3 T olive oil
1 onion, sliced
2 garlic cloves, chopped
3 red bell peppers, seeded and cut in strips
3 zucchini, sliced
14 oz tomatoes
3 T sun dried tomato paste
2 T chopped fresh basil
8 oz pasta spirals
1 c swiss cheese
salt and pepper
Heat oil in a heavy bottom pan or casserole Add onion and garlic and cook, stirring til soft Add the bell peppers and zucchini and then cook for 5 minutes stir occasionally Add the tomatoes, un dried tomato paste basil and seasoning cover and cook 5 minutes Bring large pot salt water to boil Lower heat slightly and cook, uncovered 3 minutes or til just tender Drain and add to the vegies Toss to mix. Put mix into a shallow casserole dish and sprinkle with cheese Cook under broiler 5 minutes til cheese is golden Garnish with basil sprigs and serve.

Yum, I love making big one-dish meals like this because there's enough for dinner and leftovers the next day. Also pasta dishes can be eaten cold or warm so there's variety. Thanks for sharing!
