1 medium mango, chopped
1 medium carambola (star fruit), chopped
1 medium tomato, seeded and chopped
3/4 cup chopped, seeded cucumber
1/2 cup finely chopped onion
1/2 of a medium green sweet pepper, chopped
1/2 of a medium red sweet pepper, chopped
1/2 of a medium yellow sweet pepper, chopped
2 tablespoons snipped fresh cilantro
2 tablespoons lime juice
1 tablespoon sugar
1 - 2 fresh habanero or Scotch bonnet peppers, seeded and finely chopped* (1 to 3 teaspoons)
1 teaspoon salt
In medium bowl stir together mango, carambola, tomato, cucumber, onion, sweet peppers, cilantro, lime juice, sugar, habanero or Scotch bonnet peppers, and salt. Cover and refrigerate for 6 to 24 hours. Makes about 4 cups.
