confectioners' sugar with water until mixture is desired consistency. Add more water for a thinner consistency and less for a thicker consistency. Add food coloring, a dash at a time, until desired shade.

    Raspberry Swirl Cheesecake


    Crust

    1 cup
    graham cracker crumbs (about 12 graham crackers) or chocolate wafer crumbs (about 26 chocolate wafers)
    3 tablespoon
    sugar
    1⁄4 cup
    butter, melted and cooled

    Filling

    3 package
    8 oz each cream cheese, softened
    1⁄2 cup
    sugar
    1 teaspoon
    vanilla
    3 tablespoon
    all-purpose flour
     
    eggs
       
    confectioners sugar


    To bake this raspberry swirl cheesecake recipe, preheat your oven to 350° F. Grease bottom of 9-inch springform pan and set aside. Combine crumbs and sugar in small bowl. Add melted butter and stir until blended. Press crumbs onto bottom of prepared pan. Bake 10 minutes. Cool completely on wire rack. To make filling, beat cream cheese and sugar in medium-size bowl with electric mixer until light and fluffy. Beat in flour. Add eggs and vanilla and beat until thoroughly blended. Carefully grease inside edge of pan above crust. Spoon half of batter over cooled crust. Spoon raspberry filling over batter and top with remaining batter. Cut through batter and filling with flat-bladed knife to create swirled effect. Bake 60 to 65 minutes or until center is set and top is golden. Cool completely in pan on wire rack. Refirgerate until ready to serve. To serve, run tip of sharp knife around inside edge of pan and release side of pan. Place the raspberry swirl cheesecake on serving plate. Dust top with confectioners sugar, if desired. Garnish with fresh raspberries, chocolate curls and whipped cream!
