Hummus With Tomato and Mint Salsa
The Hummus:
2-15 oz. cans chickpeas, rinsed and drained warmed in the microwave/oven top
1/4 cup lemon juice
3 cloves of garlic
1/2 cup tahini
The Salsa:
2 medium tomatoes-diced
1/4 cup diced white onions
2 Tbs chopped fresh mint
1 Tbs lemon juice .Directions
1. Puree chickpeas, lemon juice, garlic and 2/3 cup water in processor/blender for 3-4 minutes
2. Add tahini and puree 2 minutes. If you like chunky hummus-leave some un-pureed.
3. Season with salt and pepper
4. Stir together all of the ingredients in the salsa and let stand for 5 minutes. Top the hummus with the salsa and enjoy!
