Banana Bread

3/4 cup butter
1 1/2 cup sugar
1 1/2 cup over-ripe bananas (about 3 medium)
2 eggs, well beaten
1 tsp vanilla
2 cups flour
1 tsp baking soda
3/4 tsp salt
1/2 cup buttermilk OR 1/2 cup milk + 2 tsp lemon juice


Directions:
Preheat oven to 325 degrees. Cream butter and sugar together. Blend in bananas, eggs, and vanilla. Sift dry ingredients together and add to banana mixture. Mix in buttermilk. Pour into greased loaf pan. Bake for 1 hour and 15 minutes or until a knife inserted in center comes out clean. Check half way through baking. If top is getting too brown, loosely place a strip of aluminum foil on top to prevent over browning. Cool on a wire rack.
