Peanut Butter Chocolate Chip Granola Cookies
1 cup butter, softened
1 cup creamy peanut butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla
2 cups Original Bisquick® mix
1 3/4 cups granola cereal
1 cup milk chocolate chips
1 cup coarsely chopped pecans
Heat oven to 350°F. In large bowl, mix butter, peanut butter, sugars, eggs and vanilla with spoon. Stir in remaining ingredients. On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart. Bake 9 to 11 minutes or until edges are light golden brown (do not overbake). Cool 3 minutes; remove from cookie sheet to cooling rack

So the Bisquick mix is in place of the flour? We make our own to cut out trans fats... I wonder how well it would work in this case. Hmmm... I might just need to make some cookies this weekend.
