Freezer To Table Recipe:::: Cowboy Caviar

Cowboy caviar is very much like Texas caviar in that it is a salad of black eyed peas that has a vinaigrette style dressing. This is a great dish for company as it is a snack many can enjoy and can be served with tortilla chips.  This recipe can be made ahead of time , froze and served whenever you need it.

⅔ cups dice Onion
⅔ cups chop Cilantro, Fresh
10 ounces Diced Tomatoes with Green Chiles
15 ounces drain and rinse Black Eyed Peas, Canned
15 ounces drain and rinse Black Beans, Canned
¼ cups Red Wine Vinegar
2 teaspoons juice Lime
2 teaspoons mince Garlic, Cloves
¾ teaspoons Salt
1 teaspoon Cumin
2 cups peel, pit, and dice Avocado

In a large bowl combine all ingredients.
Divide among indicated 3 quart sized freezer bags. Label and freeze.

Thaw: In fridge
Transfer to serving bowl, and stir. Serve cold with tortilla chips
