This recipe Was Featured Crunchy Corn Relish
2 tablespoon(s) canola oil
4 cup(s) corn kernels
1 cup(s) diced red bell pepper
1/2 cup(s) diced red onion
1/2 cup(s) tomatillo relish
1/3 cup(s) chopped fresh cilantro
1 tablespoon(s) fresh lime juice
1 teaspoon(s) coarse salt
1/4 teaspoon(s) cayenne pepper
In a large nonstick skillet, heat oil over medium-high heat. Add corn, bell pepper, and onion and sauté about 5 minutes, until crisp-tender. Stir in relish, cilantro, lime juice, salt, and pepper to combine. Let cool to room temperature and refrigerate until ready to use.
