FIVE STEPS TO HIGHWAY SAFETY

1. Don’t follow another vehicle too closely.
2. Pay attention – avoid distractions such as cell phones.
3. Turn the headlights on as dusk approaches or in bad weather. Don’t overdrive your headlights.
4. Make frequent stops. During long trips, rotate drivers. If you’re too tired to drive, stop and get some rest.
5. If you have car trouble, pull off the road as far as possible.

TRAVEL PREPAREDNESS TIPS Pay attention to the weather forecast for your destination. Travel and weather web sites can help you avoid storms and other regional challenges that could impact your safety. Other things you should do to prepare for your trip include:

1. Don’t let your vehicle’s gas tank get too low.
2. Carry a Disaster Supply kit in your trunk.
3. Let someone know your destination, your route, and when you expect to arrive. If your car gets stuck along the way, help can be sent along your predetermined route.

Strawberry and Cream Day


It is not a secret if you have visited my blog very often that I love strawberries.

 

As I have shared many times I grew up in a family that  tried and was successful at living off the land. While everything did not come from what we grew or raised anything that we could we did. That included our own strawberry patch out behind the house near the garden area. I can remember carrying for the berries and dad was always delighted when he found the first ripe berry. No matter how small or big it was it was the first and oh it tasted so good.




My love for strawberries has led me to share delicious berry recipes on my blog Annies Home. Recipes Such as

 
Strawberry Pretzel Dessert

 

 
Quick Strawberry Dessert

 

Today a new recipe to me as well a frozen strawberry and cream dessert. After all today is a day that recognizes strawberry and cream
 
servings: 9-12 Ready in: 40 minutes, plus 3 hours freezing
 


¼ cup pecans, toasted
4 whole graham crackers, broken into pieces
10 tablespoons butter, melted

1 cup all-purpose flour

1/3 cup brown sugar

2 egg whites
½ cup sugar1 cup heavy whipping cream
Juice from 1 lemon
4 oz. cream cheese, softened

2 cups strawberries, hulled and chopped

 

Preheat oven to 325 degrees F. Coat an 8x8-inch square baking dish with cooking spray and set aside. In a food processor, combine the pecans and graham cracker pieces. Process until finely ground. Add the crumbs to a large bowl, along with the butter, flour and brown sugar. Mix well. Spread the crumbs evenly on a rimmed baking sheet lined with parchment paper. Bake in the preheated oven for 20 minutes, stirring once half way. Meanwhile, in a medium bowl, combine egg whites and sugar. Using a hand-held mixer, mix on medium speed for 3 minutes. Add whipping cream and mix on medium speed for an additional 6 minutes. Add lemon juice and cream cheese and mix on low speed until creamy. Gently fold in strawberries with a spoon. Press half of the crumb mixture into the bottom of the prepared baking dish. Top with strawberry-cream mixture, followed by the remaining crumbs. Cover with foil and freeze for a
minimum of 3 hours before serving.

National Red Cross Day

Today, May 21st is National Red Cross Day Red Cross was founded by Clara Barton.



Clara Barton is a lady that should stand out in history as one of the most honored women in American History. She was brave enough to teach when teaching was a male dominated roll and was also the first woman to be employed by the federal government. Her roll in the civil war of taking supplies to the soldiers in the field took more than bravery. This roll may have been what helped her to establish the American Red Cross in 1881. For 23 years she would care for those in need and establish a new field of volunteer service.



Clara Barton worked  at the U.S. patent office when the civil war began. War brings along disorganization and a moment of craziness but Barton wanted to bring quick assistance to the men in need. Many of the men were hungry, some were wounded, and some were in need of bedding and clothing. Clara was surprised by the number of boy soldiers and some of which she had even taught. Clara and a group of women provided clothing, food and supplies to the sick. Some she gathered herself and others she appealed to the public for help. While she worked behind the scenes she eventually took supplies to the battle field hospitals as well. She earned the name of "Angel of the Battlefield"

 
 
 
Clara Barton visited Europe in 1869and was introduced to a field of service through the Red Cross in Geneva, Switzerland. The international red cross mission is to protect the sick and wounded during wartime without respect to nationality and also to give aide during neutral times as well. Barton would bring this idea to form an American Red Cross.

Some of My Favorite Female Singers




The supremes they were all together standing out there and doing it the best they could. With lots of heart breaks I am sure but they surely did leave a mark on all of us.



Loretta Lynn one of a kind in my book oh my loved her from the moment that I was old enough to start listening and following singers. A little country girl that went to the top of the charts. Who would of known? Only her dew. Recently had some friends to meet Loretta and they reported back that she is all that I thought she was a lovely lady with a voice of gold





That beautiful voice of Patsy Cline. One of the best voices that stood out and took attention from many. The tragic death that would end her life and career was one that will always haunt those that remembered and loved her.

1970s




Karen Carpenter oh what a voice and talent of playing drums she had. That soft soothing voice helped the Carpenters rise to the top. In the end it would be a fight that she would lose that would take Karen from all of us.



Olivia Newton John that voice that could change from love to fun to oh my letting go. While I was just a kid the movie Grease and Olivia Newton John were the popular things to talk about. The fun that was had back in those days innocent love.




Crystal Gayle younger sister of Loretta who also performed and had an awesome music career. I really like this video that helps show how her career started out.

1980s



Dolly Paton oh my did I love her and I always wanted her latest records when I was a kid and normally got them for birthdays, Christmas and special gift times Dolly faced many issues of her days but also had that sexy way of singing that made everyone (well lots) fall in love with her.




The ladies of heart helped me through my teen years with dreams. We were so aware of the world around of us and the innocence was starting to wear off. The dreams of the world we lived in, the boys we liked and so much more haunted my dreams in that little room that I shared with my sister

Go for a Ride and a Snack

May in national bike month. The time to get outside and burn a little energy and tone those muscles. I will always remember as kids never getting off our bikes for long. We would bike everywhere we went and then ride bikes with our friends when we got there. Do you recall ever using a wooden clothespin and a playing card to make your bike sound as if it was roaring or even better did your bike ever have one of the hand turning roaring machines? I certainly do, my bike was my machine. Each of my kids has had their own bike and this year my grand-daughter will get one as well.

Going on bike rides was something we did a lot of both as a kid and now. In fact hubby has requested that we get bikes this summer so we can take some leisurely bike rides. When going on these bike rides we may want to take a long a snack to help with our energy. A few great snack ideas would be

Peanut butter on graham crackers. The fat and protein found in peanut butter with carbohydrate rich graham crackers gives a punch to this snack

Beef Jerky has the fat and protein that gives energy. The salt common on beef jerky helps to keep electrolytes up.

Trail mix is often taken on many activity trips. Your favorite granola whatever it may be will be great on a bike trip. Pack it into your backpack or into a small bag that you carry in your pocket

A little treat  of gummy bears is also a perfect snack for a bike trip Gummy bears often sugar, a great taste. Also available but a bit more pricey are sport beans and energy gels that have a bit sodium and potassium.

Dried fruit also makes a nice convenient treat to take on a bike ride. Offering sugar that is needed to replenish energy, and provides important vitamins and minerals. Dried pineapple and banana chips are possibly the most common but there are others available as well.

Armed Forces Day




This is simply a day to salute sharply to all of the men and women in all branches of the service who protect our country and you. They can be called upon at a moment's notice to perform a risky and perilous mission for freedom and country. They train diligently both physically and mentally so they will be prepared to prevail in any mission they face.
Just how did it all begin? Well, each branch of the military had their own day of celebration. But, on August 31, 1949 then Secretary of Defense Louis Johnson announced the creation of Armed Forces Day. President Harry Truman also announced the holiday in a presidential proclamation on February 20, 1950. All branches of the military were asked to celebrate on this day and they complied on the first Armed Forces Day which was held the following year on May 20, 1950.

Coconut Macaroons

There are a few coupons out there for chocolate minis and kisses. On a search for new ways to use these candies I found this delicious recipe. Check them out see what you think I hope you enjoy


Coconut Macaroons


 1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
1 egg white, whipped
2 teaspoons vanilla extract
1 1/2 teaspoons almond extract
1 (14-ounce) package flaked coconut

 Preheat oven to 325°F. Line baking sheets with foil; grease and flour foil. Set aside.
In large bowl, combine sweetened condensed milk, egg white, extracts and coconut; mix well. Drop by rounded teaspoonfuls onto prepared baking sheets; slightly flatten each mound with a spoon.
Bake 15 to 17 minutes or until lightly browned around edges. Immediately remove from baking sheets (macaroons will stick if allowed to cool); cool on wire racks. Store loosely covered at room temperature.
Preparation Time
10 minutes
Macaroon Kisses: Prepare and bake as above. Press solid milk chocolate candy piece in center of each macaroon immediately after baking.

BARBQ or Grilling

What do you call it when you cook steaks, hotdogs or burgers on the grill? Many call this barbequing but when I was young and was a bit younger we referred to cooking on the grill on grilling. The tradition of cooking meat over an open fire has been around since the cave man era. Well it was not called BBQ then because well as far as we know there was no sauce. The term to barbeque originally referred to as slow cooking meat at low temperature for a long time over wood or charcoal. While many of us can not distinguish the difference between gas heat and charcoal there are those that defiantly do.



BBQ began in the late 1800s during cattle drives out west. It was the men who had to feed the cowboys that started this habit as there was not enough good meat to keep the men fed. Brisket was very tough string piece of meat. Soon the camp cooks learned that cooking brisket for 5 to 7 hours at low temperature a super yummie could be had.  Cooking pork butt, pork ribs, beef ribs, venison and goat in the same style were options as well.

Peonies



Paeonia or more commonly known peony (at least to me) are beautiful plants that I recall growing in the yard of my childhood home as well in my grandmothers yard. I can  remember the bush like shape of the plant and the beautiful blooms.

Peonies grow best in area exposed to part or full sun. In a variety of colors of red, pink , white and yellow. Blooming in the spring and while the flowers often die away the bush like plants remain. The  outrageous beautiful blooms may live longer than you do. Like I said these plants have outlasted my grandparents for sure and still maintain their beauty.

The foliage of the peonies are lovely as border in yards and can even work as low hedge.

Thinking of planting some peonies in your own yard? Keep in mind they grow better in deep, fertile, humus rich, moist soil that drains well. Peonies beautiful blooms fall off easily if they are located in area that is busy and unprotected. They should be planted away from trees or shrubs and spaced three to four feet apart from each other. Plant them in the fall months and before the first hard frost so they will be ready to grow in the spring. Peonies bulbs should be planted about  2 feet deep and two feet across with the eye of the root face up



Fresh Summer Corn Salad

Call me country but summer time is not the same without good old sweet corn. I can remember picking sweet corn by the bushel full not to mention the ears of feed corn  we would pick. Those feed sacks we would fill full when I was a little girl sure do look a lot smaller than they would back then. I love to fix corn in many different ways from right off the cob to frying in a cast iron skillet they are all yummy. This not so new to me recipe is one that I plan to fix next time we have folks over for a grill out. I hope you try it and enjoy as well.


Fresh Summer Corn Salad: 
 
 

  • 8 ears sweet corn OR 4 cups of frozen corn.
  • 1 large red pepper, chopped
  • 1 red onion, minced
  • 3 large tomatoes, chopped, or 25 mini tomatoes, cut in half
  • 1/3 cup cilantro, chopped
  • 1/3 cup lime juice
  • 1/3cup olive oil
  • Salt and pepper to taste
1. Cut the fresh corn off the cob or add the frozen corn to the pot and steam for 3 to 5 minutes in
1/4 cup water.
2. Remove lid and cook, stirring, 2 minutes more or until
water evaporates.
3. Toss the corn with all other ingredients and chill.

The week of May 6 - May 12 is nurses week. We have been celebrating this at work. As a nurses aide I know how important nurses are but never forget

Take A Time Out



May 12th is always the day set aside to bring awareness to Fatigue Syndrome Day. I think it quite ironic this year to be the day following mothers day. We all know the hard work that mothers do and I am sure that more than one mother has had a day or two of fatigue. So mothers can quite feel the pain that goes with the syndrome of Fatigue.

Whether you are tired from not getting enough sleep, stress, worry or other problems in your life. Whatever the issue it is important to ID the problem and correct it. Chronic Fatigue Syndrome is actually a disorder. if you always feel tired or fatigued you should talk to your doctor.

Activities you may think about doing today is to get some more rest. Go right back to bed, take a nap, take a vacation day from work, cancel any activities you have planned for today, or simply enjoy the day in a restful manner..

Strawberry Crisp In a Mug

I have shared lots of strawberry recipes here but perhaps this one is the most creative I have ever found I am old enough to remember the microwave growing popular in the kitchen of every home. This recipe would have become one of our favorites back then




Strawberry Crisp in a Mug
Stir together, pour into a microwave safe mug or ramekin, and set aside:
1 cup chopped strawberries (fresh or frozen)
1 Tb sugar
1 tsp lemon juice
1/4 tsp ginger powder
dash of cinnamon

Mix together and pour into mug on top of strawberry mixture:
1/3 cup gluten free oats
2 Tb almond flour
1 Tb sugar
1/4 tsp cinnamon
1 Tb oil or melted butter


Microwave for approximately 2 minutes or until strawberry mixture gets nice and bubbly. Let cool for several minutes to help the juices set up (and avoid burning your mouth!). You may want to set your mug on a plate or saucer while microwaving to catch any juices that may bubble over. Using a mug with taller sides also helps. If you are apposed to using a microwave, I'm sure this can be used with a toaster oven as well. Feel free to modify to your personal preferences.

I love driving by and seeing the beautiful wild flowers in the fields, they seem to lay in oceans of blooms beauty is what I see. This type of flower has also became popular in the beds of many home gardens. They stand alone well, can be used as border and are easy to use in theme gardens as well.


The beauty of this flower to me lays in the small , fluffy, purple button like flowers. It helps to add color to all seasons as it continuous blooms or keeps re-blooming. The plant is heat tolerant and deadheading is not necessary. Looking to attract visitors to your garden? You have found the right plant as birds, butterflies, and hummingbirds all are attracted. Annual that is native to North America. Medium height  standing an average 8 to 12 inches. When planted their should be about 10 to 12 inches separating the plants as they like to spread out a few inches as they grow. As you can see the beauty in the plant with flowers of purple and green foliage helps it to work great as a filler plant blending in amongst your favorite plants. Grows well in an area with partial to full sun and very easy to maintain.

Whats for Supper : Stuffed Cabbage Leaves

 
 
12 large cabbage leaves       
1 pound ground beef       
2 cups soft bread cubes       
1/2 cup chopped onion       
2 eggs       
1 teaspoon salt       
1/4 teaspoon pepper       
1/4 teaspoon garlic salt       
1 can tomato sauce

Parboil cabbage leaves for 5 minutes.  Combine beef, bread cubes, onion, eggs, salt, pepper and garlic salt. Form meat into oblong patties. Place a meat patty onto each cabbage leaf.  Roll up the cabbage leaf and fasten with toothpicks.  Place stuffed cabbage into a skillet and add tomato sauce.   Cover and cook over low heat for 45 minutes.   Serve hot.

Strawberry Rhubarb Pie

As I have shared on this blog my parents and grandparents were avid gardeners. They grew everything from veggies to fruits and flowers. They would use their garden to please our family as well. My dad never liked cake and my mama always made him a pie for his birthday. One of his favorites was a rhubarb and strawberry pie. Perfect creation to start the early summer off as both should be in season either now or real soon. Perhaps you could make one up for the one you love.

Strawberry Rhubarb Pie:

2 cups cut up rhubarb
2 cups cut up strawberries
1/3 cup cornstarch
1 cup sugar
2 T lemon juice
Topping: 3/4 c. sugar, 1/2 cup flour, 1/4 cup butter
pie crust -

On low heat, cook fruit covered about 5 min. Add lemon juice. Combine 1 cup sugar and 1/3 cup cornstarch. Add to rhubarb mixture. Cook and stir 4 – 5 min. until thickened and bubbly. Cool.
Strawberry Rhubarb Filling

Prepare your pie crust and pour in the filling. Make your topping in a seperate bowl of sugar, flour and butter. Sprinkle it on top of the filling.

Bake in a pre-heated oven at 400 for 25-30 minutes. If you feel it needs more time, reduce the heat to 350 for another 10-15 minutes. You want the sugar to have melted with the butter for a brown and crusty topping.

Grilled Spiced Shrimp

I love the weather here lately, warm days perfect for cooking on the grill. I would love to introduce you to a new recipe that I just found. Today is national shrimp day and how better to celebrate than with a great recipe for grilling. Hope you enjoy
 
 

Spicy Grilled Shrimp (adapted from A Taste of the World)
1 ½ lbs shrimp
1 tsp cinnamon
1 tsp cumin
1 tsp coriander
1 tsp chili powder
½ tsp cayenne
1 Tbs lime juice
3 cloves of garlic, mashed
1 Tbs fresh ginger, grated

Toss the peeled shrimp with all of the remaining ingredients and allow to marinate for 30 minutes. Skewer and grill for 2 to 3 minutes on each side. Enjoy

National Foster Care Month



My grandparents, my dads parents, spent many years looking after those who needed care. My grandpa was a product of a broken family. Many years ago as a child having a native American mother who was with a white man and neither of them wanted him. They raised him the best they could I guess, looking at him as a burden rather than a child. When my grandfather was old enough he left to live on his own. There is no real story to my grandpas life just that he made it his mission to try his best to help children everywhere. Him and my grandmother became foster parents and raised many of them until their parents were more fit. Other children were not so lucky and aged out of the system and thanked my grandparents for caring for them. There are those that can and those that can't thank goodness for the lessons my grandparents taught me and many others. If you feel the pull to help those in need perhaps you should check out being a foster parent as well

World Asthma Day



There are several individuals in my family who suffer from asthma. We have learned the signs of symptoms of asthma do you or someone you love have asthma?

Asthma is characterized by inflammation of the bronchial tubes with increased production of sticky secretions inside the tubes. People with asthma experience symptoms when the airways tighten, inflame, or fill with mucus. Common asthma symptoms include:
  • Coughing, especially at night
  • Wheezing
  • Shortness of breath
  • Chest tightness, pain, or pressure
I can remember my public speaking class in high school well. It was the first selection for me. I had always wanted to take a public speaking class since I was a young gal in 4H. The 4H public speaking contest was one that left me wanting more. I loved the entertaining aspect of it while it could be very serious as well. So when I finally reached my freshmen year of high school I eagerly selected public speaking or speech. My teacher did not disappoint me. Her name was Mrs. Ewart and she was a short to the world lady who carried a big voice and boy did she want us all to learn all about it. I think every speech I learned to share from group , explanatory and my favorite demonstrative left me wanting more. Both watching and listening to others sharing to sharing my own speeches left me content. My favorite speech was one where we could share anything we wanted to with the class as long as we demonstrated something in our speech. I shared a humorous speech where I demonstrated how to make brownies from a mix. I got an A which is what I normally received from my speeches. But it was during the demonstration speeches where I found one of my favorite recipes. Crepes oh how delicious they looked and the speaker shared it with enthusiasm leaving us all wanting some of our own. Today being national Crepes Suzette day left me with these memories flooding back. So I thought why not share this awesome recipe with you perhaps leaving you wanting more





For Crepes:
3/4 cup all-purpose flour
1 teaspoon sugar
2 eggs, plus 1 egg yolk, lightly beaten
2/3 cup milk
2 tablespoons clarified butter, melted
Clarified butter, for cooking
For Sauce:
4 white sugar cubes
1 1/2 pounds oranges (about 5)
3 tablespoons clarified butter, melted
1/4 cup sugar
3 tablespoons cointreau
2 tablespoons brandy


For The Crepes
Sift the flour into a bowl with a pinch of salt and the sugar. Make a well in the center, then add the eggs and extra egg yolk. Mix well with a wooden spoon or whisk, gradually incorporating the flour. Combine the milk with 1/4 cup water and gradually add to the batter. Add the clarified butter and beat until smooth. Cover and set aside for 30 minutes.

Melt a little clarified butter over medium heat in a heavy-bottomed or nonstick 6-inch crepe pan or skillet. Pour off any excess butter, leaving a fine coating. Tilt the pan and pour in a little batter, swirling the pan to create a thin layer. Cook for 1-2 minutes, or until the edges are light brown. Loosen the edges with a flat-bladed knife or spatula and turn or flip the crepe over. Cook for about 1 minutes, then turn onto a sheet of waxed paper and cover with a dish towel. Repeat until all the batter has been used up, each time lightly coating the skillet with clarified butter.

FOR THE SAUCE:
Rub all the sugar cube sides over the rind of an orange to soak up the oily zest, then crush the cubes with the back of a wooden spoon. Squeeze the oranges to produce 1 1/4 cups liquid. Over low heat, melt the clarified butter in a wide shallow skillet or saute pan. Dissolve the crushed sugar in the butter, then add the sugar. Cook, stirring, for 2 minutes. Slowly add the orange juice, keeping well clear of the pan as the mixture may spit. Increase the heat to medium and simmer until reduced by a third.

Fold the crepes in half, then into triangles. Place them in the orange sauce, slightly overlapping, with their points showing. Tilt the pan, scoop up the sauce and pout it over the crepes to moisten them well.

Cook over low heat for 2 minutes. Turn off the heat and have a saucepan lid ready in case you need to put out the flame. Pour the Cointreau and brandy over the sauce without stirring. Immediately light the sauce with a match, standing well back from the pan. Serve the crepes on warmed plates. Fresh vanilla ice cream is a lovely accompaniment.

Orange Chicken

 
 
Orange Chicken (adapted from Blogchef.net) serves 6
I have joined the craze, yes it took me a bit longer but I am in love with oange chicken. Check out this recipe for a way to fix a delicious recipe at home

2 lbs boneless skinless chicken breasts or thighs, cut into 1-1/2” cubes
1 ½ cups corn starch
1 cup panko bread crumbs
2 eggs, beaten
¼ teaspoon salt
¼ teaspoon pepper
Oil (for frying)

orange sauce

1 ½ cups water
1/4 cup orange juice
1/3 cup rice vinegar
2 ½ tablespoons soy sauce
1 tablespoon orange zest, grated
1 cup packed brown sugar
½ teaspoon ginger root, minced
½ teaspoon garlic, minced
2 tablespoons green onion, chopped
¼ teaspoon red pepper flakes
3 tablespoons cornstarch
2 tablespoons water

Combine corn starch, salt, and pepper.  Prepare a bowl with beaten eggs, another with panko bread crumbs and another with corn starch. Dip chicken in egg mixture, dredge in cornstarch, then again in the eggs and finally in the panko bread crumbs, set aside.  Heat pan with vegetable oil to 375 degrees, fry chicken in batches until completely cooked.
In a large saucepan combine 1 ½ cups water, orange juice, rice vinegar, and soy sauce. Blend well over medium heat for a few minutes. Stir in brown sugar, orange zest, ginger, garlic and red pepper flakes. Bring to a boil.
Combine 3 tablespoons of cornstarch with 1/4 cup of water and mix thoroughly. Slowly stir cornstarch mixture into sauce until it thickens. Pour sauce over breaded chicken, and if desired garnish with green onion

Spring Chore



Tilling the garden is one of the early steps of gardening. I can remember my parents hiring a man with a tractor to tear up the garden plot each year. After that it was time to til up the garden area. Tilling is done to turn over the soil in the garden. It is done to aerate the soil before planting and also is done to mix in fertilizer and compost into the soil. Both fertilizer (rabbit droppings) and compost (anything from leaves to kitchen goods) were placed in the are of the garden during the year when there was no garden. Tilling  also helps to weed the garden.


It is best to not til will when the soil is wet. It may become clumpy and compact. The issue of aerating the soil is denied. Tilling to early will make the soil to dampen and tilling is not at the right time. Good trick to decide if it is right time to til simply pick up a handful of soil and press into ball in your hand if ball keeps shape open your hand, it is to wet for tilling but if it crumbles when pressure is released tilling time is here.

Tilling in the fall is also a great idea and may make spring tilling more beneficial
