Tex Mex Pulled Turkey

TEX MEX PULLED TURKEY SANDWICH

1/2 tsp chopped chipotle chile in adobo sauce
1/2 cup barbecue sauce
1 pound turkey cutlets
1 pinch cinnamon
1 bunch green onions
Salt and Pepper
2 cup shredded lettuce
1 tbs vegetable oil
4 soft rolls
Heat a grill. In a bowl, combine barbecue sauce, chipotle chile and cinnamon, reserve half of the sauce in a cup. Add the turkey to the bowl and toss to coat. Brush the green onions with the oil, season with salt and pepper. Arrange the turkey on the grill, cover and cook, turning once, until cooked through. Grill the green onions until tender. Grill the rolls, cut side down until toasted. Chop the turkey and green onions. Divide the lettuce among the roll bottoms and top with the turkey and green onions. Top with the reserved sauce and a roll top, then serve.
MAKES 4 SERVINGS OF SANDWICHES...
