American Chop Suey



1 lb. 85-percent ground beef
1 medium onion, diced
1 large garlic clove, minced
1/2 cup diced red bell pepper
1/2 cup diced celery
1 (15-ounce) can tomato sauce
1 teaspoon salt
1 1/2 tablespoons Worcestershire sauce
2 cups dry elbow macaroni
1 (15-ounce) can low-sodium chicken broth
Pepper to taste
Directions:
1. In a large nonstick skillet, sauté beef, onion, garlic, bell pepper, and celery over medium-high heat until beef is browned and onion is softened, 8-12 minutes. Drain as much fat as possible.
2. Stir in tomato sauce, salt, Worcestershire sauce, macaroni, and broth. Drop heat to medium or medium-low and simmer 20-30 minutes, until macaroni is cooked through and most of the liquid has been absorbed, stirring occasionally. Add water if necessary, and take care to stir more frequently as time goes on.
3. Salt and pepper to taste. Serve.
Serves 4 to 6

How To Clean A Cutting Board

All right so we made it through the holidays and now we are starting our day off right. I would love to share a cleaning tip with you as part of the make a bright new year in your home. Today's special tip is how to clean a cutting board

Wooden Cutting Boards


Cut a lemon lime or grapefruit in 1/2 and dip into a small dish of salt. The salt will actually use as the scrub in this cleaner. Lightly rub fruit over the cutting board, squeezing the fruit to release juices as you scrub. Rinse completely when done.




Plastic or Glass Cutting Board


Mix together 1/4 c lemon juice and 2 cups of water let cutting board soak in the mixture for 15 minutes and rinse completely

Cabbage Soup

Ingredients
1 cup chopped onion
2 tbsp. butter
2 cups shredded cabbage
1 (10 oz.) package frozen lima beans, cooked and drained
 1 cup sliced carrots
1 cup diced potatoes
1 cup chicken broth
1/2 tsp. salt
1/4 cup butter
1/4 cup all-purpose flour
1/4 tsp. paprika
1/4 tsp. pepper
3 cups milk
2 cups (8 oz.) shredded Cheddar cheese


Sauté onion in 2 tbsp. butter in a heavy saucepan until tender, about 3 minutes. Add cabbage, beans, carrots, potatoes, broth and salt and then cover and simmer until carrots and potatoes are tender, about 20 minutes. Meanwhile, melt 1/4-cup butter in a 4-quart Dutch oven. Blend in flour, paprika and pepper. Remove from heat; stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Remove from heat; stir in cheese until melted. If necessary, return to low heat to finish melting cheese, without boiling. Add vegetables with liquid to cheese soup base. Heat to serving temperature.

Pork Scallapini



8 ounces egg noodles
1 1 1/4-pound pork tenderloin, sliced 3/4 inch thick, pounded 1/4 inch thick
kosher salt and black pepper
1/4 cup flour
2 tablespoons olive oil
2/3 cup white wine
2 tablespoons unsalted butter
2 tablespoons chopped flat-leaf parsley

Cook the noodles according to the package directions. Meanwhile, season the pork with ½ teaspoon salt and ¼ teaspoon pepper. Coat it in the flour. Heat the oil in a large skillet over medium-high heat. In batches, brown the pork, 1 to 2 minutes per side. Transfer to a plate. Return the skillet to medium-high heat. Add the wine and butter and cook for 1 minute. Add the pork back to the skillet and sprinkle with the parsley. Serve the pork and sauce over the noodles.

Make A Teddy Bear Craft Using A Cereal Box

This is a fun craft you can make with your toddler. It uses materials easily found in your home.



•Light-Weight Cardboard (Cereal Box)
•Sand, Saw Dust, Coffee Grounds (one or all)
•Craft Glue
•Large Wiggle Eyes
•Item for Nose a pom-pom, button, or oval cut out of construction paper
•Scissors

Using the cardboard, cut out a bear head shape - don't forget the ears. You can also cut out a shape that looks like the whole bear! Using a Pencil, draw a few details on the cardboard bear; for example, if you cut out only a head, draw a oval where the nose and mouth would go, and draw small circles in the ears. If you are using a full bear body, draw a large oval where the belly would be, and you can also draw the details on the face as above. Use your imagination!

Once you have the various bear parts sketched on, you can start adding the textures. Start by painting in your various bear part with glue. Decide which texture (sand, saw dust, coffee grounds) you want on each part, and sprinkle that texture onto the glue. Only add the glue for one texture at a time. Let your bear dry.

Once all your textures are dry, add the wiggle eyes and a nose (). If you like, you can then use the material, ribbon, buttons, etc to add more details!

Thankful Thursday

Thankful Thursdays Button
 What a week this has been both grand and not so grand but there is always a way to be thankful in every situation. This week I celebrated my 25th anv. with my hubby and let me tell you it was awesome. We did nothing really special but what we did (have lunch together and dance in the living room) was enough to realize our love for each other after all these years is still there.

I am also thankful for my children each of them changing and growing into adults that I can be proud of. With jobs and school and so much going on that it is hard to say much else. What I know is that I love my children and I am very proud of them. Yes the growing pains do hurt as I watch them not need me as much and become independent adults. They prove to me that I did a great job but I was not alone I had my husband, my parents, grandparents and my heavenly Father who helped to guide me and show me the way so when it came time I could release them with love and not have worries.

These are a few of the things I am thankful for what are you thankful for this week?

Its All In The Name

Many of us puts a lot of thought into what we will name our child. Perhaps the name we choose belonged to someone else that we loved like a parent, grandparent or other relative that we honor by naming our child that. Perhaps we give our child a name because we think it is beautiful. Whatever reasoning we use to name our children the most important part is that we used reasoning. I recently read an article on  yahoo news about illegal baby names.

Upon first thought I could not understand why a baby name would be illegal but after reading the article I truly understand. They start out with a name that I first wonder about because it sounds more like a title rather than a name Talula Does The Hula what do you think do you not agree that it may be a great title for a childrens book?

The list also leaves me wondering why some of them were banned such as the Italian judged who banned the name Venerdi AKA 'Friday' My daughter has a childhood friend who was named Tuesday by her parents. I also know friends with names as April and May I wonder if these would be banned as well.

Leek and Potato Soup

1 tablespoon butter
2 strips uncooked bacon, cut into small pieces
1 cup leeks, chopped
1 teaspoon minced fresh garlic
1 can (14 ounces) chicken broth

  • 2 cups Simply Potatoes® Homestyle Slices, cut into small pieces
  • 1 cup whole milk
    1/2 cup heavy cream
    3 ounces Crystal Farms® Cream Cheese, softened, cut into small pieces
    1 cup Crystal Farms® Shredded Sharp Cheddar Cheese
    1 tablespoon chopped fresh chives
    1/2 teaspoon salt
    1/2 teaspoon cayenne pepper sauce

    In 2-quart saucepan melt butter over medium-high heat. Add bacon, leeks and garlic. Cook, stirring occasionally, until bacon is slightly crisp. Drain grease. Add chicken broth and Simply Potatoes. Bring to a boil. Reduce heat to low. Cook uncovered, stirring occasionally, 20 to 25 minutes or until Simply Potatoes are tender. Spoon half of soup mixture into blender container. Pulse blender on medium speed several times to puree potato mixture. Return pureed mixture to saucepan. Add all remaining ingredients. Cook on low until cheese is melted and mixture is heated through.

    Hearty Chilli

     

    Hearty Chili

    Yield: 8 servings

    1 ½ pounds lean ground beef
    1 cup chopped sweet onion
    1 cup chopped green pepper
    1 clove garlic, minced
    1 jalapeno, seeded and diced
     one envelope chili seasoning
    2 (14.5 ounce) cans diced tomatoes (I use the ones that specify “for chili”)
    2 (15 ounce) can kidney beans, undrained
    1-2 teaspoons Sriracha or hot sauce of your choice
    1 large Idaho potato, peeled and cubed
    1 cup frozen corn

    Garnish
    -shredded cheese
    -sour cream

    In a large Dutch oven, cook ground beef over medium-high heat until evenly browned. Drain excess grease. Add onion, green pepper, garlic, and jalapeno and cook for 5 minutes, stirring often. Sprinkle meat mixture with homemade chili seasoning (or contents of chili seasoning envelope). Mix seasoning with the meat and vegetable mixture and cook for about 3 minutes, stirring constantly. Add in diced tomatoes, kidney beans, hot sauce and potatoes, stirring to combine. Bring to a boil, then reduce heat to low. Simmer for 1 1/2 hours. Stir in corn the last 15 minutes of cooking. Garnish chili with shredded cheese and sour cream.

    Caramelized Bread Pudding



    Banana Bread
    1 1/2cups Gold Medal® all-purpose flour
    1 1/4cups granulated sugar
    2teaspoons baking soda
    1/2teaspoon salt
    1 1/2cups mashed very ripe bananas (3 medium)
    1cup Yoplait® Fat Free plain yogurt (from 2-lb container)
    1/4cup vegetable oil
    1teaspoon vanilla
    3eggs
    Custard
    1 1/2cups fat-free (skim) milk
    1teaspoon vanilla
    4eggs
    4teaspoons turbinado sugar (raw sugar)
    1.Heat oven to 350°F. Spray bottom only of 9x5-inch loaf pan with cooking spray. In medium bowl, combine flour, granulated sugar, baking soda and salt; set aside. In large bowl, beat all remaining Banana Bread ingredients with electric mixer on medium speed until well mixed. Stir in flour mixture until blended; spread in pan.
    2.Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool at least 30 minutes.
    3.Increase oven temperature to 400°F. Spray eight (6-oz) individual baking dishes (ramekins) with cooking spray. In roasting pan, place ramekins. Cut loaf crosswise in half (save one half for another use). Cut remaining half into 8 slices, then into about 3/4-inch cubes. Divide evenly among ramekins, fitting snugly together.
    4.In medium bowl, beat all Custard ingredients, except turbinado sugar, with wire whisk until blended. Pour custard mixture over bread cubes in ramekins, pushing down lightly with spoon to soak bread cubes. (If all custard mixture doesn’t fit into ramekins, let stand up to 10 minutes, gradually adding remaining custard mixture as bread cubes soak it up.) Sprinkle each with 1 teaspoon turbinado sugar.
    5.Carefully place pan with ramekins in oven. Pour enough warm water in pan, being careful not to splash water into ramekins, until water covers half the height of the ramekins.
    6.Bake 25 minutes or until toothpick inserted in center comes out clean. Carefully transfer ramekins to cooling rack, using tongs or grasping tops of ramekins with pot holder. Cool at least 10 minutes; serve warm or at room temperature.

    Buttermilk Apricot Scones




    2 cups all-purpose flour
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    1/4 cup sugar
    1/4 cup chilled stick margarine, cut into small pieces
    1/3 cup chopped dried apricots
    1 egg, lightly beaten
    1/4 cup nonfat buttermilk
    1/4 cup apricot nectar
    Vegetable cooking spray
    1 egg white, lightly beaten
    1 tbsp. sugar
    Combine first 5 ingredients; cut in margarine with a pastry blender until mixture resembles coarse meal. Add apricots; toss well. Combine egg, buttermilk, and nectar; add to dry ingredients, stirring just until moistened. (Dough will be sticky.)
    Turn dough out onto a lightly floured surface; with floured hands, knead 4 or 5 times. Pat dough into a 9 in. circle on a baking sheet coated with cooking spray. Cut dough into 12 wedges, cutting to but not through bottom of dough. Brush with egg white, and sprinkle with 1 tbsp. sugar. Bake at 400 degrees for 15 minutes or until golden. Serve hot.

    Supper Idea


    canola oil, for the rack
    1/2 teaspoon paprika
    1 1/4 cups buttermilk
    kosher salt and black pepper
    2 3/4 pounds bone-in chicken parts (thighs, legs, or breasts), skin removed
    1 cup crushed buttery round crackers (such as Ritz; about 4 ounces)
    1/4 cup reduced-fat mayonnaise
    1 tablespoon cider vinegar
    3/4 pound broccoli, chopped (about 4 cups), or 12 ounces broccoli slaw
    1 large carrot, coarsely grated
    1/2 small shallot, chopped

    Heat oven to 375° F. Set a wire rack inside a rimmed baking sheet and lightly coat with oil. In a shallow baking dish, combine the paprika, 1 cup of the buttermilk, and ½ teaspoon each salt and pepper. Add the chicken and turn to coat. Place the crushed crackers in a shallow bowl. Remove the chicken from the buttermilk mixture and coat with the crackers, pressing gently to help them adhere. Place the chicken on the rack and bake, turning halfway through, until crispy and an instant-read thermometer registers 165° F in the center of the thickest piece of chicken, 40 to 45 minutes. Meanwhile, in a large bowl, whisk together the mayonnaise, vinegar, the remaining ¼ cup of buttermilk, ½ teaspoon salt, and ¼ teaspoon pepper. Add the broccoli or broccoli slaw, carrot, and shallot and toss to combine. Serve with the chicken.

    1 1/2 lbs. ground beef
    Kidney beans (1 can)
    5 sliced raw lg. potatoes
    3 sliced raw onions
    10 oz. bottle catsup
    Salt, pepper and garlic powder
    Green pepper

    Brown ground beef and flavor with salt, pepper and garlic powder. In 9 x 13 inch casserole pan layer kidney beans, sliced raw potatoes, sliced onion, diced green pepper, top with ground beef, and cover with catsup, repeat with a second layer in same order. Cover and bake at 375 degrees for about 1 1/2 hours. Uncover during the last 15 minutes of baking. May need to add small amount of water if too dry.

    Vegetarian Chilli




    2 tablespoons vegetable oil
    1 large onion, chopped
    4 cloves garlic, minced
    3 tablespoons chili powder
    1 green bell pepper, diced
    1 red bell pepper, diced
    1 medium zucchini, diced
    1 medium yellow squash, diced
    1/2 teaspoon dried oregano
    1/4 teaspoon cayenne pepper
    1 can (14.5 oz) stewed tomatoes
    1 can (11 oz) corn, drained
    1 can (15.5 oz) black beans, drained and rinsed
    1/4 teaspoon salt

    1. Heat oil in large pot over medium heat. Add onion, garlic and chili powder and sauté for 5 minutes. Add bell peppers; sauté 5 minutes. Add zucchini, squash, oregano and cayenne; saute for 5 minutes. Add tomatoes; cook 10 minutes. Stir in corn, black beans and salt; cook for 5 minutes or until heated through.
    2. Serve with sour cream, cooked rice, and shredded cheese, if desired

    hamburger stew

    Hamburger Stew


    •1 1/2 lb. hamburger, browned, drained (add water to cover meat)
    •1 med. onion
    •6 carrots, peeled and sliced
    •6 med. potatoes, peeled and cut up
    •1 clove chopped garlic or 1 tsp.
    •garlic powder
    •Salt and pepper to taste
    •1 tbsp. Gravy Master or Kitchen Bouquet
    •1 tbsp. instant beef bouillon

    Put all ingredients in pot. Add more water to cover vegetables, if needed. Cover and simmer lightly 30-45 minutes or until vegetables are tender. May be thickened to your liking

    Streusel Coffee Cake

    For the Streusel:
    1/2 cup firmly packed light or dark brown sugar
    1/2 cup all-purpose flour
    1/2 cup finely chopped walnuts
    1/4 cup unsalted butter, chilled
    For the Cake:
    2 1/4 cups all-purpose flour
    1 1/2 teaspoons ground cinnamon
    1/2 teaspoon ground nutmeg
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup unsalted butter, at room temperature
    3/4 cup firmly packed dark brown sugar
    1/2 cup granulated sugar
    3 eggs
    1 1/4 cups buttermilk mixed with 1 teaspoon vanilla extract
    2 firm but ripe pears, peeled, cored ,coarsely chopped
    Preheat an oven to 350 degrees F. Butter and flour a 9-by-13-inch baking pan. Set aside.

    FOR THE STREUSEL: In a small bowl, combine the brown sugar, flour, walnuts and butter. Using 2 knives, your fingertips or a pastry blender, work the ingredients together until the mixture resembles large bread crumbs. Cover and refrigerate until ready to use.

    FOR THE CAKE:
    In a large bowl, sift together the flour, cinnamon, nutmeg, baking powder, baking soda and salt. In a large bowl, using an electric mixer set on high speed, beat the butter until light and fluffy. Gradually add the brown and granulated sugars, continuing to beat until very light, about 3 minutes. Add the eggs, one at a time, beating well after each addition.

    Reduce the mixer to low speed and gradually beat in the flour mixture alternately with the buttermilk, beating until just mixed.
    Pour the batter into the prepared pan. Scatter the chopped pears and the streusel mixture evenly over the top, then press them gently into the top of the batter.
    Bake until the top of the cake is firm, the streusel is crisp and bubbling and a wooden skewer inserted into the center comes out clean, 40-45 minutes.

    TO SERVE:
    Transfer to a wire rack and let cool slightly in the pan. Cut into squares and serve warm.

    Chilli Cheese Dip



    2 8 oz pkgs cream cheese
    2 small cans chili with no beans
    1 lb lean ground beef, cooked
    1 bag TOSTITOS® Restaurant Style Tortilla Chips, coarsely crushed
    12 oz bag shredded cheddar and/or Monterey Jack cheese
    1 jar TOSTITOS® All Natural Salsa (optional)

     

    Preheat oven to 350 degrees. To assemble, spread cream cheese evenly in a lightly greased 9”x13” baking pan. Layer chili, cooked ground beef, half of the shredded cheese, crushed TOSTITOS® Restaurant Style Tortilla Chips and the remainder of the shredded cheese in the order given. Bake uncovered for approximately, 15–20 minutes or until cheese melts. Serve immediately with TOSTITOS® All Natural Salsa on the side, if desired.

    Morning Glory Muffins

    All purpose flour 1cup
    Whole wheat flour 1cup
    Sugar 1 cup
    Egg 1
    Eggs whites 2
    Baking powder 2tsp
    Vanilla extract 2tsp
    Cinnamon powder 2tsp
    Salt 1/2tsp
    Grated carrots 2cups
    Apple 1 (peeled,cored and grated)
    Raisins 1/2cup
    Nuts 1/2cup
    Coconut 1/2cup (optional)
    Canola Oil 1cup

    Preheat oven to 300F.In a medium bowl, beat eggs, egg whites, oil, and vanilla for 2 mins.In a large bowl, stir together flours, sugar, cinnamon, baking powder, and salt. Combine carrots, apples, nuts and raisins ,mix well. Add these fruits and nuts to wet ingredients.Now add dry ingredients to wet ingredients in two halves.The pitfall with all muffin batters is in over mixing the batter and ending up with a tough muffin. So make sure you only mix the batter until the ingredients are combined and moistened. Pour two tbsp of batter in each lined muffin cups.For standard sized muffins, only fill the muffin cups 2/3 full with batter. However, if you like your muffins with a crown, fill the cups to the top. Just make sure to grease the top of the muffin pan so that as the batter overflows it does not stick to the top of the pan. And don't forget to fill any unfilled muffin cups with a little water to ensure even baking as well as preventing the pan from warping. Bake 15-20 mins or until the inserted toothpick comes out clean.you can double the batches and store them in ziploc ,freeze it .Microwave them for a min on busy mornings .....Healthy breakfast ready!!!!
