Sweet and Tangy Meatball Subs


Sweet and Tangy Meatball Subs


1 can (15.5 oz each) Manwich® Original Sloppy Joe Sauce
1/2 cup salsa
2 tablespoons firmly packed light brown sugar
1 pkg (16 oz each) frozen cooked meatballs
4 hoagie rolls (about 8 inches each)
1 cup shredded lettuce
1/4 red onion, cut into thin rings
1/4 cup shredded part-skim mozzarella cheese (1/4 cup = 1 oz)

Directions
1.Heat sauce, salsa and brown sugar in large skillet over medium-low heat 5 minutes or until hot, stirring often. Add meatballs and heat 10 minutes more or until hot.
2.Cut rolls in half lengthwise, leaving bottom hinged. To make sandwiches, fill each roll with equal portions of meatball mixture; top with equal amounts of lettuce, onion rings and cheese. Serve immediately.

Turkey Lettuce Cup Tacos

Turkey Lettuce Cup Tacos


2 Tbsp. extra virgin olive oil
1 medium onion, chopped
2 cloves garlic, finely chopped
1 Tbsp. ground cumin
2 tsp. chili powder
1 lb. lean ground turkey
1 cup canned tomatoes, drained
2 heads bibb or butter lettuce, separate into cups
1 cucumber, cut into 2-1/2-inch spears
2 cups julienned jicama (1/8 x 1/8 x 3-inch strips)
2 cups julienned carrots (1/8 x 1/8 x 3-inch strips)
1 cup shredded sharp white cheddar cheese (about 4 oz.)
Tomato salsa*
1/4 cup Wish-Bone® Ranch Dressing

Heat olive oil in 12-inch skillet over medium heat and cook onion and garlic, stirring occasionally, 5 minutes or until onion is tender. Stir in cumin chili powder and ground turkey and cook, stirring occasionally, 12 minutes or until turkey is thoroughly cooked. Stir in tomatoes and simmer 10 minutes or until heated through. Season, if desired, with salt and pepper.
Arrange lettuce cups in stack on large platter. Place remaining topping ingredients in small bowls on platter. Garnish, if desired, with cilantro sprigs and lime wedges.
Fill lettuce cups with turkey mixture, then top with your favorite toppings. Just before serving, drizzle with Wish-Bone® Ranch Dressing

Marinated CrockPot Ham Sandwich

The crockpot can come in very handy in the summer time. Not only does it allow you to cook without heating the house up but it also allows you to place the meal in the crockpot and continue on with busy summer time life.



Marinated CrockPot Ham Sandwich

1 1/2 c packed light brown sugar
3 tbsp dry mustard
1/4 c Worcestershire sauce
5 cloves of garlic, minced
1/2 (5oz) jar horseradish
3 (51/2 oz) cans grapfruit juice
5 lbs shaved ham
24 sandwich buns


Combine the brown sugar, mustard, Worcestershire sauce, garlic, horseradish and grapefruit juice in a slow cooker. Add the ham and cook on Low for 4 hours. Serve on sandwich buns. Serves 25.

Zucchini Bread

One of my favorite summer memories is my mom raising her zucchinis and then making all sorts of goodies from them. One recipe that she made a lot of was zucchini bread.


Zucchini Bread



3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup egg substitute
1/3 cup canola oil
1 teaspoon grated lemon rind
2 teaspoons vanilla extract
1 large egg, lightly beaten
1 1/2 cups sugar
3 cups shredded zucchini (12 ounces)
1/4 cup coarsely chopped walnuts, toasted
Cooking spray


Preheat oven to 350 degrees. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through baking soda) in a large bowl. Combine egg substitute and next 4 ingredients (through egg) in a large bowl; add sugar, stirring until combined. Add zucchini; stir until well combined. Add flour mixture; stir just until combined. Stir in walnuts. Divide batter evenly between 2 (8 x 4-inch) loaf pans coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pans on a wire rack; remove from pans. Cool completely on wire rack.

Lemon Flavored Aquafina Flavor Splash




As you all know I am an Aquafina Flavor Splash Mom. This week we received another package of Aquafina FlavorSplash 6 pack of water in a new flavor. The flavor this week was lemon. I am a huge fan of lemonade it is so delicious. In fact let me share a couple of great lemonade recipes with you.


Fresh Squeezed Lemonade

1-3/4 cups sugar or superfine sugar (Superfine sugar can be made from regular sugar by simply placing it into a blender. )
8 cups water
1-1/2 cups lemon juice


Mix together the sugar and one cup water in a saucepan. Bring the mixture to a boil to dissolve the sugar. Cool. Combine the sugar water, water and lemon juice in a pitcher.


Lemonade Orange Juice : Mix equal parts lemonade and orange juice.

Ginger Lemonade : Place one tablespoon of sliced fresh ginger in a saucepan with two cups of water. Bring to a boil and cool and remove the ginger. Mix in equal parts lemonade and ginger water.

Mint Lemonade: To make mint lemonade, boil 1/4 cup fresh mint with two cups water. Let cool and strain. Mix equal parts lemonade and mint water.
Strawberry Lemonade : Purée a 10-ounce package of fresh or frozen strawberries. Add the desired amount of purée to the lemonade until you have reached an equal balance of strawberry and lemon.
Iced-Tea Lemonade : Mix equal parts lemonade and iced tea.

The Alternative Baking Company

Kithchen Tip: Keeping Picnics Safe


Warm weather has arrived and with it comes picnic season. I love a great picnic and the only problem is that we must make sure to be safe with picnic food so the good times keep going. Here are some tips:



  • Keeping everything clean is one of the most important tips. Find out if there is a source of safe drinking water where you will be picnicing. If there will not be you need to bring some water for preparation and cleaning. You may want to pack some wet wipes, disposable cloths or moist towelettes as well as paper towels for claning hands and surfaces. Keeping hands clean before and after handling food, not using the same platter and utensils for raw and cooked meat and poultry. Having a set of utensils for cooking and a seperate set for serving is a good idea as well.

  • Keeping hot food hot and cold food cold is sometimes hard to do when on a picnic but is a very important need. Unsafe temperatures of food is a leading reason for foodborne illness Coolers should be placed in the shade when possible. Food should never be out of the cooler or off the grill more than 2 hours and if the temperature is above 90 degrees that time is cut to 1 hour

  • If cooking food like hamburger patties, hotdogs, lunch meat, or chicken be sure to pack in an insulated cooler that is packed with plenty of ice or frozen gel packs. Both raw meat and poultry should be wrapped securely to prevent cross contamination of the ready prepared foods. Don't pack the cooler until ready to leave the house and keep the cooler in the coolest part of the car when traveling

  • Be aware of the danger zone where bacteria grows the fastest. The temperature of the danger zone is anything below 40 degrees or above 140 degree.

  • If you bring hot take out food on the picnic such as fried chicken or barbecue you still need to be careful as these foods need to be ate within 2 hours of purchase.

  • If you plan on grilling then you need to remember to pack the food thermometer to be sure that all that you grill reaches safe temperatures. If you decide to reheat food at the cook out then you need to be sure that food reaches 165 degrees. Cooking only the amount of food that will be eaten will cutdown on worry of leftovers staying at safe temp. Any leftovers that remain and are cold should be tossed.

Summer Time Snack Ideas

Summer Time is here and one thing that kids and teens as well as mom and dad do alot in the summer is snack. Some great snacks ideas that will please teens are:

Bugs on a Stick:
This is an easy snack to make and your children can even help out. Simply wash a stalk of celery, cut in 3 pieces, fill the inside of the stalk of celery with peanut butter then top the peanut butter with four or five raisins (bugs)

Jiggly Jell-o treats:
again a fun snack to make that will allow a bit of fun while creating a great snack. Using cookie cuters (metal works best) you will be able to cut jello into all sorts of shapes. First make jello in a shallow square pan. Chill in fridge for 1 hour or til firm and wiggly. When firm you can cut the various fun shapes add a bit of whip cream to top it off.

Frozen Juice Pops-
I can remember my grandmother creating these in little dixie cups but some use ice cube tray as well. Using 100% real fruit juice they are great nutrition for your kids as well. Simply pour the mold whatever you decide to use and freeze for hours. Do this at night by the next day at noon they will be ready to go and are perfect for hot summer days

Yogurt cover pretzel rods-
Easy to make, fun for the kids Simply get a bag of pretzel rodsand 8 oz yogurt either plain or flavored. Pour the yogurt in a shallow pan or paper plate and roll the pretzel rod in it. Then freeze for about an hour for a celebration add a few sprinkles prior to freezing

Smoothies -
Delicious and good for them. Fruit of various kinds, ice and plain or fruit flavored yogurt and a blender. Place all in blender and blend.

Snack mixes -
Everyone enjoys a great snack mix and these can be prepared ahead of time in large bunches for many uses. Various products can be used to make snack mixes including popcorn, raisins, pretzel sticks, and assorted peanuts. Put all the chosen ingredients in to a large bowl with a lid and shake well to mix it all up. Then sit back and watch it all disappear!

Chinese Meat Loaf


My daughter recently introduced me to Chinese food. Yes that is right until the other day I had never been inside a chinese restraunt or ate real chinese food. Now while skimming through a cookbook I found this recipe for Chinese Meat Loaf. While we ate a chicken dish at the restaurant I thought I would share this recipe.


Chinese Meat Loaf

1 lb hamburger ($1.15)

1/2 c chopped onion (.25)

1 egg, beaten (.15)

1/4 c crushed Ritz crackers (.50)

3/4 t salt

1/4 t pepper


Sauce:

1 (8 oz) tomato sauce ($1)

1/4 c vinegar (.50)

1/4 c brown sugar (.25)

1 t prepared mustard (.25)


In saucepan mix tomato sauce with brown sugar, vinegar and mustard. Stir til sugar dissolves. Combine egg, onion, crackers, meat, salt and pepper and add 1/2 c sauce Mix lightly , but thoroughly, and place into loaf pan Pour remainder of sauce over top. Bake at 350 degrees for 1 hour.

Summer Time Recipe ; Bacon Wrapped Barbecue Burgers

Bacon Wrapped Barbecue Burgers


8 bacon slices
1 (4.5-oz.) jar sliced mushrooms, drained and chopped
1/2 cup chopped Vidalia or sweet onion
2 teaspoons olive oil
1/2 cup bottled honey barbecue sauce, divided
1 1/2 pounds ground beef
Wooden picks
1/4 teaspoon salt
4 sesame seed hamburger buns, toasted
Arrange bacon on a paper towel-lined microwave-safe plate; cover with a paper towel. Microwave bacon at HIGH 2 minutes or until edges begin to crinkle and bacon is partially cooked. Sauté mushrooms and onion in hot oil in a small nonstick skillet over medium heat 4 to 5 minutes or until tender and liquid is absorbed. Remove from heat, and stir in 2 Tbsp. barbecue sauce. Preheat grill to 350° to 400° (medium-high). Shape ground beef into 8 (5-inch) thin patties. Place 2 Tbsp. mushroom mixture in center of each of 4 patties. Top with remaining patties, pressing edges to seal. Shape into 4-inch patties. Wrap sides of each patty with 2 bacon slices, overlapping ends of each slice. Secure bacon using wooden picks. Sprinkle patties with salt. Cover and chill 10 minutes. Grill patties, covered with grill lid, over 350° to 400° (medium-high) heat 5 to 6 minutes on 1 side. Turn and baste with half of remaining barbecue sauce. Grill 5 to 6 minutes or until beef is no longer pink in center. Turn and baste with remaining barbecue sauce. Remove from grill, and let stand 5 minutes. Remove wooden picks. Serve burgers on buns, and top with remaining mushroom mixture.

God created us in the image of himself. He wants to be here in our daily lives and yet there are times that we don't let him in. I can remember as a young girl one of my favorite places to pray and talk to my Lord was outside under a tree where no one was. I felt closer to him there in that solitude place. Life is not so solitude in fact we often get so busy we loose track of all things including our walk with the Lord. Luckily I am in the practice of being in constant conversation with our heavenly father. I was once told that you can talk to him where ever you are for he will always listen. The second part is that you must remember to listen. When my son was younger he could not understand what it meant for God to talk to you. After all we could not see him so how could we talk to him. Gently there were some men at our church that shared with him their experiences and how to listen for the voice of our Lord. Now my son shares with others that you must be quiet, be prepared and ready to listen to hear the voice of God for it may come through the scriptures (Proverbs 4), dreams, through your conscience, people we meet or in any manner in which he can grab our attention.

God can talk to us through daily life in a manner that is gentle and soft when we are prepared to listen. It is at those times when we are finding life go in a different direction when we are not sure what road we are on and where it will lead us that he must yell to get our attention. I can remember my daddy when I was good would have such a peaceful verse and yet when I would misbehave or be in danger that peaceful verse would rise sharply and take on a tone that I knew I needed to listen and obey. That is how it is with our Heavenly fathers voice when we are walking side by side with him he can whisper and talk softly and we will hear him but it is when the world seems to cover us up that he must raise his voice so that we know he is still there with us. If we choose to listen and obey he will protect us.

Veggie Pasta

Veggie Pasta


7 cups water
1 box (16 oz.) penne pasta
1 bag (16 oz.) frozen peas and carrots
1 can (10 oz.) condensed cream of chicken soup
1 cup sweet onions (chopped)
1/2 cup red bell peppers (chopped)
1/2 cup sliced mushrooms
1/2 cup celery (chopped)
1 tsp. garlic salt
1 tsp. salt and pepper
1/4 cup butter

Boil water and add butter. Toss in onions, celery, and bell pepper. Cook for 5 minutes. Toss in noodles and cook for 5 minutes more. Toss in frozen peas and carrots, and cook for another 5 minutes. Add in mushrooms, then cook for 5 or 7 minutes or until noodles are tender and mushrooms are hot. Drain off the water, transfer into a large bowl, and stir in the spices and soup. Transfer to a serving platter and sprinkle with the Parmesan cheese.

Giant cinnamon rolls



15 tablespoons granulated sugar, divided
2 tablespoons active dry yeast
3/4 teaspoon salt
2 tablespoons shortening or butter
1 large egg
3 3/4 cups flour, plus about 1/4 cup for rolling
3 tablespoons plus 1 tsp. cinnamon
3/4 cup packed light brown sugar
Cooking-oil spray
1/2 cup butter, softened

In a large bowl of a stand mixer fitted with the paddle attachment, mix 1 tbsp. granulated sugar, 1/4 cup warm (110°) water, and yeast. Let stand until softened, about 5 minutes. Add 1 1/4 cups more warm water, salt, 6 tbsp. granulated sugar, shortening, and egg. Mix until blended.
Change to dough hook, gradually add 3 3/4 cups flour, and beat on medium speed until dough is smooth and stretchy and pulls away somewhat from inside of bowl, about 10 minutes (dough will still feel quite wet). Remove hook from bowl and loosely cover bowl. Let dough rise at room temperature until doubled, about 40 minutes. In a small bowl, combine 3 tbsp. cinnamon with 1/2 cup granulated sugar. Generously flour a large work surface and scrape dough onto it. Generously sprinkle dough and a rolling pin with flour. Very gently roll and pat dough into a 10- by 24-in. rectangle, keeping a light coating of flour on dough but trying not to work it in. Sprinkle with cinnamon-sugar mixture and brown sugar, then roll dough into a log starting from a 10-in. side. Cut dough straight down into 8 equal slices. Place slices cut-side up in a greased 10-in. springform pan. Let stand until puffy, about 30 minutes. Preheat oven to 325°. Set springform pan on rimmed baking pan and bake rolls until golden and a toothpick inserted into the center roll (avoid cinnamon-sugar swirls) comes out clean, about 45 minutes. Let cool in pan on rack, 30 minutes. Meanwhile, make the cinnamon butter: In the bowl of a stand mixer, beat butter with 1 tsp. cinnamon until blended. Run a knife around inside of pan to release rolls; remove pan rim. With a serrated knife, cut rolls apart and top each with about 1 tbsp. cinnamon butter. Put rolls on a platter and place in warm oven until butter has mostly melted, about 1 minute.

Make ahead: Instead of letting rolls rise on the counter (step 5), immediately cover with a piece of oiled plastic wrap and chill overnight. In the morning, let stand at room temperature until puffy and no longer cold, about 1 1/4 hours. Bake as directed.

Pringles MultiGrain "U Taste We Donate"


Pringles the name that many of us know and love has now teamed up with a wonderful organization to help put an end to childhood hunger. As a kid I can remember my daddy bringing home cans of pringles from his lunch we would pop that lid off and enjoy the remaining chips in the can. Throughout the years Pringles has been created in many flavor options and now they have did it again with Pringles multi grain chips. We were lucky enough to receive 3 cans of the delicious multi grain flavors of cheesy cheddar, truly original and creamy ranch. Take a pole in our house and will get a variety of answers but when you have six teens agreeing on a flavor is not always possible. The one thing that we all do agree on is that they are great and offer the same awesome goodness of Pringles.

Pringles and Share Our Strength are teaming up together to help end childhood hunger. To me it seems so sad to think of a child hungry. In our early years there were many sad times that our children would eat first and whatever was left over me and my hubby would eat. Somehow the pot always maxed out and everyone was fed. So I know that children being hungry is a problem for the entire family. For a mother not being able to feed her child is more than I can imagine. In these rocky economic times this possibility is becoming all to real for more and more individuals. When the opportunity from MomCentral was announced and the possibility of creating a post to bring awareness to what Pringles and Share our Strength is doing through the "U Taste. We Donate" campaign. I was eager to be part. Through this program Pringles will donate $1 from every can of Pringles Multigrain to help stop childhood hunger. Part of this campaign was Tyler Florence creating delicious and unique recipes based on each new flavor of Pringles Multigrain. We were lucky enough to receive a cookbook with the recipes from Pringles with the three cans of Pringles and a lovely canvas bag.

The 17 million children facing hunger in America is the focus for the "U Taste We Donate" campaign. The Share Our Strength national organization seeks to make sure no child in America grows up hungry.
