Black Bean Nachos


Tortilla chips
Cooking spray
1 can black beans, drained and rinsed
Cumin
Salsa
Shredded Mexican-blend cheese or cheddar jack
1. Preheat oven to 350
2. Spray cookie sheet with cooking spray
3. Cover cookie sheet with desired amount of tortilla chips.
4. Layer chips with desired amount of black beans. Sprinkle with cumin.
5. Cover black beans with salsa.
6. Sprinkle cheese over top.
7. Bake for 8-10 minutes, until cheese is melted and starting to brown lightly. Serve immediately.


Nacho Chicken is a Mexican style chicken casserole recipe. This rich and zippy chicken casserole made with chicken, American cheese and nacho flavored tortilla chips. These hearty nachos make a great snack and work well as a meal, too! Servings: 8
Nacho Chicken

 2 (10.75 ounce) cans condensed cream of chicken soup, undiluted
1 (10 ounce) can diced tomatoes and green chilies, undrained
1 (14.5 ounce) package nacho-flavor tortilla chips
1 pound processed American cheese, cubed
4 cups cooked chicken, cubed
1 cup chopped onion
1/2 tsp garlic salt
1/4 tsp black pepper

Preheat oven to 350 degree F. Place chicken and American cheese in a large bowl. Add chicken soup,onion, tomatoes and green chilies. Mix well. Season with salt and pepper. Crush tortilla chips and set aside 1 cup for topping. Put remaining chips to the chicken mixture. Spoon into a greased 13-in. x 9-in. x 2-in. baking dish. Top with reserved chips. Bake, uncovered, for 30 minutes or until cheese is melted and edges are bubbly.
