HOT CHEESE POTATOES
Softened butter, for the baking dish
3 large unpeeled russet potatoes, scrubbed and thinly sliced
4 tablespoons butter, melted
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dried thyme
2 cups shredded Cheddar cheese
1 tablespoon dried parsley
Preheat the oven to 425 degrees. Butter a 9-by-13-inch baking dish with softened butter. Arrange the potato slices in the prepared baking dish. Drizzle with the melted butter and season with salt, pepper and thyme.
Cover the baking dish tightly with aluminum foil. Bake for 45 minutes. Remove the foil and sprinkle with the cheese and parsley. Return the dish to the over. Bake, uncovered, for 5 to 10 minutes more or until the cheese is melted. Let stand for 5 minutes before serving
