October 21st should be the tops for both pumpkin lovers and cheesecake lovers. Cheesecake is a sweet dessert made up of soft cheese, cream cheese or cottage cheese, eggs, sugar all on a graham cracker crust, crushed cookies, pastry or sponge cake. Fall is perfect time to add pumpkin to so many things and cheesecake is perfect for pumpkin. Whether you swirl it through, mix throughout with all ingredients or layer. Just like adding the pumpkin cheesecakes can be prepared by baking or not.

Cheesecake may date back in time to Ancient Greece. A famous greek physician wrote a book on the art of making cheesecakes. 

It was in America that one of the most loved ingredients in cheesecakes was created. James Kraft created a form of pasteurized cream cheese in 1912. Kraft acquired the Philadelphia trademark and sold the cream cheese under pasteurized Philadelphia Cream Cheese.
