Rainbow Lollipop Cake

 


Today is the national lollipop day and since today has been named a super fun day I thought i would share this recipe I recently located. What a fun and colorful cake and lined with dum dum suckers will make this cake perfect to put a smile on any ones face


2 Cups Granulated Sugar
1 cup unsalted sweet cream butter
6 large eggs
2 Tablespoons Vanilla Extract
3 Cups All Purpose Flour
2 teaspoons baking powder
1 Cup Milk
7 Colors (or which ever colors you want to use) Gel Food Colorings
1 Box Vanilla Instant Pudding

  1. Preheat oven to 350. Spray 8 in round pans with cooking spray.
  2. Prepare cake batter. (You could also use a boxed cake mix to save time and will have the same results)
  3. In a medium bowl cream together butter and sugar.
  4. Beat in eggs one at a time
  5. Then add Vanilla to the creamed mixture
  6. In a seperate bowl whisk together dry ingredients- flour, baking powder and pudding mix.
  7. Add flour mixture to the cream mixture, stirring until combined.
  8. Add milk and stir until creamy.
  9. Seperate the cake batter into smaller bowls (one for each color you plan on using). Add gel food coloring to each bowl until you reach desired color. Remember that the colors will fade slightly when baking, so take that into account when adding colors.
  10. Bake each layer seperately for 10-12 minutes.
  11. Let cool and frost with your favorite frosting. ( I prefer white buttercream, but make it you own ;-)

  1. Oh what a cute cake that would make for my granddaughter's birthday it's on Monday and I bet she would love it. I have to call my DIL right away! Thanks so much for sharing! That's is just too cute!

  2. Once upon a time, I made our oldest daughter a rainbow cake. Yes, I even shaped it into a bow placing a halfed circle cake upright so it would look like a rainbow. While the cake itself was chocolate, I divided the frosting into different colors and applied it to the rainbow cake and it was a really fun birthday cake for our daughter. She loved it! That being said, this is one cool idea you shared here! =D
