Princess loves chicken nuggets

If you have followed my blog long then you have possibly read about my Princess. She is all grown up and 6 years old and still such a happy little princess. Today I thought I would share one of her favorite recipes



Chicken nuggets are one of Kates favorites and dressing them up a bit makes them all of our favorites. My husbands grandmother believed in feeding the kids and offer them a treat whenever they come for a visit. For her it was pancakes or paneycakes as her grandson called them. Chicken nuggets are fairly easy to make and please the kids as well as grown ups. Homemade is so much better to me than those that come directly out of the freezer.

Ingredients:
4 chicken breasts (boneless, skinless)
4 hamburger buns toasted or you can use other bread that you may have on hand
1/2 cup milk
1 egg
1/2 tbsp salt
freshly ground pepper
1/2 onion
1 tbsp olive oil
canola oil for frying
  • Cut chicken into nugget sized pieces (not more than 3 cm thick) and place in a bowl
  • Finely dice the onion and place on top of chicken
  • Add salt, some freshly cracked pepper and olive oil
  • Mix until all the chicken is coated. Let sit in refrigerator for at least 1 hour
  • Take out chicken and let it come up close to room temperature
  • In a separate shallow bowl place the egg and milk and whisk until fully mixed
  • In another shallow bowl place bread crumbs (if you are breading your own; recommended; lightly toast your bread first, then place in a food processor until bread crumbs form)
  • Remove onion bits from chicken then place individual pieces of chicken into the egg mixture and then in the bread crumbs (be sure to coat the entire piece of chicken)
  • Place chicken in a seperate plate until all of the chicken has been breaded
  • Place canola oil (about 5 cm deep) in a sauce pan
  • Heat and test oil by placing a pinch of bread crumbs in the oil. If they start to bubble immediately then the oil is ready
  • Turn heat down to medium-low (you want to cook the chicken through without burning the breading)
  • Place a few pieces of chicken in the oil at a time (do not overcrowd the pan)
  • Cook for 5-6 minutes a side. Nuggets should be golden brown and crispy on the outside.
  • Place chicken on a plate lined with paper towel
  • Serve with your favorit
