This recipe is great for any time of year. Made in the crock-pot so it is not intended to heat up the house. It is an all in the pot type of meal. The delicious and family friendly meal takes 5 minutes to prep
1 can crushed tomatoes
1 can whole kernal corn, undrained
1 can black beans, undrained
1 small onion, chopped or diced (I didn't use all of the onion pictured)
1 lb. chicken, cut up (you could easily use a few breasts from last night's dinner; just grill extra)
1 pkg taco seasoning
1 pkg Hidden Valley Ranch dip
Garnish (not pictured): Grated cheese, sour cream, tortilla chips
Dump everything in the crock pot.Yup; it's that easy. Cook on low for seven hours (or whenever you feel like turning it off before that; ). Serve with grated cheese, tortilla chips, and sour cream. Don't expect any leftovers (feeds four).
Oh yum! Total comfort food, this recipe, and quick and easy to make too. My kind of meal!
ReplyDeleteI love making soup in my crockpot. For one to let it cook and for the aroma to take over the house makes a big difference. I love tacos and tomatoes a like. I know this recipes comes out tasty.
ReplyDeleteOh yum! My husband uses the crock pot all the time to make soups. I have to share this with him.
ReplyDeleteSoups are always a welcome to me. However, i don't consume non-vegetarian food, including chicken. Will pass this link on to some friends who might want to try
